    "Com lam" 是将糯米装入青竹筒中,用芭蕉叶封口,在炭火上慢烤,直到外层焦黑,里面的米饭变得柔软且带有一丝烟熏味。在 Sapa,这种美食随处可见,但并非每个摊位都一样。米饭的口感取决于制作时间、购买地点以及搭配的食物。

    早晨时段(上午 6:00–9:00)

    这是最被低估的品尝时间,大多数游客因为还在酒店吃早餐而完全错过了。

    在 Ham Rong 街和 Cau May 街的下段,一些 H'Mong 和 Tay 族小贩在上午 6:30 之前就会架起小炭火炉,通常位于前往 Sapa 市场的人流必经之路上。竹筒在上午 5:30 左右开始烘烤,这意味着当你 7:00 到达时,米饭已经离火静置了 20–30 分钟——这是最佳的食用窗口。竹子将其青翠、略带草本的清甜渗入米饭中,又不会使其过于干硬。

    在这个时段,Com lam 的吃法很简单:劈开竹筒,剥掉焦黑的外层,直接食用,蘸上混合了少许碎花生的芝麻盐("muoi vung")。有些小贩在烹饪前会在米饭中加入一小撮椰奶,你会尝到淡淡的甜味。一根竹筒的价格在 15,000–20,000 VND 之间。两根竹筒就是一顿扎实的早餐。

    实际的好处是:你通常会是那里唯一的非本地人。市场人群是来买东西过日子的,而不是为了给食物拍照。

    午餐时段(上午 11:30–下午 1:30)

    午餐时段是 Com lam 与蛋白质搭配的时候,这也是大多数人想到 Sapa 这道菜时脑海中的画面。

    午餐时最明显的购买地点是 Thach Son 街靠近主广场下行台阶的路段——这里的小贩架设了移动烤架,除了 Com lam 竹筒外,还有烤猪肉串("thit nuong")、腊肠(lap xuong),有时还有用柠檬草腌制的烤鸡腿。你可以将米饭与肉一起吃,撕下肉块包裹着米饭,把竹筒当作盘子使用。

    午餐的价格是组合式的:一根 Com lam 加上两串肉,价格在 45,000–65,000 VND 之间,具体取决于小贩以及你是在面向游客的摊位还是稍微偏僻一点的地方。午餐出售的竹筒通常更新鲜——小贩会在上午 10:30 左右开始第二批制作,专门供应午间高峰——所以米饭仍然湿润,竹子的香气浓郁而不突兀。

    需要检查的一点是:如果竹筒外表呈现均匀的深褐色,而不是带有绿色和焦痕,说明它已经放了太久。好的 Com lam 颜色是不均匀的——那是火候到位的证明。

    夜间时段(下午 6:00–晚上 9:30)

    Cau May 街的夜市也卖 Com lam,但老实说,这是三个时段中最差的一个。天黑后你买到的东西,大部分是几小时前煮好的,要么在小火上保温,要么更糟——冷着卖,有人点才加热。

    话虽如此,如果你确实在逛夜市,确实有几个摊位会在晚上 6:00 左右开始为晚餐生意制作新鲜批次。寻找那些有明火而不是只有余烬的摊位,以及那些正在积极翻转竹筒而不是让其静置的小贩。问一句 "moi khong?"(新鲜吗?)——那些毫不犹豫回答是的小贩通常不会骗你。

    在晚上,Com lam 最常作为 "thang co"(一种用马肉或猪内脏制成的山区炖菜)的配菜出现在人满为患的市场摊位上,或者与 Sapa 的烤玉米搭配。在这个时段,它更像是一种零食而不是正餐。价格与早晨相同——每根 15,000–20,000 VND——但质量差异较大。

    如果你的主要目标是吃到好的 Com lam,除非你偶然发现正在制作新鲜竹筒的小贩,否则请跳过夜市。

    真正重要的事情

    竹子的种类比大多数人意识到的更重要。嫩竹——较细的竹筒,颜色较浅——味道更细腻,在早晨的批次中更常见。较老、较厚的竹筒在午餐时更常见,保温时间更长,但味道可能比甜味更偏木质感。两者都没有错,只是风味不同。

    芝麻盐蘸料(muoi vung)是提升整体口感的细节。如果小贩没有提供,请主动索要——大多数小贩都单独携带,只是默认不会给非本地顾客提供。

    Sapa 的美食场景比越南(베트남 / 越南 / ベトナム)的大多数地方更青睐早起的人。在清晨的凉爽山间空气中,站在 Ham Rong 街的炭火炉旁吃一根 Com lam,比你之后在一天中找到的任何东西都要美味。

    实用提示

    如果你在徒步旅行,Com lam 可以保存几个小时——早上买一根带在路上吃。Sapa 各地的价格保持在每根 15,000–20,000 VND;花 20,000 VND 并不算被宰。请准备好零钱——大多数小贩没有 200,000 VND 面额的找零。
