    "Xoi xeo" 是 Hanoi 早晨的灵魂早餐——姜黄色的糯米饭,铺上厚实的绿豆泥、酥脆的炸红葱头,再配上切成薄片的 "gio"(越南猪肉卷)。它价格极其亲民,却能让你饱腹直到中午。人们最容易犯的错误就是搞错了品尝时间。

    简短回答:早餐,永远是早餐

    Xoi xeo 是属于早晨的食物。不是早午餐,也不是午餐——就是早晨。Hanoi 大多数正宗的摊贩在上午 9:30 之前就会售罄,如果人流密集,甚至 8:45 就卖光了。如果你在上午 11 点才去寻找,只会看到空空的锅和正在收拾摊位的摊主。

    这并非不便,而是逻辑使然。糯米每天新鲜蒸制,分成小份装在香蕉叶或泡沫盒中,放在盖好的篮子里保温。一旦米饭变凉,红葱头变软,它就不值得售卖了。好的摊贩从不加热剩饭,他们只会直接收摊。

    计划在上午 6:30 到 9:00 之间去吃 Xoi xeo,这才是黄金时间。

    你吃到的究竟是什么?

    底部的糯米是用姜黄烹制的,这赋予了它深黄色泽和淡淡的泥土芬芳。上面铺着厚厚一层 "dau xanh"(去皮绿豆泥),蒸得细腻且带有微甜。接着是 gio——从冷猪肉卷上切下的薄片,口感扎实,咸鲜适中。最后撒上一大把 "hanh phi"(炸红葱头),它们在足量的油中炸制,能保持数小时的酥脆。

    有些摊贩会在上面淋一点 "nuoc cot dua"(椰浆),这会让口感更浓郁、更奢华。如果你看到摊位上有一个白色的小挤压瓶,可以向摊主索要。

    一份标准份量的价格在 15,000–25,000 VND 之间,具体取决于份量和配料。一份加了额外 gio 的大份通常在 30,000–35,000 VND。这不是一道需要讨价还价的菜。

    在 Old Quarter 去哪里吃?

    Old Quarter 的大多数主要十字路口都有 xoi 摊位,但有几个地方特别值得一去。

    Nguyen Huu Huan 街的 Xoi Yen —— 这可能是 Hanoi 最出名的 xoi xeo 餐厅。它是一家有座位的店,而不是流动摊位,这意味着你可以慢慢享用。大约早上 6:00 开门,8:00 左右通常就座无虚席。做好与陌生人共用塑料小板凳的准备。一份加了 gio 和红葱头的中份盒饭价格约为 25,000–30,000 VND。它位于 Nguyen Huu Huan 街较安静的一端,距离 Hoan Kiem Lake 约 200 米。

    Hang Be 街和 Hang Bac 街的流动摊位 —— 名气没那么大,但往往更适合独自用餐。这些摊主在早上 6:00 前就会出摊,卖完即止。没有菜单,不懂英语,只需指着你想要的配料,并用手指比划数量即可。这里的米饭通常更新鲜,因为周转速度快。

    Lo Su 街的 Co Lan —— 一个多年来一直在大致相同位置经营的摊位,尽管具体位置会有微调。她用香蕉叶包裹每一份糯米饭,这不仅能保温,还增添了一丝淡淡的草本清香。请在上午 8:30 之前前往。

    午餐和晚餐怎么办?

    你可能会在午餐甚至晚餐时看到摊贩兜售 xoi xeo,尤其是在 Dong Xuan Market 附近和 Hoan Kiem Lake 周边。请保持怀疑态度。

    全天候供应的 xoi xeo 几乎总是早晨剩下的饭。红葱头已经发软,绿豆泥边缘干硬,而 gio 在常温下放置数小时后也会失去口感。这倒不至于吃坏肚子,但味道明显大打折扣,不值那 20,000 VND。

    Hanoi 的夜市确实卖糯米饭,但通常是 "xoi man"(咸味什锦糯米饭)或 "xoi gac"(用木鳖果制作的红色糯米饭),这些是完全不同的菜品。它们本身很美味,但不是 xoi xeo。

    如果你在 Hoan Kiem 附近夜游,想吃点热乎的淀粉类食物,不如去买一个 "banh mi"。把 Xoi xeo 留给它应有的早晨时光吧。

    不会越南语如何点餐?

    指着黄色的糯米饭。竖起一根手指表示要一份。如果你想要更多的 gio,模仿切肉的动作指向猪肉卷并点头。如果你看到椰浆并想要,指着它并点头。付款总是在拿到食物之后。递上一张 50,000 VND 的纸币,等待找零即可。

    站在摊位前吃完全正常。如果有低矮的小板凳,就坐下吃。不要向摊主索要叉子。

    实用小贴士

    Xoi xeo 不适合外带太久——请在 20 分钟内吃完,否则红葱头会失去酥脆感。配上一杯附近摊位买的 "ca phe sua da",你就拥有了 Hanoi 最便宜、最满足的早餐之一。预算总共 50,000–60,000 VND 就能搞定糯米饭加咖啡,在上午 8:00 前完成早餐,开启你的一天。
