    什么是 Banh Duc Nong?

    配料是厨师们展现功力的地方。标准搭配是猪肉末与泡发的木耳(nam meo)一起炒制,用鱼露和黑胡椒调味,最后浇上一勺浓郁的猪肉高汤。上面撒上一层炸红葱头——那种需要炸二十分钟才能达到酥脆香甜口感的红葱头——有时还会淋上一点葱油,并撒上少许新鲜香菜。

    它在河内美食日历中的地位

    Banh duc nong 是名副其实的寒冷天气美食。摊位通常从10月左右开始营业,到3月或4月逐渐收摊。在河内12摄氏度的清晨——那种呼吸会产生白雾、老城区弥漫着煤烟味的早晨——早上7点来上一碗,是再治愈不过的食物了。它在情感上填补了Pho对游客所占据的位置,但少了些关于汤底的仪式感,多了份口感上的慰藉。

    它属于河内早餐的一类,与banh cuon和bun thang一样,人们坐在塑料凳上,在上班前匆匆吃完。摊主通常是一位中年女性,带着便携式燃气灶、一口宽大的铝锅,以及一把因多年使用而磨得光滑的勺子。

    地区变体

    河内(正宗版本)

    北方版本咸鲜、清爽且克制。高汤成分存在但并不喧宾夺主。炸红葱头是必不可少的。有些摊位会在上面加一颗软煮鹌鹑蛋。分量适中——一碗通常为200–250毫升。

    顺化版本

    在顺化,出现了一种名字相似但风味截然不同的变体。其配料更偏向于虾酱(mam ruoc)和虾米,而不是猪肉,米糊本身可能稍微硬一些。它与河内版本有共同的基因,但一旦你都品尝过,就会发现它们是完全不同的菜肴。

    南方改良版

    在西贡,你可以在少数北方移民经营的摊位找到banh duc nong,通常位于平盛区或新平区,那里聚居着从北方来的外地人。基底相同,但配料有时更重口味——猪油更多、调味更甜,有时还会加入切片的广式香肠。河内的美食原教旨主义者对此会有不同的看法。

    如何点餐

    走到banh duc nong摊位前并不需要什么技巧。指指锅,伸出手指表示要几碗。摊主会倒入米浆,等待60秒让其凝固,然后按熟练的顺序加入猪肉混合物和高汤。

    如果你想要额外的炸红葱头——相信我,你会想要的——说“them hanh phi”并做一个撒东西的手势。大多数摊位桌上都会有一瓶辣椒酱(tuong ot);加一点味道很好。别加太多,这道菜讲究的是清淡细腻。

    趁热快吃。随着温度降低,米糊会持续变硬,在倒入碗中约八分钟后就会失去最佳口感。在开始聊天之前,先把碗里的东西吃完。

    配上一杯附近的鸡蛋咖啡或ca phe sua da,总价不到60,000 VND,这就是一顿地道的河内早餐。

    三个品尝地道风味的地方

    Banh Duc Ba Hoanh — 河内老城区 位于Ngo Dong Xuan的一家老字号摊位,自20世纪80年代就开始经营。营业时间从早上6:30左右开始,直到卖完为止,通常在上午10点前。这里的红葱头与米糊的比例堪称绝佳。25,000 VND。

    Hang Giay街摊位 — 河内 在10月至2月的季节里,Hang Giay街聚集了几个竞争的摊位。值得沿着这条街走一走,选择排队本地人最多的那一家,而不是离你最近的那家。整条街的价格:20,000–25,000 VND。

    Quan Bac — 河内巴亭区 对于觉得坐在路边矮凳上不舒服的人来说,这是一个可以坐下来的选择。价格稍贵,为35,000 VND,但猪肉配料非常棒,且在整个寒冷季节供应稳定。早上7点开门。

    实用贴士

    Banh duc nong是一种季节性美食——如果你在夏天来到河内并期待吃到它,多半会失望。如果你的旅行计划在11月到2月之间,一定要留出一个早晨去品尝,最好在上午9点之前,那时最好的摊位还有新鲜的米浆。请准备好零钱;早上7点,摊主很少有找零200,000 VND面额钞票的习惯。
