    Vung Tau 出产越南南部最被低估的街头小吃之一,大多数游客在前往海滩的路上往往会与其擦肩而过。“Banh khot”——一种用铸铁模具蒸炸而成、边缘酥脆的米浆小饼,顶部点缀一只鲜虾,食用时用生菜包裹——值得一份详尽的指南。以下就是全部内容。

    什么是 Banh Khot

    “Banh khot”直译过来是“滋滋作响的饼”,指的是面糊倒入滚烫且涂了油的模具时发出的声音。这种小饼由米粉、椰奶和姜黄粉调制的面糊制成,倒入直径约5–6厘米的小圆铁模中,在木炭或燃气火上烹饪,直到底部变得酥脆,内部保持像蛋奶冻一样的软糯口感。标准的配料是一只水煮或炒熟的虾,有时在盖上盖子前还会加入绿豆泥。

    最终成品既有酥脆的边缘,又有软糯的内心,还带有椰奶的淡淡甜味。食用时,将其包裹在芥菜或生菜中,配上新鲜香草(如越南紫苏、鱼腥草、刺芫荽),然后整块浸入nuoc cham(鱼露青柠蘸水)中,这种蘸料将所有风味完美融合。

    Banh Khot 的起源

    Vung Tau (头顿) 对 banh khot 的所有权在区域层面上由来已久且有据可查。这道菜很可能起源于Ba Ria — Vung Tau省的渔民社区,他们可以随时获得小虾和磨碎的米粉。这种铸铁模具技术与“banh can”(一种来自中部海岸更北处的Phan Rang–Thap Cham的类似小吃)有明显的相似之处,食品历史学家通常将两者视为东南亚各地模具米饼大家族中的“表亲”。

    如何点餐

    在一家正宗的Vung Tau banh khot摊位,你坐下后,香草盘会自动送上。通常没有菜单——只有一种产品,一种份量。你只需告诉摊主你想要多少“dia”(盘);标准的一盘有10–12个小饼。如果配上goi cuon,一人一盘通常就足够了,但如果你没吃午饭,点两盘也不过分。

    Vung Tau的价格:街边摊位每盘约35,000–55,000 VND。市中心的餐厅收费60,000–80,000 VND。如果你在Saigon (西贡) 的餐厅点 banh khot,预算应在70,000–120,000 VND之间。

    食用技巧很重要。用筷子或手指拿起整个小饼,放在叶子上,加一点香草,松松地卷起来,蘸上酱汁,一口或两口吃掉。不要在盘子里把它拆开——那样会失去这道菜精髓所在的温度对比。

    它与 Banh Xeo 的区别

    新游客有时会把 banh khot 和“banh xeo”混淆,后者是越南南部也很受欢迎的、更大的姜黄椰奶可丽饼。两者确实有重叠之处——都使用米粉、椰奶和姜黄,都在油中烹饪并用香草包裹。主要区别在于:banh xeo 很大(30–40厘米,对折),在炒锅或平底锅中烹饪,馅料有猪肉、虾和豆芽。Banh khot 很小,用模具制成,只填入绿豆泥并顶部放一只虾,边缘酥脆而不是折叠的边缘。它们是相关的菜肴,但不是同一道菜。

    Vung Tau — Banh Khot Co Ba Vung Tau

    城中最负盛名的地址。位于Nguyen Truong To街,这家家族经营的摊位已经开了几十年。椰奶含量明显高于较新的竞争对手,模具是经过充分保养的铸铁材质。中午前去——他们卖得很快。每盘40,000–50,000 VND。

    Saigon — Banh Khot Goc Vu Sua (第三郡)

    Hanoi — Ba Mien Restaurant (西湖区)

    Banh khot 在Vung Tau是午餐或下午茶点心——摊位很少在上午10点前营业,大多数在下午5点前收摊。如果你专门为了 banh khot 从Saigon出发,车程大约125公里;从Ho Chi Minh City (胡志明市) 的Bach Dang码头乘坐渡轮到Vung Tau大约需要80分钟,这是一个更舒适的选择。请带上现金——banh khot美食带的摊位都不接受刷卡。
