    Quan Banh Nam Ba Do — 11 Nguyen Binh Khiem

    这是大多数当地人首先会推荐的名字,且名副其实。Ba Do 在 Dong Ba Market 区域附近的狭窄店面里已经经营了几十年。这里的 banh nam 小而薄,按批次现蒸,葱油给得非常大方。三块一份的价格约为 10,000–12,000 VND。营业时间大约从早上 6:30 开始直到售罄,周末通常上午 10 点前就卖完了。请尽早前往,否则只能碰运气。

    Quan Thanh — 11 Dinh Tien Hoang

    Com Hen Ba Cu — Pham Hong Thai Street (靠近皇城护城河)

    主要以“com hen”(蚬肉饭)闻名,但 Ba Cu 也提供少量顺化特色小糕点,资深食客不容错过。这里的 banh nam 内馅中猪肉比例略高于虾肉,口感更扎实,作为独立零食享用比作为拼盘的一部分更令人满足。每块约 5,000 VND。仅在上午 6 点至 11 点营业。

    Banh Nam Co Ngoc — 17/7 Nguyen Cong Tru

    这是一家你可能会走过两次才会注意到的店——其实就是一户人家的厨房,门口摆着一张折叠桌。Co Ngoc 制作 banh nam 已经超过三十年,完全不在乎游客生意。每天早上限量制作,鱼露蘸料比大多数竞争对手有更浓郁的发酵风味,这取决于你的口味,有人觉得是特色,有人觉得难以接受。但对于行家来说,这就是特色。价格为每块 4,000 VND。没有固定营业时间——她想开门就开门,通常在上午 7 点左右,卖完即止。

    Hanh Restaurant — 11 Pho Duc Chinh

    Hanh 位于顺化市中心游客较多的地段,主打宫廷菜餐厅定位。这里的 banh nam 确实不错——厚度适中,调味得当,盛放在漆盘中,摆盘带有宫廷美学。价格较高:包含 banh beo、banh nam 和 banh loc 的拼盘约为 25,000–35,000 VND。如果你想在有空调、提供英文菜单的环境中用餐,这里很值得。但如果你只打算吃一次 banh nam,这里不是首选——街头版本在米糕本身的品质上更好。

    避雷建议:老城区游客咖啡馆

    Nguyen Dinh Chieu 沿街以及 Tran Thi Ly 大桥附近面向背包客的几家咖啡馆,常将 banh nam 作为“顺化宫廷小吃拼盘”的一部分出售。这些米糕通常是早上批量生产、冷藏后微波加热的。冷藏后香蕉叶的清香荡然无存,口感也变得黏糊。拼盘价格通常在 50,000–80,000 VND,客观来说,其品质远不如你在 Ba Do 或 Co Ngoc 花 20,000 VND 买到的。这些地方卖的是“顺化美食”的概念,而非食物本身。

    如何享用

    在桌上展开香蕉叶——不要像剥包装纸那样剥开,要将其平铺展开,这样米糕才能保持完整。轻轻蘸取酱汁;鱼露蘸料是为了提味,而不是为了淹没它。如果店里有提供,一定要搭配 banh beo 和 banh loc 一起吃;口感的对比才是精髓所在。一套完整的三种小吃,再配上一杯附近街头摊位买的“ca phe sua da”,就是一顿地道的顺化早餐,总价不到 40,000 VND。
