    大叻版本的独特之处

    海拔的影响比你想象的要大。大叻(Da Lat)位于海拔1500米以上,凉爽潮湿的空气减缓了炭火烘烤的速度,这意味着熟练的摊主可以在不烧焦的情况下,将米纸在炭火上停留更久。多出的这一分钟,使边缘产生了更深层的焦香,中心处的蛋黄也刚好凝固,而不是那种橡胶质感的过熟状态。大叻版本的另一个标志是葱油——用量十足,烤入米纸表面,使其产生焦糖化效果,而非仅仅浮于表面。在河内或西贡的夜市,摊主往往会仓促处理这一步,但在大叻,他们不会。

    每份价格约为15,000–25,000 VND,具体取决于配料。加了额外香肠和奶酪的豪华版售价为30,000 VND。无论从哪个标准来看,这都是你在越南能吃到的最物美价廉的美味之一。

    Banh Trang Nuong Ba Phung

    Ba Phung 在这个街角烤米纸已经超过十年了,周末排队通常需要10–15分钟。它的独特之处在于虾干——比大多数竞争对手切得更粗,因此你能吃到真实的口感,而不是像撒粉一样。点一份标准的鹌鹑蛋口味,再加3,000 VND升级一份“mo hanh”(葱油)。仅收现金,无座位——你可以站着吃,或者坐在巷子对面的矮墙上。

    Co Ut Banh Trang Nuong

    Co Ut 开的是一个小推车,而不是固定的摊位,这意味着她的炭火炉更紧凑,火候也更易控制。成品受热非常均匀,不会出现一边焦黑而中心还没熟的情况。她会加入一层混合了香茅的猪肉碎,这是大多数摊主会省略的步骤。这听起来是个小细节,但味道却大不相同。她的营业时间比夜市大部队稍早,所以如果你想在晚上6点前用餐,这是个不错的选择。

    Banh Trang Nuong Hai Ba

    Hai Ba 是夜市里的老字号——比名单上其他几家更具游客气息,他们也深知这一点。菜单增加了奶酪口味(35,000 VND),使用加工过的马苏里拉奶酪条,虽然能拉丝,但缺乏原味那种焦香与咸味的平衡。建议坚持点经典款。店里提供塑料凳和矮桌。这里的人流量很大,高峰时段(晚上7–9点)烤制速度可能较快,所以把握时间很重要——尽量在晚上6:30之前或9:30之后前往。

    避雷建议: 如果你是在周六晚上7点到9点之间去,且时间紧迫,请避开这家店。排队人数会激增,厨师为了赶速度可能会影响品质。

    Phan Dinh Phung 与 Nguyen Thi Minh Khai 街角摊位

    价格: 15,000–20,000 VND

    没有招牌,没有社交媒体账号,只有两位老奶奶和一个烤炉。这才是大叻居民真正会去吃的版本——米纸较小,蛋黄酱较少,虾干更多。鹌鹑蛋被打散平铺在上面,而不是保持整颗,这样每一口都能吃到蛋黄。价格是这份名单中最低的。她们卖完米纸就会收摊,通常在晚上9点左右。

    Trang Oi Banh Trang Nuong

    地址: 23 Khu Hoa Binh, 中央环岛上方
    营业时间: 下午 3:00 – 晚上 10:00
    价格: 20,000–30,000 VND

    Trang Oi 比较新,拥有一个小店面而不是推车,这意味着你可以在寒冷的天气里坐下来吃。烤制水平很稳定,菜单里包含一种配有越南猪肉香肠(切薄片的“cha lua”)的款式,搭配标准的猪肉碎,使口感更有层次。如果你刚从浪平山(Langbiang)徒步归来,想早点吃点热乎的,这里是个好去处。

    Banh Trang Nuong Truong Cong Dinh

    营业时间: 下午 5:30 – 晚上 11:00
    价格: 15,000–25,000 VND

    这条街与主夜市平行,50米内有三四家竞争摊位。质量因摊位而异——寻找排队本地人最多、米纸边缘烤得最焦的那一家。竞争保证了价格公道和厨师的专注。如果一家看起来动作很慢,走10步就是下一家。

    如何享用

    对折起来像吃塔可(taco)一样吃,或者保持平整掰着吃。无论哪种方式,一定要趁热吃——Banh Trang Nuong 从烤炉拿出来后,大约四分钟就会从完美变得软塌。搭配一罐大叻产的草莓汽水(附近摊位约10,000 VND),或者从穿梭在街头的咖啡推车买一杯“ca phe sua da”。
