    Sapa 的天气很冷——是那种真正意义上的寒冷,而非Hanoi一月份那种程度的冷。当Hoang Lien Son山脉的雾气弥漫开来时,“be chao”(西北地区的炒小牛肉)正是您最想吃的食物。这道菜的做法简单:将小牛肉切成薄片,用大火爆炒,加入姜、香茅、新鲜辣椒,有时还会加一点米酒。成品干香四溢,边缘微微焦脆。根据您选择的用餐地点,价格差异巨大。

    什么是Be Chao

    这道菜起源于Son La省的Moc Chau高原,那里奶牛养殖业发达,小牛肉是当地常见的副产品。它向北和向西传播到Lao Cai高地,包括Sapa(沙坝),当地的苗族(H'mong)和瑶族(Dao)社区将其融入了本地饮食。最正宗的做法是选用一岁以下的小牛,在炒锅的大火快炒下,肉质依然鲜嫩。较便宜的版本可能会用野牛肉代替,口感会有所不同——更硬且带有野味。如果您对此介意,点餐时不妨询问一下。

    位于Cau May的Sapa市场低层设有简易食品摊位,主要面向当地人和预算有限的游客。这里的一些摊主使用小型燃气灶制作be chao——您坐在塑料凳上用餐,份量十足,且不会有人向您推销。厨师通常也是负责备菜、上菜和收钱的人。

    品质参差不齐。有些摊位做得很好——火候到位,姜味足以去腥提鲜,肉质熟透而不老。另一些摊位则赶时间,做出来的肉看起来苍白且像蒸出来的,而非爆炒。建议选择用餐时间:在午餐高峰期(11:30–13:00)前往,此时翻台率高,锅气最足。尽量避开市场刚开门或下午休息的时间段。

    在这个价位,您牺牲的是:用餐环境、品质稳定性、英文菜单以及对肉质的确定性。您得到的是:一份扎实、地道的食物,价格便宜到让您有余力再点一份。

    推荐时段: Sapa市场下层,11:30–13:30。没有固定的摊位名称——跟着炒锅的烟火气走即可。配米饭的价格约为45,000–55,000 VND。

    中端之选:Ham Rong附近的本地餐厅

    价格区间:每份80,000–120,000 VND

    Thach Son街以及Ham Rong山脚下的几家小餐馆主要服务于越南国内游客和来自Hanoi的周末游客。这些地方有印刷菜单,燃气灶全天候开启,调味水平也更稳定。

    Nha Hang Thanh Huong(位于Thach Son街,靠近Ham Rong大门,距离售票处约100米)的be chao水准稳定,售价95,000 VND。香茅的香气浓郁,肉片切得很薄,边缘焦香适中,配上的腌菜确实能解腻。这是一家简单的餐馆——只有四五张桌子,一张塑封菜单,没有会说英语的员工——但食物非常地道。

    在这个价位,您通常还会获得ca phe sua da或当地茶饮,这让价格显得更加合理。

    奢华之选:酒店餐厅与高端餐饮

    价格区间:每份180,000–280,000 VND

    随着旅游基础设施的发展,Sapa的酒店餐饮业也日益成熟。像Topas Ecolodge(距离镇中心8公里,位于山谷脊线上)的餐厅以及Muong Hoa山谷公路沿线的一些场所,将be chao作为特色菜列入菜单。在220,000–280,000 VND的价位下,您得到的是精致的摆盘、指定的肉类部位(有时标注为“Moc Chau小牛肉”),以及能用英语为您讲解菜品的员工。

    味道更好吗?有时是。食材来源更可追溯,炒制工艺更讲究,配菜(新鲜香草、自制腌菜、蘸料)也更考究。但从95,000 VND到250,000 VND的差价并不代表味道有三倍的提升。您支付的是景观、餐桌布和英文菜单的费用。

    如果您本身就住在高端酒店,在那里点一份be chao是在舒适环境中尝试这道菜的合理方式。如果您是为了美食专程而来,中端餐厅能提供更好的性价比。

    该如何选择

    对于大多数游客:推荐中端餐厅。它们可靠、实惠,且食物品质确实很好。如果您正好在市场逛且感到饥饿,值得尝试一次街头小摊——只需在午餐高峰期前往即可。酒店版本适合那些想要一边欣赏山谷美景一边悠闲用餐,且预算充足的游客。

    并非Sapa的每家餐厅菜单上都有be chao——请寻找明确列出该菜品的餐厅,不要假设所有供应北部菜肴的餐厅都有。点餐前询问一下总是值得的。

    实用提示

    Sapa海拔约1,500米;即使在4月和5月,天黑后气温也会骤降,这正是吃be chao的最佳时机。大多数市场摊位在14:00后就会停止供应。这道菜不适合打包——请在出锅后趁热食用,不要外带。
