    在 Ben Tre 镇的大多数 com binh dan(平价米饭)摊位,您都能以 60,000–80,000 VND 的价格品尝到这道菜。建议搭配白米饭和柜台上现有的时蔬一起享用。千万别浪费那浓郁的汤汁——一定要淋在米饭上。

    Ca Kho Dua — 椰汁炖鱼

    “Ca kho dua”的烹饪逻辑与此类似。将整条鲶鱼或黑鱼切成厚块,放入陶罐中,倒入没过鱼身的嫩椰子水,在炭火上小火慢炖近一个小时。出锅时,鱼肉色泽深沉、油亮,外层带有焦糖的香气,用勺子轻轻一拨,鱼肉便会散开。

    这种做法与南方常见的 ca kho to(焦糖陶罐炖鱼)几乎如出一辙,区别在于用椰子水替代或补充了焦糖基底,使其口感更清爽、纯净。在 Ben Tre 汽车站附近的集市摊位,一份单人份的炖鱼配米饭大约只需 40,000–55,000 VND。

    Keo Dua — 椰子糖

    “Keo dua”是 Ben Tre 最著名的出口产品。走在任何一条街道集市上,您都会看到糖果摊位上堆成金字塔状的椰子糖。最基础的版本是将椰奶与糖熬煮至凝固,切成耐嚼的浅色长方块,先用可食用的米纸包裹,再用一层干椰叶包裹。

    各种口味都值得一试:加入斑斓叶的 keo dua 呈现出柔和的绿色;榴莲口味的则气味浓郁,评价两极;还有一种颜色较深的椰子焦糖口味,吃起来更像黄油太妃糖。产地价格约为每 400 克 80,000–120,000 VND,比 Saigon (西贡) 纪念品店的溢价便宜得多。Hung Thien 和 Ba Hung 是当地人最常购买的品牌。

    Ruou Dua — 椰子酒

    “Ruou dua”口感并不温和。它由直接从椰子花茎采集的汁液发酵而成,呈浑浊的乳白色,带有轻微的气泡,酒精含量约为 5–7%——比起烈酒,它更像是一种农家苹果酒。味道酸甜,带有一丝酵母的独特风味。由于它在采集后几乎立即开始发酵,因此在市面上很难买到保质期很长的瓶装新鲜椰子酒。

    品尝它的最佳地点是河边的民宿或 Ben Tre 镇外小村庄的摊位——Cho Lach 区是个不错的选择。建议先点一小杯尝试;不同批次的口感浓烈程度会有所不同。产地每半升售价约为 15,000–20,000 VND。

    此外还有蒸馏型的“ruou dua”——一种度数更高的椰子米酒——但当 Ben Tre 当地人提到它时,通常指的都是这种新鲜的发酵版本。

    在 Ben Tre 还能吃什么

    椰子是当之无愧的主角,但该省还有许多非椰子主题的美味。

    Hu tieu Ben Tre 是南方“hu tieu”面汤的地区变体——汤底比 Saigon 版本的更清淡,通常配有淡水虾和猪肉,最后加入几滴椰奶提味。这是当地人早餐的首选。

    Banh trang dua — 将磨碎的椰肉混入面糊制成的米纸 — 在市场上以厚圆饼的形式出售。可以直接吃,也可以放在炭火上烤,刷上一层葱油。

    Goi cuon — 这里的春卷多用湄公河鲜虾制作,出现在大多数午餐菜单上。这里的蘸酱除了常规的海鲜酱花生酱底,通常还会加入新鲜椰奶。

    交通与用餐建议

    Ben Tre 镇在 Dong Khoi 街和 Ham Luong 大桥附近的滨水区有一小片可靠的餐厅聚集区。想要获得更地道的体验,可以乘坐 xe om(摩的)深入果园村庄,或者租一辆自行车——村里的摊位售卖着许多镇上餐厅吃不到的美味。

    从 Saigon 出发,Ben Tre 距离约 85 公里,从 Mien Tay 车站乘巴士约需 2–2.5 小时。一日游完全可行,但在运河边的民宿住上一晚(约 250,000–400,000 VND)能让您从容地享用一顿地道的早餐。

    实用贴士

    Ben Tre 的美食精髓在于新鲜——现点现炖的鱼、当天采集的椰子酒、小批量制作的糖果。如果食物味道平平,那您可能走进了一家游客聚集的摊位,而非地道的本地食肆。距离主汽车站越远,吃到地道美食的机会就越大。大多数摊位只收现金,请准备好小额钞票。
