坐在座位上就能看到厨师操作烤盘:倒入薄薄的面糊,撒上虾和猪肉,对折,手腕一抖利落翻面。本地人点一盘、配一碟新鲜香草,再来一小瓶啤酒,即便是早上七点半——这在顺化是再正常不过的早餐方式。
摊子比Nguyen Hue那家小,但对品质的坚持更甚。老板Ngoc Suong亲自掌摊,一旦觉得烤盘温度不对,就拒绝出餐。有些早上九点前就卖完收摊;有些日子她会提早关门,理由是"油的状态不对"。正是这种执着,让本地人信任她。
摊位在Hung Vuong街一条窄巷里,靠近城隍东门。从主街上不容易发现,要知道位置才找得到。价格:28,000至32,000越南盾。她会搭配一份香草沙拉("du du xanh",生青木瓜、薄荷、香菜),比大多数地方的口味更清冽爽口。

夜市(pho co Dong Ba)大约从傍晚六点到十点,沿Dong Ba Market以西的江边一带摆开。其中一个摊位——靠一串裸灯泡和一台将窄巷烟雾弥漫的烤盘来辨认——是少见的在傍晚供应banh khoai的地方,而大多数摊位只做早餐时段。
这里更像是消遣聚会的地方,而非专程打卡的目的地。价格:20,000至25,000越南盾(比白天略便宜)。食客多是青少年、情侣和刚下班的蓝领工人。外皮的状态不如早上那些摊子,但气氛热闹随性。想感受那种烟火气就来,想追求完美外皮就免了。

大多数banh khoai摊没有会说英语的人。指着正在做的东西就行。如果有带图片的塑封菜单,可以用手机拍下来给厨师看,他们都能明白。
上来的banh khoai会配一堆新鲜香草(薄荷、香菜、紫苏)、生菜,以及一小碗"nuoc mam cham"(鱼露蘸酱——气味浓烈,但滋味不可或缺)。撕下一块banh khoai,用生菜和香草包好,蘸酱,一口吃下。做得好的应该很容易入口;如果嚼起来发韧发橡皮,就是火候过了。
想要最佳体验,早上是不可妥协的。早上七到九点是高峰时段。十点之后烤盘温度下降,厨师也渐渐疲惫,做出来的会略厚一些,少了那份酥脆。
如果你不是早起型的人,Chu Van An街的Thanh Nhan七点开门,八点半前人不算多。Ngoc Suong十点半关门,有时更早。
午餐和晚餐时段就不必考虑了——banh khoai是早餐和午前的食物。晚上有摊子的地方少之又少,品质也偏低。
