    与北部的"[banh xeo](/posts/banh-xeo-vietnam (베트남 / 越南 / ベトナム)-sizzling-pancake)"——那种用生菜和香草包着吃的大薄饼——不同,南部的Banh Khot通常直接食用,不用包裹。它们更小巧,中心部分更像蛋羹的质感,蘸着"nuoc cham"(鱼露)两口吃完。咬下去时应该先感受到酥脆,再过渡到内里虾仁的软嫩。

    Banh Khot 192 Nguyen Hue(第一郡)

    这是全城本地人必然提到的一家。藏在靠近Ben Thanh Market的Hue大道Nguyen Hue路边的一条小巷里,多年来维持着同样的格局:一排长柜台,几把塑料凳,两位老奶奶用小铸铁模具制作Banh Khot。她们手法极其熟练——每个模具约有十二个杯槽,在滚烫的油里进进出出,节奏行云流水。

    这里的Banh Khot金黄酥脆,边缘蕾丝般的焦脆,中心柔嫩,内馅是整只虾仁加少量猪肉。一盘(通常12个)售价35,000–40,000 VND。每天约早上7点开门,大多数日子11点前便售罄,来早了才能吃到。趁热直接从盘里取来吃,蘸鱼露,挤几滴青柠汁。

    Banh Khot 212 Ly Chinh Thong(第三郡)

    距市中心稍远,这家店少了几分旅游气息,更像是附近上班族的平日早餐据点。这里的Banh Khot比Nguyen Hue版本更小、更厚实,口感近似面包,猪肉用量远多于虾仁——有人喜欢,有人不然。价格相近:每盘35,000–40,000 VND。营业时间为早上6:30至11:30,午间休息,下午4点重新开门提供短暂的晚市服务。不少本地人下班后顺道来此,配着啤酒当作简单的晚餐。

    Vo Thi Sau路上的Banh Khot(第一郡)

    在靠近Tao Duc市场的Vo Thi Sau路西段,有几家Banh Khot摊贩,或推车或占据小店面。其中最稳定的是一位六十多岁女摊主经营的无招牌摊位,她使用机动模具——有些纯粹主义者嫌它"太工业化"——但出品质量稳定。每盘30,000–35,000 VND。这家店值得专程一去的原因,是她还会做一小批以蟹肉代替普通虾肉猪肉馅的Banh Khot。味道更浓郁、更鲜甜,在城里其他地方难觅踪迹。

    Banh Khot Hoa(第五郡,Cho Lon)

    在华越聚居区Cho Lon,Banh Khot略有不同的风味:用油更多,边缘更脆,通常混入中式韭菜或葱油,而非单纯的虾仁。Banh Khot Hoa是Nguyen Tri Phuong路与Ong Ich Khiem街转角附近的一家小店,是许多Cho Lon居民常去的Banh Khot老店。店主曾在曼谷学艺数年,这一点从出品上便能感受到——这里的Banh Khot少了几分"南部经典"的底色,更像是一道"东南亚街头小吃"。每盘40,000–45,000 VND。营业时间为早上7点至下午1点,周日休息。

    Saigon的Banh Khot有何不同

    在Hanoi等北方城市,Banh Khot个头更大,并不常见,有时用玉米淀粉或木薯粉制作,口感更有嚼劲。在Ho Chi Minh City,这道美食更为轻盈酥脆,更接近它的发源地——湄公河三角洲的传统吃法。虾仁在这里是不可或缺的灵魂食材,内陆地区有时会以其他馅料代替。而在Saigon,Banh Khot几乎不配生菜或香草上桌(那更像是Hanoi北部的融合吃法)。有的只是Banh Khot、鱼露,还有你。

    如何点餐

    指着模具,或伸手指比划想要的数量即可。大多数摊贩按固定份量供应:12个(mot dia)是标准一盘。如果口味偏重,可要求额外的鱼露——通常附赠的小碟刚好够蘸。若在没有桌子的柜台边站着吃,顺手拿一个铺着纸巾的小塑料篮,可以让手保持干净。部分摊贩会附上几片青柠或虾片——收下吧,这是整套吃法的一部分。

    最佳用餐时间

    早餐时段(早上6:30至10点)是黄金窗口。在Saigon的饮食文化中,Banh Khot是一道晨间食物,现做现卖,趁热吃完。到了上午晚些时候,油已反复使用多次,面糊也放置较久,味道会大打折扣。少数摊位提供午餐时段(上午11点至下午1点),晚市客流(下午4至7点)更少,对品质也没那么讲究。想吃最好的,就早点去。周末略微热闹一些,但差别不大——本地人吃Banh Khot更多是工作日通勤途中,而非周六早晨。

    实用提示:以上五家均只收现金。大多数中午或午后便收摊(Vo Thi Sau路和Cho Lon的摊位除外,傍晚会重新开门)。请备好零钱,店家通常无法找开大额钞票。一盘Banh Khot加饮料,总花费约45,000–55,000 VND——这是一顿便宜的早餐或茶点小食,不是用来填饱肚子的正餐。
