    Banh Nam是什么,为什么顺化的版本与众不同?

    "Banh nam"在越南各地有不同的含义。在Hanoi等北方城市,它可能是一种薄脆的煎饼。但在Hue,"banh nam"是一种蒸制米糕——软糯、略带透明感,折叠成口袋状,内馅是调味虾仁、猪肉末,有时还有一小块猪油和新鲜香草。上桌时配一碗蘸汁(鱼露汁或虾汤底)以及一盘生蔬菜:生菜、黄瓜、薄荷,有时还有紫苏。

    Hue的banh nam折射出这座城市的皇家宫廷传统。它精致却不失朴实——这种早餐小吃,有些摊位已经在同一个地方卖了几十年。米糕的口感至关重要:应当丝滑而不发橡皮劲,能完整成形,但不厚重也不粘牙。

    Banh Nam Ha Tuy(顺化火车站附近)

    Banh Nam Kep(Chu Van An街)

    Kep(意为"夹"或"折")位于Chu Van An街的Phu Cat坊,距城堡约2公里。这家以米糕较厚、略带嚼劲著称——有些本地人偏爱这种口感,也有人不喜欢。比Ha Tuy的版本更有饱腹感。一盘价格为25,000至30,000 VND,视份量而定。汤底味道更浓郁,带有草药香,隐约有八角的气息。如果你喜欢更厚重、咸中带甜的汤底,Kep值得一试。

    早上六点开门,通常十点前打烊,时间把握很关键。

    Banh Nam Anh Thi(Pham Hong Thai街)

    这家小摊位于Pham Hong Thai街,离香江不远。Anh Thi做的是更轻盈、更精致的版本——米糕比其他两家更薄、更丝滑。不少当地人把这里作为早餐首选,尤其是不想吃太撑的时候。价格:三块25,000至28,000 VND。

    这里的馅料香草味更突出,薄荷和莳萝的香气清晰可辨。平日早上六点至九点营业,周末有时会开得稍晚一些。

    东巴市场的Banh Nam(偶尔出现的早市摊贩)

    在Dong Ba Market南区的小吃摊附近,有个摊贩大多数早晨会在此摆摊卖banh nam。出摊情况不如上述几家稳定——有时有,有时没有——但如果你本来就要逛市场,可以顺路看看。因为摊位租金较低,价格也稍便宜(22,000至24,000 VND)。品质因日而异:有时米糕蒸得恰到好处,有时口感略显黏糯。

    如何点单及用餐须知

    Hue大多数banh nam摊位没有英文菜单。点单很简单:指着蒸笼里叠放的米糕,告诉摊主你要几块("ba cai"=三块,"bon cai"=四块),他们会把米糕盛到盘子里,附上一把汤匙。

    上桌时你会收到:

    • 一盘banh nam(通常三至四块,视大小而定)
    • 一小碗蘸汁
    • 一盘新鲜蔬菜(生菜、黄瓜、薄荷、紫苏叶)
    • 可能还有一小碟柠檬盐辣椒,或旁边备有辣椒酱

    吃法:将banh nam蘸入汤汁,夹上一片蔬菜或香草,一口或两口吃完。软糯的米糕、鲜香的馅料、清新的香草和清淡的汤底相互融合,这就是它的精髓所在。不必想太多。

    价格区间:22,000至30,000 VND(约合人民币6至8元),可作为一顿满足的早餐或简餐。

    什么时候去

    Banh nam是典型的早餐和早午餐食物。文中提到的所有摊位都在早上六点前后开门,大多数在上午十点或十一点前打烊。少数可能在午饭时段(中午至下午两点)重新开摊,但并不稳定。

    来Hue游玩时,请早起。早上七点吃到的新鲜出炉,和十点吃到的微温版本,差别是真实存在的。工作日早晨人少;周末人略多,尤其是早上八点前后。

    带好零钱(只收越南盾,这些摊位不收银行卡),做好站着吃或坐在摊旁小塑料凳上吃的准备。这是最纯粹的街头美食。
