    为什么芽庄的Banh Xeo与众不同

    "Banh xeo"——滋滋作响的虾肉猪肉煎饼——越南各地都有,但芽庄的版本以更厚实、油更多、口味更重著称,和你在Saigon或Hoi An吃到的完全不同。这里的煎饼用油更多,馅料更足,边缘刻意煎至焦脆。本地人会告诉你,这是因为摊位讲究速度和出货量——这是海滨小城的午饭燃料,不是Saigon那种精致的堂食体验。

    还有一点值得注意:芽庄的Banh xeo文化以午饭时间(上午11点至下午1点)为主,而非早餐。大多数摊位在上午接近晌午时全力开工,到下午2点左右就开始收摊。

    Banh Xeo Van(Tran Phu,老城区)

    这是每个本地人第一个会提到的地方。它坐落在Tran Phu街一栋狭窄骑楼的底层,藏在老城区大教堂附近杂乱的街巷里。老板娘从1980年代就开始做Banh xeo——家庭经营,没有任何装潢,木凳子朝着街道摆开。

    这里的煎饼厚实,边缘几乎像糕点一样,虾和面糊的比例明显偏向虾。用油很足,油会在煎饼底下积聚,但入口却不腻。配上一小碟新鲜香草、腌萝卜,还有一小碗"nuoc cham"(鱼露蘸汁),醋味较重。

    价格: 每张30,000–35,000 VND。营业时间: 上午11点至下午1点半,周日休息。如何点餐: 指着摊位,说你要几张("hai"是两张),坐下来,他们会主动送水。

    Banh Xeo Thanh Huong(Hung Vuong街)

    档次略高一点——有塑料椅,还有手写菜单牌——但仍然是地地道道的本地风格。这个摊位在Hung Vuong市场附近一排小吃摊中间,四周弥漫着腌菜和早市鱼腥的气味。

    他们的特色是当着你的面现做。老板直接将米粉浆倒在烧热的平底锅上,放上虾、五花肉和切片洋葱,再对折成形。等待时间是3到4分钟,饿着肚子的时候感觉像是漫长的煎熬,但煎饼上桌时还热着,虾肉明显已经熟透。

    这里没有英文;手势完全够用。上午11点45分,你会和建筑工人、外卖骑手肩并肩坐在一起。

    价格: 32,000 VND。营业时间: 上午10点半至下午2点。适合: 看厨师现场操作。

    Banh Xeo 68(Nguyen Tat Thanh)

    再往上一个档次。Nguyen Tat Thanh是沿海的主干道,这家摊位占据了一个黄金转角位置,有一个小门面,大概摆了8张塑料桌。老板娘五十多岁,把店打理得井井有条——Banh xeo以惊人的速度出锅。

    它的特别之处在于馅料:五花肉和虾都有,底部还有白洋葱和绿豆,绿豆是单独提前炒熟的,而不是生的。这让整张煎饼的内馅口感更软糯、几乎像炖过一样,与酥脆的外壳形成对比。口味没有Van家那么霸道,但比Thanh Huong更精致。

    他们还提供"canh chua"(酸罗望子汤)作为配汤,额外收10,000 VND——不是必点,但本地人常常点来解腻。

    价格: 35,000–40,000 VND。营业时间: 上午11点至下午2点。小贴士: 最好在上午11点15分前到,以免排队。

    Banh Xeo Nha Trang(Biet Thu街,近Tran Phu)

    这是面向游客的选择——招牌有英文,菜单配图片,价格略高——但并不坑人。老板曾在规模更大的店里学过手艺,做饼的功夫扎实。Banh xeo出品稳定:没有Van家那么强势,没有68家那么精致,但可靠。香草更新鲜,因为客流量大、翻台快。

    他们的其他菜品也值得一试:做工扎实的"goi cuon"(虾肉猪肉鲜春卷),以及浓郁香甜的"ca phe sua da"(越南冰咖啡)。

    如果你不习惯语言不通的情况,或者想坐久一点、不被催走,这里是最实际的选择。

    价格: 38,000–45,000 VND。营业时间: 上午10点半至下午3点(比其他家略长)。氛围: 干净、安静,适合初次体验的人。

    除了煎饼还能点什么

    其实不需要点太多。Banh xeo本身就配了香草和蘸汁,已经很完整。但如果还没吃饱:

    • Goi cuon(鲜春卷):15,000–20,000 VND。大多数摊位现包现卖,虾肉款是标配。
    • Banh cuon(蒸米卷):12,000–15,000 VND。部分摊位有供应(尤其是Banh Xeo 68)。口感更清淡,与煎饼搭配相得益彰。
    • Bia hoi(散装生啤):每杯8,000–10,000 VND。午饭就着Banh xeo喝啤酒,这里很正常。

    怎么吃才正确

    Banh xeo上桌时折成四层,放在一个小碟子上。撕下一块(大约手掌大小),用香草碟里的生菜叶或薄荷叶包起来,蘸鱼露,整个塞进嘴里。别磨蹭——凉了就会变硬。

    精髓在于这种层次感:酥脆的外壳、温热的馅料、清凉的香草、鲜咸的鱼露。如果你在帮同桌的人点餐,自己那份要立刻开吃,不然等它变橡皮就来不及了。

    最佳用餐时间

    午饭(上午11点半至下午1点): 高峰期。摊位全力运转,虽然排队,但队伍移动很快,Banh xeo不断出锅,保证新鲜。想感受完整的本地体验,这是唯一的时间段。

    上午(10点半至11点): 人少一些,没那么拥挤,但部分摊位还没进入状态。Van和Thanh Huong通常10点45分左右就准备好了。

    晚上或傍晚: 不必去了。芽庄大多数Banh xeo摊位下午2点半就关门,不再重新开张。那些继续营业的通常是面向游客的,质量会下滑。

    实用须知

    芽庄的Banh xeo摊位不收刷卡——只收现金,越南盾。最好带小面额钞票(50,000 VND)。不需要预约,直接在午饭时间去就行。如果摊位看起来很多人,等5到10分钟就好;每份只需2到3分钟,队伍走得很快。备好胃口:一张煎饼是轻食午餐,两张是正常饭量,三张就是在炫耀了。
