    是什么让 Hue 的“ca phe muoi”与众不同

    盐咖啡,或称“ca phe muoi”,并非偶然的产物。它起源于中部高原(중부 고원 / 中部高原 / 中部高原),最初是为了平衡罗布斯塔咖啡豆的苦味,并掩盖当时不那么干净的水味。在 Hue,这种饮品演变得更加考究——它是深度烘焙咖啡、甜炼乳、蛋黄和一小撮盐的混合物。盐的加入中和了浓郁的口感,营造出一种在越南其他地方找不到的咸甜交织的绝妙张力。

    Ca Phe Co Tram(Tran Hung Dao 街)

    如果你起不来去 Phan Boi Chau,Co Tram 是你的备选。这是一家固定的店面——不仅仅是个推车——有八个真正的座位。老板 Tram 女士几十年前从婆婆那里学到了这个配方,并且从不擅自更改。她用法压壶冲泡咖啡,并加入一小撮碘盐(是的,这很关键;海盐的味道不同)。蛋黄总是新鲜的,现敲现做。

    Ca Phe Tay Ho(靠近 Hue Citadel)

    Ca Phe Mot Goc(Ly Thuong Kiet 街)

    这是一个从早上 5:30 开始营业的小推车,由一位名叫 Duc 的不会说英语的老大爷经营。他制作的盐咖啡口感更轻盈、更蓬松——鸡蛋和盐被搅打的时间更长,体积更大。一些当地人更喜欢这种口味;另一些人则觉得它不够浓郁。你可以尝尝看,做个比较。

    Ca Phe Voi(Khan Hung 街,靠近 Dong Ba)

    另一家推车,很受三轮车夫和建筑工人的欢迎。这里的盐咖啡比其他地方甜度低,几乎是咸鲜味的。老板会在上面加一小块咸味卡仕达酱——这是一种在别处见不到的变体。这种口味需要慢慢适应,但如果你已经尝过其他三种版本,想体验第四种风味,那就来这里吧。

    如何点单

    走上前去。指着咖啡,或者说“ca phe muoi, khong da”(盐咖啡,去冰)。如果你想加冰——这在早上很少见,但在午餐时很常见——就说“ca phe muoi, co da”。

    观察制作过程。ca phe muoi 最棒的部分在于它的仪式感。你会看到老板搅打鸡蛋和盐,倒入热咖啡,混合物会像舒芙蕾一样膨胀起来。那一刻——趁着它还温热且充满泡沫时喝下的第一口——才是精髓所在。

    不要要求额外添加任何东西。糖、甜炼乳(已经混合在里面了)或额外的盐都会破坏它原本的风味。这些地方只卖这一种饮品,也只有一种做法。

    为什么你应该在早上去

    早上是喝盐咖啡最合理的时间。它浓郁、醇厚,而你的胃正渴望一些有分量的东西。下午 2 点喝也没问题,但感觉不太对——对于正午的炎热来说,它太浓稠了。当地人通常在早餐时喝,或者在傍晚(下午 4 点左右)作为晚餐前的提神饮品。

    最好的时间是刚破晓时,那时咖啡是现煮的,城市也很安静。Hue 的生活节奏比 Hanoi 或 Saigon(사이공 / 西贡 / サイゴン)要慢;早晨的咖啡仪式正是这种慢节奏的体现。

    带上现金——这些地方都不刷卡。如果一个地方声称有盐咖啡,但端上来的东西看起来像普通的炼乳冰咖啡,那就继续往前走。正宗的 ca phe muoi 看起来应该几乎像卡仕达酱一样,有一层明显的泡沫。如果你第一次喝就讨厌它,在放弃之前不妨换个地方再试一次;因为每位老板的配方都不尽相同。
