    什么是"Com Hen"?

    Com Hen看似简单:白米饭上铺着煮熟的淡水蛤蜊、炸葱头,还有一把新鲜香草——薄荷、香菜、莳萝。把所有食材拌匀,挤上青柠汁,淋几滴鱼露,趁蛤蜊还热乎的时候赶紧吃下去。蛤蜊个头小,带着咸鲜味,略带一丝甜。整碗吃下来,感觉更像在吃海边的味道,而不是一碗米饭。

    它不是汤,也不是炒菜。这是Hue独有的食物,几乎永远是早餐或午前的选择。晚餐菜单上很少见到它的踪影。

    Hue的Com Hen为何与众不同

    其他城市也有蛤蜊饭(Da Nang、Can Tho,甚至Saigon都有各自的版本),但Hue的才是源头,也是衡量标准。这里的蛤蜊来自附近的Tam Giang潟湖——一片淡水与咸水交汇的沿海湿地,养出的蛤蜊比内陆品种更甜、个头更小。当地摊主几十年如一日,沿用同一套做法,裹在米饭和蛤蜊上的那层汤汁因此透着一种近乎克制的鲜味:只有蛤蜊原汤、少许盐,或许再加一抹虾酱的若隐若现。

    还有一点:Hue的版本更重视生香草的运用。大把的薄荷和莳萝直接生拌进去,切断蛤蜊的油腻感,让整道菜吃起来比它看起来轻盈得多。

    Hue哪里可以吃到Com Hen

    Com Hen A Thanh

    这是本地人开口第一个提到的地方。摊位在Nguyen Hue街上(繁忙的商业街)Perfume River以东约50米,只摆了三张凳子。摊主Thanh在这里守了三十多年。蛤蜊在巨大的炭火铁锅里翻炒,整个过程就在你眼前完成。一碗35,000–40,000 VND。营业时间仅为早上6点至10点。建议8:30之前到,否则会赶上早高峰的尾巴,还可能遇到蛤蜊卖完的情况。

    Com Hen Hoa

    Hoa的摊位更小——一辆推车停在老市场附近的小巷里,距Ben Thanh Market以北约200米。早上6点左右开摊,9点往往就卖光了。这里的蛤蜊个头略大,咸鲜味比A Thanh的淡一些;有些本地人更喜欢,也有人说这恰恰说明它们不是来自Tam Giang的。一碗30,000–35,000 VND。只收现金。吃饭要么站着,要么蹲在小塑料凳上。没有英文菜单,也没有标价——问问旁边的人付了多少钱就好。

    Com Hen Thao(Tran Hung Dao街)

    这是一家堂食店,不是路边摊,约十张塑料桌挤在一间狭窄的门面里。Thao的版本配有烤排骨("suon nuong"),有人觉得多此一举,但味道确实不错。蛤蜊出品稳定。一碗40,000–50,000 VND,视分量而定。营业时间早6点至中午。人没有A Thanh那边多,但名气也略逊一筹。

    Com Hen Thuy(Chu Van An街)

    规模更小,家庭经营,名气不大,但如果你想清静地吃一碗,很值得一试。蛤蜊的味道更清淡——据说来自潟湖的另一片水域。35,000 VND。营业时间早6:30至9:30。

    如何点餐

    如果不会说越南语,就指着旁边人的碗,伸出一根或两根手指。说"mot / hai"(一/二),点点头,摊主就明白了。如果想多加香草(强烈推荐),可以说"them rau"(多放香草),或者直接比划一下那堆香草。

    有些地方提供加量版本,多花几千越盾就能多加蛤蜊或加大份量。可以问"co co them khong?"(有大份的吗?),或者观察一下旁边人点的是什么尺寸。

    什么时候去最好

    Com Hen是早餐和午前的食物。大多数摊主6点到6:30开摊,10点或11点收摊。最佳时间是早上7至8点,那时蛤蜊最热,香草也最新鲜。9点以后香草开始蔫,10点前后蛤蜊也容易变得软烂。

    晚饭时间找不到Com Hen。如果有摊主声称下午3点还有得卖,大概率是前一天剩下的热了热。

    价格与用餐预期

    普通一碗30,000–50,000 VND(约合人民币9至15元左右)。通常包含米饭、蛤蜊、香草和炸葱头。青柠和鱼露或单独上桌,或已提前拌入。部分摊主还会附赠一小杯蛤蜊汤,可以浇在碗上一起吃。

    饮品选择:冰绿茶("tra da")或冰黑咖啡("ca phe den da"),很多摊位有卖,10,000–15,000 VND一杯。

    口感与味道说明

    如果你初次接触淡水蛤蜊,它的肉质比海蛤蜊更有嚼劲,有时带着一股淡淡的矿物质气息,甚至略带金属味。这是正常的,也是这片土地独有的——那是潟湖的味道。有些游客会觉得不适应,也有人认为这正是精髓所在。不妨先吃一次,再做判断。

    实用小贴士

    上述所有地点都在Hue市中心步行可达的范围内,靠近市场或河边。记得带现金(路边摊不收银行卡)。最好的Com Hen在8:30之前就能吃到,请相应安排早晨的行程。如果你住在古城或背包客区附近,清晨朝河边和市场方向走,随便拐进一条小巷就能遇到摊位。也可以问问酒店老板或出租车司机他们平时在哪里吃Com Hen——得到的答案,往往是任何旅行指南都不会告诉你的。
