    Com Tam Ba Ghien(传奇老店)

    如果 Saigon 有碎米饭的守护神,那一定就是这家摊位的老板娘。Ba Ghien(她的真名鲜为人知,大家只管叫她“阿姨”)在 Tan Dinh 市场附近的一个角落里卖“com tam (껌땀 / 碎米饭 / コムタム)”已经超过 30 年了。她开门很早——早上 5 点——塑料小板凳瞬间就会被坐满。

    Com Tam Moc(现代改良版)

    几年前,一位前银行家辞去工作,在 Nguyen Hue 步行街开了一家小店(位于一楼,看到排队的队伍就不会错过)。米还是碎米,依然香气扑鼻,但店里装了空调。猪肉的选择也更多了:烤排骨、肉丝、猪腱肉。汤底更加醇厚——是用猪骨熬制数小时而成的。鸡蛋可以选择半熟或全熟。你还可以点一份烤鱼饼(“cha ca”)或炸春卷(“cha gio”)作为配菜。

    味道依然纯正,而且很实在——毫不做作。但这也是这份名单上最接近“餐厅”的地方。如果你饿了,并且想舒舒服服地坐着吃一顿,这里是个不错的选择。

    Com Tam Thuan Kieu(街坊老字号)

    Com Tam Ngu Yen(隐秘角落)

    Ngu Yen 在 District 5(第五郡)的一个街角营业,大概只有四张塑料桌,剩下的只能站着吃。大多数顾客是附近工地的建筑工人。老板是一位中年妇女,用一个大铝锅煮饭。

    值得你绕道而来的原因是:猪肉是从隔了两条街的一家指定肉铺进的货。排骨更瘦,烤得火候更猛,表面带着焦脆感。鸡蛋总是用猪油煎的,所以蛋黄浸在油脂中——这可能不是每个人的偏好,但如果你喜欢浓郁的口感,这碗饭绝对适合你。

    早上 7 点前过来,否则你会错过最好的一锅饭。

    Com Tam Saigon 68(连锁扩张版)

    如果说 Ba Ghien 是元老,那么 Saigon (사이공 / 西贡 / サイゴン) 68 就是特许经营的成功典范——尽管它依然是接地气的街边小店。现在已经有三家分店(District 1、District 3 和 Binh Thanh)。米饭吃起来就是好米饭的味道:美味、稳定,绝不会烧焦或软烂。猪肉是标准化制作的。汤底也发挥稳定。在这里吃饭,感觉不像是发现了一个秘密基地,更像是在一家靠谱的连锁店点餐。
