    什么是“kem bo”?

    “kem bo”是 Vietnam (베트남 / 越南 / ベトナム) 的蛋奶冰淇淋——口感柔软、蛋香浓郁、微甜,通常装在玻璃杯或蛋筒里供应。它不是意式冰淇淋(gelato),也不是你在 7-Eleven 买到的那种工业流水线产品。真正的“kem bo”有着融化黄油般的质地,尝起来像是炼乳与焦糖的结合体。Da Lat 自称是这款甜品的发源地,老实说,这确实有理有据。

    为什么是在这里?凉爽的气候——Da Lat (달랏 / 大叻 / ダラット) 海拔 1,500 米——意味着“kem bo”不会在 90 秒内融化成汤。你可以真正坐下来慢慢品尝。此外,小镇周围的山区有着纯正的奶牛养殖传统。奶牛、牛奶、冰淇淋,这一切都不是刻意制造的怀旧噱头。

    当地人去哪里买“kem bo”

    Kem Bo Thap Cham(Thap Cham 冰淇淋)

    Thap Cham 是 Da Lat 最早的“kem bo”店——开业于 1950 年代,至今仍由同一个家族经营。店面狭窄,铺着瓷砖,有一个长长的吧台和几张吧台凳。在窗口点单,他们会递给你一个蛋筒或纸杯。香草味纯粹且蛋奶味突出——没有香草精的刺鼻味,只有蛋黄和糖的香气。单球大约 20,000–25,000 VND,不算便宜,但当地人午餐时间都会来排队。

    位置:6 Nguyen Chi Thanh, Da Lat(老城区,从 Xuan Huong 湖步行即可到达)。

    如何点单: 指着口味说。“Mot tay vanilla”(一个香草球)。他们会问你要蛋筒还是杯装(蛋筒 = “nón”,杯装 = “ly”)。选蛋筒——这才是这里的地道吃法。

    Kem Hoa Nhat(Hoa Nhat 冰淇淋)

    当地人对 Hoa Nhat 赞不绝口,认为这里的“kem bo”更像自制的蛋奶冻。这家店很小,不讲究排场,位于 Lam Dong 博物馆附近的一栋改造民居内。它的质地比 Thap Cham 更紧实——空气感较少,蛋奶感更足。他们制作开心果、咖啡、草莓口味,以及轮换的季节性口味。价格差不多:每球 20,000–25,000 VND。

    老板(一位 70 多岁的女士)制作冰淇淋已经超过 40 年了。如果她在店里,只要你去过一次,她就会记住你。可以和她聊聊天。推荐点“kem cafe”(咖啡口味)——它不甜,尝起来是真正的咖啡味,而不是糖浆味。

    Kem Sinh To(冰沙冰淇淋)

    如果你想尝试更新颖但依然传统的口味:Kem Sinh To 出售用新鲜水果制作的“kem bo”。草莓味是用 Da Lat 草莓做的(产季在 9 月至 11 月和 12 月至 2 月)。质地稍微没那么紧实——更像雪葩(sorbet)——但口感更新鲜。价格在 25,000–30,000 VND 左右。

    位置:1 Tran Phu, Da Lat(主干道上,靠近 Dalat Palace Luxury Hotel)。

    Kem Trang(Trang 冰淇淋)

    一家由一对退休夫妇经营的较小、较老的店。他们只卖两种口味:香草和巧克力。香草是他们的招牌——淡黄色,口感浓郁,用当地鸡蛋制成。巧克力颜色较深,没有你想象的那么甜。这是最不花哨的选择,但如果你喜欢极简主义,当地人会说这是最好的一家。

    位置:42 Nguyen Hue, Da Lat(Thien Vuong 塔附近的一条安静街道)。

    Kem Dong Tay(东西方冰淇淋)

    一家更有个性的老店——木制内饰,复古海报。他们以传统方式制作“kem bo”(高含蛋量,低糖)。口味随季节轮换。夏天是芒果,初秋是牛油果,冬天是栗子。价格在 22,000–27,000 VND 左右。

    位置:8 Chu Van An, Da Lat(老城区)。

    是什么让 Da Lat 的“kem bo”与众不同

    其他城市也卖“kem bo”——你可以在 Hanoi、Saigon、Hue (후에 / 顺化 / フエ) 找到它。但 Da Lat 的版本通常被认为拥有更浓郁、不那么甜腻的蛋奶基底。部分原因是凉爽的空气(冰淇淋能保持绵密更长时间,融化得更慢,味道不会显得单调),部分原因是奶源新鲜,还有部分原因是这些店没有过度加糖的动机。在 Da Lat 吃一个球,你会觉得刚刚好。在 Saigon,吃一个球你就会立刻感到糖分飙升带来的疲惫感。

    此外:这些都是老店。Thap Cham 和 Hoa Nhat 并不打算为了迎合 Instagram 而做优化。他们仍然使用手摇或小批量机器,以鸡蛋为主的配方,并在可能的情况下使用当地牛奶。这才是关键所在。

    价格与点单指南

    价格: 每球 20,000–30,000 VND(约合 0.85–1.25 美元)。“单球”是标配;双球价格为 35,000–50,000 VND。几乎没人买双球。

    点单:

    • 指着口味展示柜(大多数店都有贴着标签的小桶)。
    • 说“mot tay”(单球)或“hai tay”(双球)。
    • 问“nón hay ly?”(蛋筒还是杯装?)。
    • 如果队伍很长,不要闲聊——当地人在这些地方买东西速度很快。
    • 大多数店在晚上 8 点或 9 点前关门;有些店会在晚餐时间休息。

    小费: 不需要给小费。如果你愿意可以向上取整,但就算不给,也没人会觉得奇怪。

    什么时候去

    最佳时间:

    • 午餐时间(上午 11 点–下午 1 点): 高峰期。在 Thap Cham 和 Hoa Nhat 预计需要排一小会儿队。如果你喜欢热闹就这个时候去,或者下午 2:30 再来,随到随买。
    • 傍晚(下午 4–5:30): 当地人下班后来吃蛋筒的时间。这是个好时段;既不匆忙,也不冷清。
    • 避免:晚餐后(晚上 8 点以后)。较小的店已经准备打烊了。
    • 季节: 温暖的月份(5 月–10 月)最佳。在冬季(11 月–2 月),Da Lat 可能会灰蒙蒙且有些冷——你仍然会看到当地人吃“kem bo”,但这就不算什么特别的消遣了。

    实用提示

    带上现金——这些店大多不接受刷卡。Da Lat 市中心很适合步行;这五个地点彼此之间以及距离 Xuan Huong 湖都在 1.5 km 以内。如果你住在湖边,一个下午就可以逛两三家店做个对比。站着或边走边吃蛋筒——这才是地道的吃法。别指望店家会提供餐巾纸。
