    Da Nang 的 Mi Quang 有何不同

    Mi Quang 是越南(베트남 / 越南 / ベトナム)中部对 Pho 的回应——这是一种用姜黄染色的扁平米粉汤,看起来不起眼,但口感层次丰富且独特。在 Hue、Quang Tri、Quang Nam 和 Da Nang 都能找到它的身影,但 Da Nang 的版本尤为出名。这里的汤底通常比 Hue 的更清淡、更干净,猪肉味没那么重,海鲜味更突出。面条本身也更有嚼劲。当地人会告诉你,正宗的 Mi Quang 摊位和专坑游客的版本之间的质量差距,比看起来要大得多。

    与随时都可以吃的“Pho”不同,“Mi Quang(미꽝 / 广南面 / ミークアン)”严格来说是一道适合午餐到傍晚享用的美食。大多数摊位在上午 10 点左右营业,晚上 7 点或 8 点前打烊。很少有人把它当早餐吃。

    Mi Quang 16(Tran Phu 旁的小巷)

    在老市场区 Tran Phu 街旁一条狭窄的无名小巷里,有一家经营了数十年的摊位。没有招牌。只有一个穿着蓝色围裙的女人、一张塑料桌子,以及一锅从上午 10:30 熬到下午 6 点的汤底。

    Mi Quang An Nam(临街,靠近 Han Market)

    这是一家更容易找到的堂食小店,有真正的店名和菜单牌(虽然只有越南语)。位于 Han Market 区域,距离水果入口不到 200 米。店里有五张塑料桌,总是客满。

    他们的 Mi Quang 有两种选择:“Tom”(虾)或“Ga”(鸡肉)。虾肉版更好吃——新鲜烤制的虾带来一种微妙的微苦,恰好平衡了姜黄的味道。汤底比 Mi Quang 16 的更清淡,更接近海鲜清汤。一碗:40,000 VND。加一块烤虾饼需另付 10,000 VND。

    Mi Quang Diem(Vo Nguyen Giap,靠近 Nui Thanh 路口)

    Mi Quang Bac(Tran Cao Van 街,Tran Cao Van Market 对面)

    这是一家正式的堂食餐厅,而不是路边摊。有二十张桌子、服务员和完整的菜单。这是家庭周日享用午餐的地方,也是招待来访亲戚的去处。这里的 Mi Quang 品质稳定且美味,但不如街边摊那么“原汁原味”——为了迎合更广泛的口味,它做了一些改良。

    一碗:50,000 VND。配有一盘青菜和一小碟炸花生及虾干。每天上午 10 点至晚上 9 点营业。

    如果你想要舒适和稳定的出品,而不是市井气息,那就来这里。

    Mi Quang Co May(Hung Vuong 旁的小巷,2 区)

    这是名单上最新的一家店,由一位来自 Tam Ky 的女士于 2021 年开办。她的汤底结合了 Quang Nam 和 Hue 的烹饪技法。它比 Da Nang(다낭 / 岘港 / ダナン)的传统版本更浓郁,但又不像 Hue 中部的那样厚重。摊位很小——只有三张面对着汤锅的塑料凳。

    一碗:42,000 VND。她只在上午 10 点到下午 1 点营业。午餐人群在下午 2 点前散去,随后她就打烊了。这是属于早间的美食:你必须饿着肚子早点去。

    如何点餐

    如果你会说一点越南语,可以要求“Canh”(只要汤)或“Bo”(加豆腐或肉)。只要你开口,大多数地方都会免费添加。

    时间与季节

    Mi Quang 在凉爽的月份(10 月到次年 3 月)最为美味。在最热的时候(5 月到 8 月),汤底放置的时间较长,味道会变得平淡。当地人依然会吃,但普遍认为秋天的味道更好。

    午餐时间是上午 11:30 到下午 1:30。大多数摊位在下午 3 点到 5 点之间休息,然后重新开放供应晚餐(下午 5–7 点)。如果你想享受清静的就餐环境,请在上午中段或下午早些时候前往。

    周一到周五,这些地方主要为当地打工人提供餐饮。周末则会迎来家庭聚餐和更多游客。周二和周三上午是你最能避开人群的时段。

    价格与预期

    在 Da Nang,一碗正宗的 Mi Quang 价格在 35,000–50,000 VND(约合 1.50–2.10 美元)之间。这包括了汤底、面条和大部分配料。升级选项——额外加虾饼、加虾、配一份烤鸡肉——需增加 5,000–15,000 VND。

    实用提示

    带上零钱。大多数摊位和小店不接受刷卡。请在上午 10 点到下午 6 点之间享用,不要太晚。向当地人问路——Da Nang 的街道地址有时很模糊,手机 GPS 在寻找小巷入口时也常常会失效。从你的酒店步行 15 分钟,通常就能找到一家靠谱的 Mi Quang 摊位。
