    Phu Quoc 的鱼露——“nuoc mam”——一个多世纪以来一直沿用同一种制作工艺:黑鳀鱼、海盐、木桶,以及至少 12 个月的耐心陈酿。如果你只用过越南超市里批量生产的瓶装鱼露,那么岛上作坊生产的产品一定会让你大吃一惊。

    它有何不同

    “nuoc mam Phu Quoc”这一名称受到越南法律的地理保护,并得到欧盟认可——这是少数获得此地位的越南食品之一。其产区仅限于该岛本身。鳀鱼(ca com do,即红身品种)于 7 月至次年 1 月在 Phu Quoc 周边海域捕获,随后立即与海盐分层放入巨大的菠萝蜜木桶中。比例至关重要:3 份鱼配 1 份盐。木桶发酵至少 12 个月,通常时间更长。第一次提取的鱼露被称为“nuoc mam nhi”,属于顶级品质,越南标准下的蛋白质含量超过 40°N。低于此标准的鱼露则会被混合稀释或廉价出售。

    优质鱼露的颜色应为深琥珀红色,类似于陈年酱油。闻起来气味浓郁但纯净——那是发酵的香气,而非腐烂味。如果闻起来平淡或有化学味,说明它是被稀释过或在岛外加工的。

    先参观工厂

    在购买任何东西之前,先花 30 分钟参观一家正在运作的工厂。Khai Hoan Fish Sauce(位于 Duong Dong 镇,Hung Vuong 路 2 号)是游客最多的地方,并提供免费参观。你可以走过一排排 1 万升的木桶,导游会讲解分级系统,你还可以现场品尝 30°N 和 43°N 鱼露之间的风味差异。工厂商店直接销售——价格从 500 毫升标准级鱼露的约 50,000 VND,到 500 毫升顶级 nhi 鱼露的 250,000–350,000 VND 不等。虽然不是岛上最便宜的,但质量控制稳定,且瓶盖密封良好,适合携带。

    Phung Hung Fish Sauce(位于 Duong Dong 的 Co May 街,距离夜市以南约 800 米)规模较小,是家族经营的,非常值得一去。他们自 20 世纪 50 年代就开始生产,这里的木桶看起来比工厂旅游时代还要古老——事实也确实如此。这里没有华丽的参观路线,只有木桶和工作人员,他们会直接从木桶底部的龙头为你装瓶。他们的 40°N nhi 鱼露 500 毫升售价约为 180,000 VND。营业时间大约为 7:00–17:00,周日休息。

    当地人真正去哪里买

    Duong Dong 市场 (Cho Duong Dong)

    位于 Bach Dang 街的室内市场才是“当地人去哪买”的真正答案。干货区的摊位散装出售 nuoc mam——你可以自带容器,或者花 5,000 VND 买一个简单的塑料瓶。优质的 35°N 鱼露每升价格约为 80,000–120,000 VND。这里的摊主不是为了游客表演;他们会告诉你蛋白质含量、工厂来源,以及某一批次是发酵时间长还是短。请在 9:00 之前前往,以避开从附近度假村涌入的旅游团。

    Hung Thanh Fish Sauce Shop(位于 Tran Hung Dao,靠近 Ong Lang 路口)

    这是一家小型店面,从两家当地生产商进货,标签标注诚实——每瓶鱼露的等级都用清晰的字体标出,而不是隐藏在小字里。他们 43°N 的单次提取 nhi 鱼露 500 毫升售价为 280,000–300,000 VND,属于高端产品,但店主会在你购买前打开一瓶供你品尝。营业时间稳定:每天 8:00–18:30。

    Cho Ham Ninh(位于 Ham Ninh 渔村,距离 Duong Dong 以东约 15 公里)

    如果你去 Ham Ninh 吃螃蟹和“goi cuon”,码头附近的小市场摊位出售岛屿东岸生产的鱼露。东岸的产品颜色通常比 Duong Dong 地区的鱼露稍浅。价格更低——每 500 毫升约 70,000–100,000 VND——部分原因是包装简单,部分原因是你在产地附近购买。买一小瓶来对比一下很值得。

    避开这个地方

    Khai Hoan 工厂大门外以及 Duong Dong 夜市周围的一排纪念品商店,以 180,000–400,000 VND 的价格出售包装精美的品牌 nuoc mam。其中一些产品还不错,但很大一部分是混合产品——即 Phu Quoc 出产的低等级鱼露,掺入在其他地方生产的鱼露,然后贴上 Phu Quoc 的标签重新装瓶。只要混合物中包含岛上出产的鱼,根据目前的标签规定,这在技术上是合法的。精美的礼品包装让你很难分辨。经验法则:如果标签上没有注明 °N 蛋白质含量,且生产地址不在 Phu Quoc,请避开它。

    如何使用它

    40°N 以上单次提取 nuoc mam 最纯粹的用法是作为蘸料,几乎不需要稀释——加一点青柠汁、切碎的辣椒,或许再加一小撮糖。它不需要加入任何烹饪中。把它淋在蒸米饭上,或者像当地人那样搭配“banh mi”或一盘简单的白灼猪肉食用。烹饪会破坏赋予头道鱼露价值的芳香物质;把好东西留着,烹饪用普通等级的鱼露即可。

    实用提示

    随身行李的液体限制意味着你需要托运瓶子,或者在出发大厅购买——Phu Quoc 国际机场的安检区内有少量 Khai Hoan 产品,价格比工厂直销贵约 20%。无论如何,请将瓶子装入密封袋后再放入托运行李中;当地塑料瓶的盖子并不总是能承受航空压力。一瓶 500 毫升的优质 nhi 鱼露几乎不占重量,而且比你在家乡的越南餐厅供应店买到的任何东西都要好。
