    Hoi An Banh Mi 的独特之处

    先从面包说起。Hoi An 的法棍比 Saigon 的更短、更胖——大约 20 厘米长——咬下去时外壳会发出清脆的碎裂声。面包内部保持着轻盈的质感,几乎像空气一样蓬松。这究竟是因为当地的水质、烤箱温度还是几十年的习惯,人们尚有争论,但结果就是这种外壳即便在加入馅料后依然能保持酥脆。Saigon 风格的 Banh Mi(越式法包)通常来自 Nguyen Trai 街头的摊位,口感往往更软、更有韧性。Hanoi 版本则经常完全省略肉酱,侧重于 cha lua(猪肉香肠)和腌萝卜。而 Hoi An 的做法两者兼顾,甚至更多。

    Phuong 与 Madam Khanh:诚实评估

    Banh Mi Phuong

    地址:2B Phan Chau Trinh。大约早上 6:30 开门,售完即止——通常在下午早些时候。这里的 Banh Mi 售价约为 30,000–35,000 VND。

    Phuong 是最出名的一家,部分原因在于 Anthony Bourdain 在 2009 年造访时称其为他吃过最好的 Banh Mi。那句评价至今仍印在柜台旁的一张塑封牌上。自那以后,店铺规模有所扩大——现在它在一家正规店面经营,拥有一支流水线般的制作团队——但三明治的质量保持得比你预想的要好。肉酱浓郁而不油腻,面包送来时依然酥脆,辣椒与香草的比例也拿捏得恰到好处。排队移动很快,建议早点去。

    Madam Khanh — The Banh Mi Queen

    地址:115 Tran Cao Van。大约早上 6:30 开门,大多数日子中午左右关门。价格在 25,000–30,000 VND 之间。

    Madam Khanh 的店面更安静,稍微偏离了主要的游客路线,三明治有着不同的个性。肉酱口感更质朴,猪肉馅料油脂感更重,有些人偏爱这种风格;而面包——在状态好的时候——是两家店中最酥脆的。Madam Khanh 本人现在已经 70 多岁了,大多数早晨仍亲自坐镇。店里可能只能站下六个人。这里的体验与其说是生产线,不如说更像是一种邻里仪式。如果说 Phuong 是你读过攻略后必去的地方,那么 Khanh 就是你会主动推荐给朋友的宝藏。

    老实说,两家店都不会让你失望。真正的错误是把整个行程花在网上争论哪家更好,而不是连续两个早晨各吃一家。每个 30,000 VND 的价格,这并不是什么沉重的经济负担。

    它在越南 Banh Mi 版图中的位置

    在整个越南,Banh Mi 会根据所在地的不同而进行调整。在 Saigon,它更快、更混乱——那是人们在招手拦摩托车出租车时吃的早餐,馅料种类更丰富,包括鸡蛋和沙丁鱼。在 Da Lat,一些摊贩会加入牛油果和一种加了糖的黄油抹酱,听起来很奇怪,但尝试后会发现别有风味。在 Hanoi,面包本身通常更扎实,馅料也更克制。

    Hoi An 位于中部地区,这里的烹饪倾向于浓郁口味——想想“bun bo Hue”的火辣,或者“mi quang”的复杂层次,这是你在当地值得尝试的另一种越南中部特产。Banh Mi 反映了同样的偏好:更多的肉酱、更多的辣味、更多的香草,所有这些都包裹在一个能提供真正结构支撑的法棍里。它不会吃到一半就散架,它能撑得住。
