    话虽如此,越南传统意义上的“素食”有时仍包含鸡蛋,偶尔也会用到虾酱。因此,如果你是严格纯素食者,最好明确表达:“Toi an thuan chay”(我吃纯植物基饮食),这会非常有帮助。

    佛教寺庙料理

    了解河内(하노이 / 河内 / ハノイ)植物基饮食文化的最佳方式并非去网红咖啡馆,而是去寺庙附属的食堂式厨房。

    位于老城区 Hang Manh 街的 Quan Chay Nang Tam 几十年来一直为午餐人群提供餐饮。菜单价格约为每道菜 40,000–70,000 VND:香茅素鸭、腐乳炖豆腐、炒空心菜。口感处理得非常考究且令人满足,绝非那种令人失望的替代品。上午 11:30 后这里很快就会坐满。

    附近的 Tran Quoc Pagoda 是河内最古老的寺庙之一,坐落在西湖边,吸引了众多信徒和游客。寺内没有餐厅,但西湖(Tay Ho)一侧的周边街道有几家“com chay”(素食米饭套餐)店,专门为寺庙访客提供快捷午餐。这些店虽然谈不上适合拍照打卡,但胜在物美价廉。

    Loving Hut 在河内有多家分店,虽然谈不上惊喜,但非常可靠。如果你在不熟悉的街区,且需要一顿价格在 60,000 VND 以下的保障性植物基餐食,这里是很好的备选。

    现代素食咖啡馆

    在过去五年里,寺庙食堂的米饭套餐与精致的西式素食餐厅之间的差距已大大缩小。

    位于西湖区(距离老城区约 4 公里)的 Vegan Life 提供你在墨尔本才会见到的那种菜单——思慕雪碗、菠萝蜜汉堡、腰果奶酪等——但使用的是当地食材。价格比“chay”食堂要高,主菜预计在 80,000–150,000 VND 之间,但环境舒适,且提供英文菜单,省去了点餐的猜测。

    位于还剑湖附近的 Chay Garden 因其精致的越南风味素食而受到外籍人士和长期旅行者的追捧:用木耳和粉丝填充的“banh cuon”、配以豆腐和新鲜香草的“goi cuon”,以及用番茄汤底和碎豆腐代替蟹膏制作的“bun rieu”。这里的 bun rieu 绝对值得点两次。

    在咖啡方面,河内的植物基咖啡馆也已基本跟上潮流。在上述大多数地方,你都可以喝到用燕麦奶制作的“ca phe sua da”,而且其中几家还提供素食版的“egg coffee”——使用鹰嘴豆水或香蕉泡沫制成——口感出奇地逼真。

    生食素食与健康导向餐厅

    生食素食(Raw Vegan)是一个较小的细分领域,但也确实存在。位于还剑区的 The Organic Garden 提供冷压果汁、配芝麻姜汁的生食沙拉以及脱水零食,同时也提供少量熟食菜单。按河内标准来看价格偏高(每项 120,000–200,000 VND),但他们对食材采购非常认真——许多餐品都标注了产地农场。

    如果你住在老城区,想要寻找快捷且健康的食物,Hang Bong 和 Hang Gai 附近的 Tadioto 街区 有几家健康意识浓厚的餐厅,彼此距离仅几百米。它们大多规模较小,虽然并非纯素食餐厅,但提供丰富的植物基选择。

    老城区精选清单

    对于住在老城区且不想走太远的旅行者:

    • Quan Chay Nang Tam — Hang Manh 街,仅限午餐,每道菜 40,000–70,000 VND

    注意事项

    鱼露出现在许多你意想不到的菜肴中,包括一些看起来是素食的菜。蚝油在炒菜中也很常见。如果你在非素食专门店用餐,最稳妥的问法是只点用酱油烹饪的豆腐或蔬菜——“dau phu xao rau, nuoc tuong thoi”——并确认汤面类的汤底是否含肉。

    如果你想体验河内最地道的佛教饮食文化,农历日期很重要:在初一和十五,即使是普通的“pho”店有时也会在当天供应素食版本。

    实用信息
