    芹苴的入睡时间比Saigon早得多,但这座城市的深夜美食自有其逻辑,而“bun mam”正是其中的核心。如果你从未尝试过,首先冲击你的是它的气味:独特、深沉,甚至带有一种极具侵略性的鱼腥味。但只要你跨过这一关,就会发现这碗汤的复杂程度远超大多数南方汤面。

    你点的到底是什么

    Bun mam 是一道典型的湄公河三角洲(Mekong Delta)菜肴,其灵魂在于“mam ca”——一种通常由黑鱼制成的发酵鱼酱。汤底加入香茅和虾酱,经过长时间的文火慢炖,发酵带来的尖锐感会逐渐柔和,转化为一种鲜美圆润的口感。配料非常丰富:粗圆米粉、五花肉片、鲜虾、鱼片、茄子块、秋葵,旁边还会配上一大把豆芽和空心菜。你需要自己把蔬菜加进滚烫的汤里,烫至微熟后一同享用。

    它的味道浓郁、咸香,并带有湄公河美食特有的微甜。有些人尝过一次便敬而远之,而另一些人则每隔一晚就要吃一次。这种截然不同的评价,正是这道菜的个性所在。

    晚上 8 点后去哪吃

    Quan Bun Mam Co Ut — 标杆之选

    这是当地人最先推荐的地方,名副其实。Co Ut 的摊位大约在下午 6 点左右出现在 Nguyen An Ninh 街靠近 Ninh Kieu 码头的地方,一直营业到卖完为止——通常在午夜左右,生意清淡时会更早。这里的汤底比平均水平颜色更深,发酵味也更浓,虽然评价两极分化,但这正是这道菜最传统风味的样子。一碗配有五花肉和鲜虾的 Bun Mam 价格在 45,000–55,000 VND 左右。座位就是人行道上的矮塑料凳。别指望有空调或英文菜单。

    Bun Mam 94 — 口味温和,营业到深夜

    如果你想尝试更温和的入门款,Phan Dinh Phung 街上的 Bun Mam 94 是更好的起点。这里的发酵鱼味依然存在,但经过了调整,变得更容易入口,汤底也稍微甜一些。他们营业到凌晨 1 点左右,是城里营业时间较晚的选择之一。价格同样在 40,000–50,000 VND 一碗。这里的茄子总是煮得恰到好处,这一点很重要——Bun Mam 里的茄子如果没煮透,口感会很糟糕。值得一提的是,他们还有很棒的“banh mi”,可以用来蘸着剩下的汤汁吃。

    Quan 79 — 夜猫子之选

    午夜之后,在芹苴(Can Tho)的选择会大幅减少。Quan 79 位于 Hai Ba Trung 夜市附近,周末营业至凌晨 2 点。这里的 Bun Mam 中规中矩,算不上顶级——汤底较清,鱼肉分量有时偏少——但在凌晨 1 点半的河滨城市,你也没什么别的选择了。每碗价格为 35,000–45,000 VND。如果 Bun Mam 卖完了,他们也提供“hu tieu”。

    几个值得了解的小贴士

    检查你的吃辣能力。 大多数摊位都会随面附上一盘新鲜辣椒和一瓶辣椒酱。这道菜本身并不辣,辣味完全取决于你。添加时请循序渐进。

    蔬菜很重要。 不要跳过那盘配菜。空心菜(rau muong)、豆芽、香蕉花和新鲜香草是大多数碗面的标配。把它们浸入汤里,蔬菜的清爽能平衡五花肉的油腻,并中和发酵的浓烈感。

    想吃得全就点“dac biet”。 大多数摊位都有普通版和特别版——“dac biet”版本包含五花肉和整只鲜虾。通常只贵 10,000–15,000 VND,如果是第一次尝试,非常值得。

    芹苴的深夜窗口比你想象的要短。 与 Saigon 不同,芹苴的大多数街头美食即使在周末,也会在午夜到凌晨 1 点之间收摊。如果你刚结束一场“bia hoi”聚会或深夜的湄公河游船,为了保险起见,请在晚上 11 点前入座。

    气味不是警告。 初次尝试的人在面端上来时往往会犹豫。但实际上,经过炖煮和调味的发酵鱼汤,其口感远比闻起来要温和得多。勇敢地喝下第一口吧——它的味道比香气要平易近人得多。

    实用信息

    以上提到的三家店均只收现金,请准备好零钱。芹苴的 Ninh Kieu 区面积不大,步行前往这些地点通常只需不到 15 分钟。如果 Bun Mam 不合你的胃口,Hai Ba Trung 沿线的芹苴夜市也有摊位供应“banh canh”和烤河鱼,营业至深夜。
