    Nha Trang(芽庄)有一种美食,大多数游客在前往海滩的路上都会与之擦肩而过,那就是“bun ca Nha Trang”。这是一种汤底清澈、口感微甜的米线,由鱼骨熬制而成,配上手工捏制的鱼饼、爽滑的海蜇丝和细圆米线。它是一种低调的食物,并不张扬,但比起那些面向游客的海鲜大排档,它更能让你了解这座城市真实的饮食文化。

    当当地人推荐这道菜时,人们最常问的问题是:什么时候去吃最好?

    早餐是最佳选择

    Bun ca Nha Trang 本质上是一道早餐。大多数专门店在早上 6:00 到 6:30 之间开门,直到卖完为止——在一些口碑好的店,通常 10:30 之前就售罄了。汤底是在前一天晚上或凌晨熬制的:将鱼骨(通常是鲭鱼或竹荚鱼)用小火慢炖,反复撇去浮沫,直到汤汁几乎透明,最后只加少许盐和一点点糖调味。当你早上 7 点坐下时,那锅汤已经熬了四五个小时。到了中午,如果还有剩余,汤底往往经过了反复加热和稀释,味道已大不如前。

    鱼饼——“cha ca”——也是每天清晨新鲜制作的。好的鱼饼是手工捶打出来的,口感微弹,吃起来有真实的鱼肉味,而不是淀粉感。它们直接在汤里烫熟,这意味着你来得越晚,剩下的完整鱼饼就越少。海蜇经过冲洗并切成细丝,带来清脆的口感,与柔软的米线形成了绝佳平衡。

    早餐时段,Phan Boi Chau 街上距离海滨几个街区的 Bun Ca Co Tuoi 是一个可靠的选择。一碗面大约 35,000–45,000 VND。在早上 7:00 到 8:30 之间到达,可以享用到最全的配料——鱼饼、海蜇,如果你想要混合口味,还可以加几片炸鱼。这家店卖完即止,周末通常在上午 10 点前就关门了。

    另一个值得推荐的地方是 Dam Market (Cho Dam) 区域沿 Phan Chau Trinh 街的一排塑料凳小摊。它们在早上 6:00 准时开张,供应味道更浓郁的版本——有些摊位会在汤里加入少许胭脂树油,使汤底呈现淡淡的金黄色,且不会改变原本的风味。这里的价格更亲民,约 30,000–35,000 VND,分量十足。

    午餐如何?

    确实有几家店会营业到午餐时间,通常是那些客流量较大或有备用汤底的店铺。但必须诚实地说:午餐时段的出品是一种妥协。汤底因为不断加水而变得不再清甜,鱼饼的供应也所剩无几。你通常会吃到更多的炸鱼块,而手工鱼饼则会减少。

    如果你只能在午餐时间前往,请尽量早一点——最好在 11:00 而不是 12:30。市中心一些供应多种菜品(米饭、米线、各种汤类)的餐厅午餐时段菜单上也会有 bun ca,但它们很少是专门做这道菜的。把这当作备选方案,而不是首选。

    晚餐:避开它

    Nha Trang 有非常丰富的夜宵文化——烤海鲜、“banh mi”、深夜摊位的“bun bo Hue”——但 bun ca 并不在其中。在正宗的店铺里,这道菜根本不是晚餐选项。如果你在晚上 7 点看到面向游客的餐厅菜单上有它,那说明它已经放了很久了。换点别的吃吧。

    如何享用

    这碗米线会配上一盘新鲜香草——香蕉花丝、豆芽、rau ram(越南香菜)。建议分次加入,而不是一次性全部倒进去。桌上通常会放一小碟发酵虾酱(“mam ruoc”)和新鲜辣椒。在汤里搅入极少量的 mam ruoc 可以增加风味深度,而不会破坏汤的清澈感——当地人使用时非常克制。最后挤上一瓣青柠即可。

    不要索要海鲜酱或辣椒酱包。这不是那种类型的汤面。

    实用贴士

    Nha Trang 的大多数 bun ca 店只收现金,且没有英文菜单——直接指着邻桌的碗点餐即可。每人准备 35,000–45,000 VND 就足够了,包含一杯冰茶。如果你住在 Tran Phu 的海滩带,步行 10–15 分钟或乘坐短途 xe om(摩托出租车)前往 Cho Dam 附近更好的店铺是非常值得的——绕点路绝对物有所值。
