    Bun Mam After Dark: Where to Eat Can Tho's Most Divisive Bowl

    Nha Trang(芽庄)以海滩闻名,但这座城市真正的清晨仪式,发生在距离海滨几个街区外的塑料凳小店里。“Bun ca”——以熬制的鱼骨汤为底,铺上切片的鱼饼、新鲜香草,有时还会加入海蜇的米粉汤——是当地人在游客醒来前享用的早餐。它的口味温和,非常适合孩子,价格亲民,且具有浓郁的芽庄特色,你在其他任何地方都很难吃到同样的味道。

    碗里的乾坤

    汤底是关键。与 Hue 或 Saigon 那种浓郁、重香料的汤头不同,Nha Trang 的 bun ca 汤底清澈且略带甘甜,是用白鱼骨(通常是笛鲷或鲭鱼)配上香茅和少许盐熬制而成的。碗里盛着一团细米粉,铺上 cha ca(鱼饼,有时会煎至一面金黄),再撒上一把新鲜香草:越南罗勒、豆芽和切丝的香蕉花。海蜇是可选配料,但很常见——口感爽脆,味道清淡,对于愿意尝试新鲜事物的孩子来说,这种口感对比非常有趣。旁边通常会配上一角青柠和一勺虾酱,成年人可以根据口味增加汤头的浓郁度。

    Quan Bun Ca Ba Lua

    Bun Ca Hang Duong (靠近 Cho Dam)

    Cho Dam(大市场)是芽庄主要的农贸市场,周围街道的早餐人流量非常大。Hang Duong 是一家小摊位(其实更像是一个带八张桌子的遮阳棚),位于市场西侧,靠近 Nguyen Hong Son 街拐角处。它早上 5:30 开门,大多数日子在 9:30 左右就卖光了。

    这家店的特色是海蜇——他们每天新鲜处理,几乎每一碗里都有,口感紧实,拌有淡淡的芝麻香。对于好奇心强的孩子来说,看老板组装一碗粉的过程本身就是一种乐趣。每碗 35,000 VND;额外加一份鱼饼 15,000 VND。

    Quan Bun Ca Co Thuy — Phan Boi Chau 街

    Phan Boi Chau 是一条与海滩平行的安静住宅街,当市场区域的店铺过于拥挤时,位于北段的 Co Thuy 小店是一个可靠的选择。这里的环境比 Dam Market 的摊位稍微宽敞一些——有真正的椅子、电风扇、还有放婴儿车的地方——如果你带着小孩同行,这一点很重要。

    这里的汤底比前两家店的香茅味稍微浓一点;有些人更喜欢这种风格,有些人则觉得它没那么传统。这里的鱼饼更软,接近蒸鱼饼的口感。营业时间为早上 6:00 到 10:30,价格为 45,000 VND。

    带孩子吃 Bun Ca 的小贴士

    先点原味汤底——旁边配的虾酱(mam tom)味道很冲,在餐桌上自行添加意味着你可以为孩子控制口味。豆芽和香草是生食的;如果你比较谨慎,可以在热汤里涮几秒钟。海蜇是安全的熟食;它几乎没有什么味道,孩子们通常都能接受。

    大多数 bun ca 店在早上 10:00 到 11:00 之间就会关门。这确实是地道的早餐食品。如果你中午才去想吃一碗,可能会失望。请提前规划。

    芽庄的海滨大道(Tran Phu 路)几乎没有这些店。往内陆走两到五个街区——朝 Dam Market 方向或沿着 Nguyen Thi Minh Khai 街走——价格会下降,而品质会显著提升。

    实用信息

    这三家店都只收现金;请准备好小额钞票。店里都没有英文菜单,但点餐很简单:用手指表示碗数,如果想要海蜇就指一指。将摩托车停在人行道上是当地常态。如果你住在海滩附近并想把它当作晨间散步,市场区域距离 Tran Phu 海滨大道大约 1.5 公里。
