    没有什么比“bun cha ca”更能清晰地体现越南中部沿海的饮食特色了——清澈鲜香的鱼汤,搭配圆米粉,上面铺着手工制作的鱼饼片。它并不花哨,不会去和“bun cha”里的烟熏猪油味竞争,也不像bun bo hue那样带有后劲十足的辛辣。它所呈现的是纯粹的海味。在那些以这道菜为傲的城市——Da Nang、Nha Trang(芽庄)和 Phan Thiet,当地人早餐时会像习惯呼吸一样享用它,因为他们从小就知道一碗好的鱼饼米粉应该是什么味道。

    什么是 Bun Cha Ca

    这个名字很容易被误解。“Bun”是米粉,“Cha ca”是鱼饼——具体来说,就是将鱼肉(通常是马鲛鱼,即 ca thu,或南部的刀鱼,即 ca thac lac)剁碎,调味、塑形后,经过煎炸、蒸制或两者兼备的处理。这道汤不是咖喱,也不是柠檬草炸弹。最顶级的汤底是用鱼骨和鱼头小火慢熬两到三个小时,加入红葱头、少量番茄和虾干制成——汤色清澈但鲜味浓郁,带有一种天然的微甜,与添加糖分毫无关系。

    鱼饼本身是区分优劣的关键。好的“cha ca”要有弹性——那种只有通过手工捶打或研磨至恰当稠度的新鲜鱼肉才能带来的紧实口感。鱼饼表面应该经过煎制呈现浅褐色,绝不能是灰暗或软烂的。糟糕的 bun cha ca 一尝便知:鱼饼软烂无味,汤底喝起来就像是溶解了鱼味浓汤宝的热水。

    区域差异:三座城市,三种诠释

    Da Nang

    Da Nang(岘港)的版本是游客最常接触到的,也可以说是最精致的。这里的汤底比其他地区更清淡、更纯净。鱼饼通常由 ca thac lac(黑鱼)或 ca thu 制成,切成厚片,在一碗中同时提供煎的和蒸的两种,让你无需抉择就能享受到口感的对比。配菜非常简约:几根莳萝或葱花,一小把豆芽,再加点辣椒。配菜盘从不喧宾夺主。这一碗的核心就在于汤底和鱼饼。

    街头小店和社区店铺的价格在 30,000 到 50,000 VND 之间,分量十足。

    Nha Trang

    Nha Trang 的 bun cha ca 口味更浓郁。汤底通常会加入更多的虾干,有时还会带有一丝菠萝的清香,这种微酸微甜的特质使其独树一帜。这里的鱼饼往往油脂更丰富——马鲛鱼很常见——而且你经常会发现番茄块是直接在汤里煮的,而不是作为配菜添加。一些店会提供发酵虾酱(“mam ruoc”)作为蘸料,你可以根据口味逐渐加入。这是一碗个性更鲜明的汤,值得细细品味。

    预计一碗的价格在 35,000 到 55,000 VND 之间。

    Phan Thiet

    位于平顺省的 Phan Thiet 处于这道菜地理分布的最南端。这里的鱼通常是 ca thu tron(当地渔船捕获的混合马鲛鱼品种),鱼饼更紧实,有时会混合少量虾酱以增加深度。汤底颜色比 Da Nang 的更深——更接近琥珀色而非金色——整体风味也更浓烈。配菜更偏向南部风格:更多的新鲜香草,豆芽通常是直接浸入汤中而不是放在旁边,鱼饼则配有更辛辣的辣椒青柠蘸汁。

    一些 Phan Thiet 的店铺还会在碗里加上“cha chien”——一种比标准鱼饼片更厚、经过煎炸的鱼饼块。如果桌上没有,不妨主动询问。

    汤底是如何熬制的

    基础在于鱼骨和耐心。中部沿海的鱼贩会廉价出售鱼骨架——鱼头、脊骨、鱼领骨——一家正宗的 bun cha ca 店每天要消耗好几公斤。鱼骨先经过焯水去除血水和杂质,然后放入干净的锅中,加入冷水、虾干、红葱头和轻微烤过的姜块。没有八角,没有肉桂——那是 pho 的配料。小火慢炖,并不断撇去浮沫以保持汤底清澈。

    番茄在最后四十分钟加入:足以让汤底呈现淡淡的橙色并增加酸度,但又不至于让它变成番茄汤。最后用盐和少量的鱼露调整味道。成品应该清澈见底,表面泛着一层鱼油带来的金色光泽。

    在家庭厨房和小餐馆里,这个流程在凌晨 5 点就开始了,以确保 8 点开门营业。在认真的店铺里,汤底从不留到第二天。

    如何点餐

    走进去,坐下,说“mot to bun cha ca”(一碗 bun cha ca)。在 Da Nang 和 Nha Trang,分量通常有小份(nho)和大份(lon)之分——如果饿了请提前说明。店员可能会问你关于 cha 的需求:“cha chien”(只要煎鱼饼)、“cha hap”(蒸鱼饼)或“ca hai”(都要)。建议都要。

    桌上的蘸料——一种由发酵鱼露和辣椒制成的黄色或橙色稀酱汁——是专门为鱼饼准备的,不是加进汤里的。蘸鱼饼吃,汤则单独喝。根据个人口味添加豆芽和香草。不要把所有东西一股脑儿全搅进汤里。

    去哪里品尝经典版本

    Bun Cha Ca 109, Da Nang — 位于 Nguyen Chi Thanh 街,从早上 6:30 左右营业至售罄(通常在 10 点前)。这是一家老字号家庭店铺,汤底清澈,鱼饼弹性十足。没有英文菜单,但这没关系——指一指并支付 40,000 VND 即可。

    Bun Cha Ca Hung, Nha Trang — 靠近 Xom Moi 市场区域,这家店的酸甜味 Nha Trang 汤底非常地道。早上 7 点开始忙碌,9 点后会安静一些。提供发酵虾酱,如果没送上来,记得主动索要。

    Quan 47, Phan Thiet — 靠近 Phan Thiet 鱼市场的一家小店,当地以其混合 cha(一碗中同时包含煎饼和切片鱼饼)而闻名。汤底是这三家中最深、最浓郁的;是了解南部变体与 Da Nang 原版差异的绝佳起点。

    实用贴士

    Bun cha ca 是一道早餐和早午餐菜肴——大多数专门店在中午前就会关门,如果汤卖完了会更早。尽量避免在面向游客的餐厅点这道菜,那里的汤底很可能是用调味粉冲泡的。离渔港越远,你就越应该降低预期:这道菜最怕长途运输和不够新鲜的鱼。
