    越南的占婆(Cham)社区是该国最鲜为人知的两种饮食文化所在地——从沿海的Ninh Thuan省到湄公河边境小镇Chau Doc,你可以沿着这条路线,深入探索这一传承千年的烹饪传统。

    第1天 — 抵达Ninh Thuan的Phan Rang

    租一辆摩托车或叫一辆“xe om”(摩托车出租)度过这一天。My Nghiep和Bau Truc附近的占婆村距离Phan Rang仅10–15公里。My Nghiep以纺织闻名,Bau Truc则以陶器著称。但两地都有家庭厨师,他们会在不固定的时间售卖食物——如果可能的话,请提前一晚让你的民宿老板帮忙联系。

    这里必尝的菜肴是“thit bo ham”——一种占婆风味的炖牛肉,用香茅、南姜以及烤芝麻和干辣椒酱慢火炖制。在信仰伊斯兰教的占婆Bani社区,这道菜遵循清真传统,其风味与京族(Kinh)越南菜截然不同:口感更干香,更浓郁,且完全没有越南南部牛肉炖菜中那种甜味。搭配米饭或撕开的扁面包食用,整份价格约50,000–70,000 VND。

    第3天 — 占婆甜点与海岸风光

    Ninh Thuan的占婆甜点传统值得你花一个上午细细品味。清晨(9点前)回到Phan Rang市场,此时甜点摊位货品最全。

    寻找“che Cham”——这是一个涵盖多种甜汤的统称。最常见的版本包括椰奶中加入斑斓叶风味的糯米团,或是撒上椰丝和棕榈糖浆的绿豆羹。有一款你绝对不能错过的是“banh it den”,这是一种黑糯米团子,内含棕榈糖芯,趁热食用。口感极甜,略带粘糯,让人欲罢不能,每个仅需5,000–8,000 VND。

    下午去Ninh Chu海滩(距离Phan Rang约6公里)。与更南部的度假海滩相比,这里的海岸线平静且游客较少。从下午4点左右开始,海滨会有海鲜烧烤摊位营业——炭火烤制的新鲜鱿鱼、蛤蜊和海胆。

    第4天 — 前往Chau Doc的旅途

    这是漫长的一段路:从Phan Rang到Chau Doc大约430公里。最实际的选择是从Phan Rang汽车站乘坐卧铺巴士直达Chau Doc——不同运营商的发车时间不同,但通常有夜班车;可以查看Phuong Trang (FUTA) 或 Thanh Buoi。车程约7–9小时。

    清晨抵达Chau Doc,在河边办理入住,休息几个小时后再去觅食。Chau Doc位于柬埔寨边境,湄公河在此分流成多条水道——这里的占婆社区(Cham Chau Doc)在河边定居了几个世纪,保持着与Ninh Thuan占婆人截然不同的饮食文化,更多地受到伊斯兰习俗和丰富淡水鱼的影响。

    第5天 — Chau Doc占婆美食:鱼、扁面包与水上村落

    早上7点前从Chau Doc市场(Cho Chau Doc)开始。这里的占婆小贩售卖“banh mi Cham”——一种耐嚼、略显紧实的扁面包,在类似于坦都里烤炉的圆柱形陶炉中烘烤而成。搭配慢炖牛肉咖喱(“ca ri bo”)食用,这种咖喱比印度式咖喱更清淡,椰奶味更浓,配有新鲜香菜和辣椒片。包含面包和咖喱的完整早餐:约35,000–50,000 VND。

    Chau Doc占婆烹饪的标志性配料是“mam ca loc”——发酵黑鱼酱——它出现在从米粥到蘸酱的各种食物中。如果你在Hoi An或Hue(顺化)吃过东西,这种发酵的浓郁风味会让你感到熟悉,但占婆版本通常更稀、酸味更重,更多作为调味品而非基底使用。

    早餐后,租一条船前往Hau河上的占婆水上村落——那里聚集着许多船屋,家庭生活在水上,并在船体下方的沉没网箱中养鱼。一些住户会从自家厨房售卖简单的午餐:米饭、砂锅炖鲶鱼(“ca kho to”)和腌菜。这是一种非正式、地道的体验,价格由主人决定——通常为60,000–80,000 VND。

    傍晚回到岸上,寻找“banh bo nuong”——一种受占婆影响的蜂窝米糕,采用烘烤而非蒸制,表面有焦糖外壳,口感富有弹性。中央清真寺附近的街头小贩通常从下午3点左右开始售卖。

    实用贴士

    Ninh Thuan没有大型机场——请飞往Cam Ranh(Nha Trang),然后乘坐巴士或出租车向南行驶约60公里到达Phan Rang。如果你想延长行程,Chau Doc有便捷的船只连接Phu Quoc(约2.5小时)。占婆Bani和占婆Chau Doc社区遵守伊斯兰饮食法,因此大多数市场摊位的牛肉和扁面包菜肴默认是清真的——如果你对此有要求,这一点很有用。
