    Hue 有着全天候供应的蛤蜊料理,但“bun hen”——一种配有小篮蛤、酥脆猪皮、新鲜香草和浓郁蘸汤的细米粉——几乎只属于早晨。如果你在中午点这道菜,通常只会得到老板礼貌而抱歉的耸肩。

    什么是 Bun Hen

    如果你了解“com hen”——顺化更出名的蛤蜊拌饭——那么 bun hen 就是它更安静、口感更轻盈的兄弟。它的基底将蒸米饭换成了细米粉(与“bun bo Hue”中使用的细米粉相同),但配料基本保持不变:一小堆蛤蜊肉、切丝的香蕉花、豆芽、压碎的烤花生、酥脆的猪皮、新鲜辣椒片,以及淋上一层浓缩后变得极其鲜美且略带独特风味的蛤蜊汤。旁边还会附上一小碗烹饪原汤,供你根据口味稀释。

    这里使用的蛤蜊是产自香江 (Perfume River) 及周边水道的小篮蛤 (hen)。它们只有指甲盖大小,这意味着一整碗里有几十只。清理和蒸煮这么多蛤蜊的繁重工作,是大多数摊贩将其作为“早晨限定”的原因:准备工作从凌晨4点开始,一旦蛤蜊卖完,就真的没有了。

    早晨:唯一存在的窗口期

    关于“什么时候该点 bun hen”的诚实回答是:早上9点之前,最好在8点之前。这并非美食写作的夸张手法——这是物流现实。大多数位于 Con Hen(蛤蜊岛,通过 Thuan An 路可达,距离顺化市中心东北约4km)及其周边地区的专业 bun hen 和 com hen 摊位,营业时间大约在凌晨5:30到上午10点之间。当蛤蜊卖完,摊位就会收摊。在繁忙的周末,这种情况可能在8:30就发生了。

    岛上的主干道旁聚集着一排排塑料矮凳摊位。Quan Co Mot 是历史较悠久的摊位之一——留意岛入口附近的手绘招牌。一碗的价格约为 25,000–35,000 VND。环境并不华丽:一块防水布、几张小桌子,还有江水的声音。这正是它的精髓所在。

    如果 Con Hen 对你的行程来说太远,Vy Da 社区(穿过 Phu Xuan 大桥向东,然后沿着河岸右转)也有几个早晨摊位。Nguyen Sinh Cung 街上的 Quan Ba Do 通常在早上6点开门,蛤蜊与米粉的比例很实在——这意味着他们不会为了节省成本而减少蛤蜊的用量。

    根据地点和份量,价格预计在 25,000–40,000 VND 之间。靠近市中心或旅游区的价格会略高一些。

    为什么午餐时段很少有好的体验

    顺化市中心有少数几家 com hen 和 bun hen 摊位会营业到下午早些时候——主要集中在 Dong Ba Market 周边和 Chi Lang 街沿线。但品质的下降非常明显。在温热的汤汁中浸泡了五六个小时的蛤蜊会失去原本的嚼劲,变得软烂。酥脆的猪皮会变软,香蕉花会氧化。这道菜吃起来依然没问题,但味道已经不对了。

    错过了早晨窗口期的当地人通常会转而选择其他食物——附近摊位的一碗“banh canh”,或者等到第二天。对于游客来说,这大概也是最明智的建议。

    晚上:几乎不存在

    理论上晚上是有 bun hen 的。你偶尔会在 Pham Ngu Lao 或 Hang Me Me 街区为游客提供服务的餐厅晚间菜单上看到 com hen。蛤蜊通常是预先煮熟后重新加热的,配料感觉像是拼凑出来的,而不是新鲜的。虽然可以吃,但它在精神内核上已经是另一道菜了。如果你晚上在顺化想吃一些风味相似的食物——鲜美、汤汁浓郁、香草味十足——Nguyen Chi Thanh 街上深夜摊位的一碗 bun bo Hue 会是更好的选择。

    如何点餐

    坐下后,竖起一根手指(mot bat — 一碗)。店主会问你要不要辣 (cay)。如果你只想稍微加点辣,就说“it xiu cay”。辣椒酱和发酵虾酱 (mam ruoc) 会放在旁边——慢慢添加。吃之前把所有东西搅拌均匀;顶部的干配料应该拌入米粉中,而不是作为装饰留在上面。

    实用小贴士

    前往 Con Hen 最好的方式是骑摩托车或坐 xe om——从顺化市中心出发约15分钟车程。如果可以,尽量选择工作日前往;周末早晨会有很多当地家庭,蛤蜊卖得更快。准备好小额钞票;大多数摊位无法为超过 100,000 VND 的面额找零。
