    酸味是这道菜的灵魂——它能化解猪肉的油腻,并为整道菜定下基调。这道菜有着清晰的跨境基因;你可以在其调味风格和腊肠(lap xuong)的使用中,品尝到来自边境另一侧广西的影响。话虽如此,高平的厨师们经过几代人的改良,使其独具特色,你在街头吃到的味道,在边境两侧的任何地方都找不到完全一样的版本。

    街头摊贩通常在早上6点左右开始营业,地点位于 Xuan Truong 街附近的市场区域。一份全料的价格在 25,000–35,000 VND 之间。如果你想吃到最好的猪肉,请在早上8点前到达——摊贩们通常会很早卖完优质肉片,到上午晚些时候就开始用其他部位替代了。如果你想口味清淡些,可以要求“it chua hon”(少酸),大多数摊主都会乐意配合。

    Banh Cuon Nong —— “热”才是关键

    “Banh cuon”在越南各地都有,但高平的“nong”(热)版本值得单独一提。在河内,Banh cuon 通常是预先卷好的,端上来时往往温温的,浸泡在蘸汁里。而在高平,摊主会在沸水锅上的绷布上现蒸每一张薄米皮,用竹签熟练地一挑,填入猪肉末和木耳,趁热卷起。你吃到的每一口都是刚出锅几分钟内的成品。

    刚蒸好的米皮和放久了的米皮在口感上有显著差异——现做的版本更加丝滑、细腻,且带有一种微妙的黏性,这使得蘸汁能更好地挂在米皮上,而不是滑落。高平的蘸汁比河内(Hanoi)风格更清淡,有时会加入发酵元素,甜度也较低,这更符合米皮本身中性的味道。

    一份四到六卷的价格为 20,000–30,000 VND。寻找那些推着带有标志性布盖蒸锅的小摊,它们通常从清晨一直停在市场附近,直到上午10点左右米浆用完为止。有些摊位会在傍晚重新开张,进行第二轮售卖。

    岱依族(Tay)的饮食背景

    高平的岱依族社区——越南最大的少数民族之一,集中在东北高地——以超越这两道菜的方式塑造了当地的饮食文化。岱依族的烹饪倾向于更质朴、更浓郁的发酵风味,并大量使用当地采集的食材。Pho chua 中的酸味与岱依族更广泛的口味一致,他们将腌制和发酵食材视为风味的基石,而不仅仅是调味品。

    高平镇的市场是了解这一背景的好地方。在 Pho chua 摊位旁,你会发现售卖烟熏水牛肉、发酵竹笋罐头以及在低地市场完全见不到的野生蔬菜的摊位。这并非刻意策划的文化体验——这只是当地人购物和吃饭的地方。在周末的早晨,周边村庄的商贩们会聚集于此,那时最为热闹。

    如果你正在规划一次更广泛的东北部旅行,高平可以自然地与西部的 Ha Giang 以及东北方向约 90 公里处的板约瀑布(Ban Gioc)串联起来。随着行程推进,食物也会发生变化——Ha Giang 有其独特的荞麦和玉米文化——但东北高地共享着一种对直接、发酵、不加修饰的风味的偏好,这对于理解你所品尝的食物是一个非常有用的框架。

    高平镇距离河内公路里程约 270 公里——乘坐巴士或汽车需要6到7个小时,如果走经由北件(Bac Kan)的风景路线则需要更久。大多数 Pho chua 和 Banh cuon nong 的营业时间集中在早上6点到9点,请相应地规划你的第一个早晨。这两道菜在网上的英文资料很少,这意味着你可能需要通过指点菜品来下单,并做好尝试未知的准备——这两样都是绝对不会出错的美味。
