    Sapa 海拔约 1,500 米,其近乎冰点的溪水造就了越南其他任何地方都无法复制的奇迹:它能让三文鱼在此生长。“Ca hoi”——即在从 Fansipan 流下的冷水河道中养殖的虹鳟/三文鱼——已成为到 Sapa 旅行时绝对不能错过的美食之一。这不仅是因为别人的推荐,更因为它确实美味,且极具当地特色。

    你吃到的究竟是什么

    在 Sapa (사파 / 沙坝 / サパ) 出售的所谓 ca hoi,几乎都是虹鳟(Oncorhynchus mykiss),它们在 Muong Hoa 和 Ta Van 山谷中由冰川冷水溪流供水的混凝土水道中养殖。它并非深海三文鱼。其肉质比大西洋三文鱼更浅、脂肪含量更少、口感更清爽,更接近优质河鳟,并带有一丝矿物质风味。由于在高海拔地区养殖,生长速度较慢,肉质更加紧实。如果你曾在 Hanoi 或 Saigon 吃过 ca hoi,请忘掉那种体验。那里的供应链较长,鱼肉通常是冷冻的。而在 Sapa,鱼是当天从鱼缸直接上桌的。

    两种吃法

    火锅 (Lau Ca Hoi)

    这是最常见的吃法。你会得到一锅清汤——通常加入大量莳萝,偶尔也会用番茄打底——以及一盘切成薄片的新鲜三文鱼、蔬菜(空心菜、蘑菇、卷心菜)和米粉。汤底会在燃气炉上预先加热。你可以边吃边涮,放入鱼片和米粉。

    价格通常为每人 180,000–280,000 VND,具体取决于分量和额外添加的配菜。大多数餐厅按鱼的重量计价——标准的双人火锅通常使用约 300–400 克鱼肉。

    如何从容点餐: 走进店里,伸出手指表示人数,说 "lau ca hoi cho [人数] nguoi"([人数]人份火锅)。服务员会确认鱼的重量。点头或比划手指即可。搞定。

    生鱼片 (Ca Hoi Song)

    现在越来越多的餐厅提供 ca hoi 生鱼片——切成薄片,铺在冰块上,配以酱油、芥末酱,通常还有腌姜片。在好的餐厅,鱼是现点现杀的。新鲜度一眼可见:鱼肉应紧实,而不是半透明的灰色,边缘也不应有分离感。

    单份价格在 120,000–180,000 VND 之间。如果你想品尝鱼肉的原汁原味,建议在火锅前点一份作为前菜。

    如何点餐: "Ca hoi song mot dia" —— 一盘生三文鱼。简单明了。

    去哪里吃

    位于 Muong Hoa 路的 Nha Hang Ca Hoi Sapa(距离 Sapa 镇中心向 Ta Van 方向约 2 公里)是最可靠的选择之一。他们有从街上就能看到的活鱼缸,这是一个好迹象。营业时间约从 10:00 开始,最后点餐时间约为 20:30。周末人很多——建议在 12:00 前或 14:00 后前往,以避开旅游团高峰。

    靠近 Ta Van 山谷公路的 Quan Ca Hoi Ben Suoi 则更为简朴——塑料椅子,溪边露天座位——但鱼极其新鲜,因为养殖场就在旁边。没有英文菜单。指着鱼缸,做个吃东西的手势,比划一下人数即可。这招很管用。

    在 Sapa 镇中心,Cau May 街和 Ham Rong 周围的几家餐厅菜单上也有 ca hoi,但那里的鱼通常是冷藏而非活鱼。虽然不难吃,但体验大不相同。

    注意事项

    冷冻鱼冒充新鲜鱼。 辨别方法:鱼肉纤维松散而非切片整齐,内部呈灰白色,火锅中口感水汪汪。新鲜的 ca hoi 肉质紧实,颜色呈均匀的浅橙粉色。

    价格困惑。 有些地方按 100 克计价,有些按份计价。点餐前,问一句 "bao nhieu tien?"(多少钱?),并比划手指确认数量。在点餐前确认价格是非常正常的,并不失礼。

    “三文鱼”与“鳟鱼”的标签。 不必纠结于此。菜单上统称 ca hoi。它们是同一种在相同溪流中养殖的鱼。放心点就是了。

    从 Sapa 镇出发

    大多数较好的餐厅距离主广场 2–5 公里,位于通往 Ta Van 或 Muong Hoa 的路上。从镇上乘坐 xe om(摩托车出租车)单程费用为 30,000–50,000 VND。如果你正在进行山谷徒步或梯田远足,可以将这些餐厅作为午餐停靠点——这非常顺路。

    实用贴士

    Ca hoi 的季节理论上是全年,但在凉爽的月份(10 月至次年 3 月)品质最佳,此时溪水温度下降,鱼肉更加紧实。周六晚上的 Sapa 镇餐厅可能会非常拥挤——工作日的午餐时间会更安静,价格也通常更便宜。请携带现金;虽然少数地方有刷卡机,但山谷里的网络信号并不稳定。
