    咖啡加盐的奇妙起源

    “Ca phe muoi”——盐咖啡——诞生于旧皇城Hue,大约在20世纪90年代。故事很简单:一位当地的咖啡摊贩试图平衡廉价罗布斯塔(robusta)咖啡豆的刺鼻口感,这种咖啡豆过去(现在依然)是越南(베트남 / 越南 / ベトナム)的标准配置。罗布斯塔带有木质香气、口感干涩,如果煮得浓烈,味道会非常霸道。有人在里面加了盐。量不多——只需在杯子里捏一小撮——结果却出奇地好。钠元素抑制了舌头上的苦味受体,就像在海盐焦糖里起的作用一样,咖啡的味道突然变得更醇厚、更香甜、不再那么冲人。这种饮品在Hue扎根,并在过去的二十年里慢慢向北流传。

    如今,Hue (후에 / 顺化 / フエ) 依然是它的发源地,但你在Hanoi和Saigon也能找到它,通常是在那些由来自越南中部的人经营的小咖啡馆里。

    制作方法

    制作方法非常简单。首先准备越南滴漏壶——放在杯子上的金属phin。装入深度烘焙的罗布斯塔咖啡粉(中细研磨),加入热水(约90–95°C),让它缓慢滴漏3–5分钟。在滴漏的同时,向杯中倒入约2–3汤匙甜炼乳。等咖啡滴完后,将它们搅拌均匀。

    盐是最后加的。制作咖啡的人——或者如果你够胆量的话,也可以自己动手——直接在杯子里加入一小撮(大约1/4茶匙)盐。搅拌。品尝。大多数人尝不出盐味;他们尝到的是顺滑。苦味被抚平,炼乳的甜味变得更加圆润,尽管没有加奶油,咖啡却变得几乎像奶油般醇厚。

    做法也有一些变体。有些摊贩会把盐直接加进phin里,和咖啡粉混在一起。还有些人会先用一点点热水把盐化开。效果都是一样的。

    为什么好喝(科学原理)

    盐能阻挡苦味化合物接触你的味蕾。罗布斯塔——尤其是廉价品种——富含绿原酸和其他刺激性化合物。在不加糖的黑咖啡中,这些味道占据了主导。加入甜炼乳能掩盖一部分,但不是全部。而加入盐,就能极大地削弱对苦味的感知,让咖啡尝起来几乎像甜点一样,却又不会甜腻。

    这并非越南独有。几个世纪以来,北欧国家、埃塞俄比亚和中东部分地区都有在咖啡中加一撮盐的习惯。但越南的版本——将廉价的罗布斯塔、浓稠的炼乳和盐融合在一小杯浓烈的咖啡中——绝对是独树一帜的。

    在Hue去哪里品尝

    在Hanoi和Saigon
