    椰子咖啡最初只是Hanoi某家咖啡馆菜单上的单一饮品,在被拍摄了数百万次后,如今已遍布城中大约三分之一的咖啡馆。这究竟是一种潮流还是一种传统尚有争议,但不可否认的是,只要制作得当,这款饮品确实非常美味。

    起源

    Cong Caphe是椰子咖啡的发源地。该连锁店大约在2013-2014年间,在其位于Trieu Viet Vuong街、距离Hoan Kiem湖仅几个街区的旗舰店推出了“ca phe cot dua”(椰子咖啡)。其概念很简单:将冷冻椰奶或椰浆与浓郁的越南Robusta浓缩咖啡混合,倒入冰块中,底部铺上一层炼乳,装在罐子或玻璃杯中即可。

    Cong Caphe本身就拥有独特的风格——军绿色墙壁、战争时期的纪念品、复古的越共美学家具——因此这款饮品完美契合了品牌精心营造的怀旧感。来到Hanoi的西方游客纷纷前往那里,在斑驳的墙面前为饮品拍照并发布到网上,从而形成了一种自我强化的传播循环。到2016年,它已成为“Hanoi咖啡馆体验”的代名词,其传播效果远超传统的“ca phe sua da”。

    如今,该连锁店在Vietnam各地拥有数十家分店。Trieu Viet Vuong的那家店依然存在,且依然拥挤。

    真正的配方

    一杯正宗的椰子咖啡由三个核心部分协同作用:

    咖啡基底。 越南Robusta咖啡,萃取浓郁——通过“phin”滴漏过滤器或浓缩咖啡机制作。Robusta比Arabica更苦、咖啡因含量更高,这正是它能与椰子甜味相平衡的原因。如果咖啡不够浓,椰子咖啡喝起来就像椰子奶昔。

    椰子元素。 这是各家店产生差异的地方。Cong Caphe使用冷冻椰浆混合物——搅拌得非常顺滑,质地近乎雪酪——将其与咖啡分层或混合。廉价的仿制品直接使用罐装椰奶,质地较稀,风味平平。现在一些精品咖啡馆开始自制新鲜椰浆,口感差异非常明显。

    甜味剂。 通常是炼乳,沉在杯底。你需要自己搅拌。有些店会在椰子层中加入一小撮盐,这能中和甜腻感,非常值得一试。

    热量不低,这绝非轻食饮品。

    模仿者的问题

    在Cong Caphe证明了市场潜力后,模仿者迅速跟进。Hanoi老城区的大多数咖啡馆现在菜单上都有类似版本,通常在英文菜单中列为“coconut coffee”,价格在45,000至65,000 VND之间。其中许多味道尚可,但有些过于稀薄且甜腻,更多是依赖于呈现形式的新奇感,而非咖啡本身的品质。

    判断的关键在于咖啡本身。如果椰子奶油下面是类似稀释速溶咖啡的味道,那么再好的椰子也救不了它。询问他们是使用phin还是浓缩咖啡机——两者都可以,但这表明咖啡馆是否在认真对待这款饮品。

    去哪里喝

    Cong Caphe, Trieu Viet Vuong。 依然是标杆版本。周末请做好排队准备。价格在55,000-65,000 VND左右。罐装呈现是他们的标志;如果你想要更纯粹的味道,可以要求不要用罐子。

    Giang Cafe, Nguyen Huu Huan。 以“蛋咖啡”(“ca phe trung”)闻名,但他们的椰子版本被低估了。咖啡基底比平均水平更浓,椰子层带有一丝咸味。店面狭小紧凑,但非常值得一去。

    Loading T Cafe, Dinh Liet。 距离Hoan Kiem步行几分钟,这家店比周围大多数旅游区的邻居更认真地对待咖啡。他们的椰子咖啡使用现点现打的新鲜椰浆,口感差异显而易见。

    安静的选择。 如果你住在西湖(West Lake)附近,Dang Thai Mai沿街的几家社区咖啡馆提供扎实的椰子咖啡,且没有老城区的溢价。价格降至35,000-45,000 VND左右,你很可能会在当地人中间享用,而不是被旅游团包围。

    这真的是越南咖啡吗?

    这是一个好问题。传统的北越南咖啡文化倾向于滴漏phin,纯黑或加炼乳——那种需要滴漏十五分钟、考验耐心的纯正“越南咖啡”。“蛋咖啡”和椰子咖啡都是Hanoi的发明,但它们出现的时间相对较晚,且部分是为了迎合想要拍照打卡的游客。

    但这并不意味着它们是“伪造”的。蛋咖啡是Giang Cafe在20世纪40年代因战时物资短缺而发明的牛奶替代品——它有历史渊源。椰子咖啡的历史底蕴较浅,但其成分确实是地道的越南产物:Robusta咖啡和椰子早已融入该国的饮食文化,只是最近才以这种方式结合在一起。

    Hanoi的咖啡场景远不止这两款饮品。如果你在城里待的时间超过几天,值得在安静的地方坐下来喝一杯纯phin咖啡——也许在Long Bien Bridge附近,或者Ma May的一条小巷咖啡馆里——在加入椰子之前,先了解一下咖啡基底原本的味道。

    实用贴士

    椰子咖啡最好趁冷新鲜饮用——随着冰块融化,质地会变差,因此请在十五分钟内喝完。大多数咖啡馆全年供应,但在4月至10月期间尤为受欢迎,那时Hanoi的潮湿天气让任何冰镇饮品都显得无比明智。在旅游区咖啡馆,标准版本的预算为45,000-65,000 VND;如果你往主干道外走十分钟,价格通常在35,000 VND以下。
