    Hoi An 有几道真正属于当地的特色菜,而不仅仅是从越南中部其他地区流传过来的。Hoanh thanh——当地的炸云吞——就是其中之一。如果你因为在菜单上认不出它而错过了早餐时段,那真的值得纠正一下。

    这道菜到底是什么

    Hoi An的Hoanh thanh看起来与你在粤菜馆里吃到的煮云吞完全不同。在这里,薄薄的云吞皮被炸成一个个小巧、褶皱的金字塔形——大约瓶盖大小——然后堆在盘子里,淋上一层由虾仁碎、番茄丁和葱花熬制而成的浓郁酱汁。最后再撒上几片新鲜辣椒和香菜。

    口感的对比是这道菜的精髓:云吞皮保持着底部的酥脆,而顶部的虾仁番茄混合酱料则让整体口感变得丰富。你需要趁热快吃,以免云吞皮变软。大多数店家会随餐附上一小碗清汤或nuoc cham(鱼露蘸水),尽管炸云吞本身并不一定需要蘸料。

    这道菜可以追溯到15世纪起定居Hoi An的华人商贾(福建和广东商人),他们实际上构建了古城的商业建筑格局。“Hoanh thanh”是“云吞”一词的越南语发音。几代人以来,这道食谱吸收了当地食材:虾来自秋盆河(Thu Bon River)河口,而番茄酱则是后来(可能是殖民时期)加入的。你现在吃到的是一种真正的融合产物,既不完全是中国风味,也不完全是地道的越南风味。

    早餐时段

    这是一道早餐菜。不是早午餐,也不是全天供应——就是早餐。大多数做得好的摊位在早上6:30前就会摆好,到10:00或10:30左右就会卖光或收摊。如果你中午才晃晃悠悠地想来一盘,你会发现摊位要么已经关门,要么在卖完全不同的东西。

    一旦你身处此地,就会明白这种节奏。当地人在上班前、在游客带来的燥热感袭来之前吃Hoanh thanh,通常还会搭配一杯隔壁摊位买的ca phe sua da。古城里那些全天候在塑封菜单上列出这道菜的旅游餐厅,通常卖的都是口感较软、制作较粗糙的版本。

    去哪儿吃

    Quan Hoanh Thanh Ba Le

    Ba Le井区域,特别是Bach Dang街靠近河边的一条小巷里,聚集了一些当地人常去的早餐点。这里最稳定的Hoanh thanh摊位开在一家狭窄的店屋里,人行道上摆着塑料凳。一份大约10到12个云吞,价格在35,000到45,000 VND左右。如果你喜欢,他们也提供汤云吞,将云吞煮软在清澈的猪骨汤里,但炸云吞才是他们的招牌。

    Phuong或Tran Phu街的摊位

    沿着Tran Phu街,特别是在福建会馆(Phuc Kien Assembly Hall)和通往Nguyen Hue的交叉路口之间,你大约在早上6:00左右就能看到一些推车和折叠桌。这些摊位比较随意——没有招牌,没有英文菜单。指指旁边人正在吃的东西就行。价格通常在30,000到40,000 VND。质量因天而异,也看厨师的手艺,但好的摊位是现点现炸,能保证云吞皮的酥脆。

    Cao Lau Thanh

    这家位于Thai Phien街的店主要以“cao lau”(Hoi An的厚面条)闻名,但他们早上也会供应一盘炸Hoanh thanh。建议两样都点:cao lau吃的是烟熏炭烤猪肉,而云吞则作为配菜。大约早上6:00开门,Hoanh thanh通常9:00左右就卖完了。这里一盘的价格是40,000 VND。

    点餐前须知

    如果你从售票口进入Hoi An古城遗产区,需要支付门票(截至2024年,成人票价为120,000 VND)。里面的早餐摊位价格不包含门票——你需要在入口处单独支付。如果你就住在古城区内,则无需担心这个问题。

    这道菜默认是不辣的。如果你想吃辣,可以要求多加点辣椒——大多数摊位的桌上都有装有新鲜辣椒切片的小碟子。

    如果你在当地摊位而不是主干道的旅游餐厅用餐,两个人的炸云吞早餐加上咖啡,总费用不到150,000 VND。

    实用贴士

    一定要早去——如果你想吃到当天最好的版本,请在早上7:00前到达。Hoi An的炸云吞文化是非常地道且有时限的;它不会等待晚起的人。如果你打算在上午晚些时候再去吃mi quang或banh mi,Hoanh thanh点一盘就够了——它比看起来要顶饱得多。
