    Hue从不缺少声势浩大的名菜,但com hen却低调得很——一只小碗,几碟配料,那股辣劲在你一口一口吃下去的过程中悄悄蔓延。这道菜便宜、快手,在Dong Ba Market周边的旅游餐厅里几乎见不到踪影。正因如此,值得专程去找。

    碗里有什么

    底料是冷米饭——说白了就是隔夜饭,这本就是这道菜的精髓所在。上面铺一勺小河蚬("hen"),用猪油和鱼露快炒,断生即止,保留了浓郁的海鲜鲜味。配料松散地堆在上面:撕碎的芭蕉花、豆芽、越南香菜(rau ram)、切薄的杨桃片或青芒果提酸,碾碎的花生、芝麻米饼,还有让整道菜口感升华的关键——"banh trang nuong",炸猪皮掰碎后撒在最上面。

    旁边跟着一小碗热汤。这是煮蚬的原汁,清澈咸鲜,几圈辣椒漂浮其中。可以在最后倒入饭中,也可以单独当汤喝,具体看摊主的习惯。

    辣度这件事值得单独说一句:Hue的com hen按越南标准来说是真的辣。拌入饭里的蚬酱含有发酵虾酱("mam ruoc")和新鲜辣椒,大多数摊主调配的比例是按本地人口味来的,而非游客。如果怕辣,点餐前说"it cay"(少辣)。摊主可能会流露出一丝遗憾,但还是会照办。

    去哪里吃

    Con Hen岛

    Con Hen是com hen的发源地——香江中一条细长的沙洲,步行过Phu Cat桥,或从东岸乘3分钟渡船即可到达。岛上有几家世代经营的家庭小摊,摊主们通常使用当天早上从江里捞起的新鲜蚬,入口鲜度的差别显而易见。沿着岛西侧河岸的主路走,大约早上6点开张,卖完即止——通常10点前就售罄了。一碗15,000–20,000越南盾。

    Vy Da街区

    Vy Da是Imperial Citadel南侧的滨河居住区,Hue本地人工作日早晨吃com hen的真实去处。Le Thanh Ton街与河岸之间的一片小巷里,聚集着几家门面敞开的人家,塑料矮凳,手写招牌上写着"Com Hen — Bun Hen"。Vy Da渡口附近路口的Quan Com Hen Ba Tuoi,是居民们反复提起的名字;她从1990年代初就一直沿用同一个配方,无论你点什么,一碗统统15,000越南盾。

    早上8点前到。这是一道早餐,偶尔也当午饭吃,但卖完就没有了,不会补货。

    Bun Hen:米粉版近亲

    "Bun hen"把冷米饭换成细圆米线,其余配料——河蚬、香草、mam ruoc、猪皮——一样不少。口感更软,汤汁也更多,汤底的存在感因此更强。大多数com hen摊位两样都卖;如果两人同行,各点一份来对比是个不错的办法。米线版相对更顶饱,在年轻本地人中稍微更受欢迎。

    价格与点餐

    任何一家摊位,每碗预算15,000–25,000越南盾。两个人吃一顿完整的早餐,加上旁边推车上的ca phe sua da,总花费应该不超过70,000越南盾。这道菜没有高端版本:大多数地方的"大碗"不过是同样的食材装得稍微深一点而已。

    点餐很简单。指着旁边人的碗说"mot com hen"(一碗com hen)或"mot bun hen"(一碗bun hen)。少辣说"it cay"。想多加猪皮——而且你应该多加——说"them banh trang"通常就能让摊主明白。

    为什么它尝起来像Hue

    Com hen并不是餐厅菜被改良成了街头小吃,而是走了相反的路:从香江沙洲渔民社区的果腹之食,演变为一种城市自豪感的象征。Hue的饮食基因倾向于在小份量中追求层次复杂——这与皇家宫廷菜的精神一脉相承,只是少了那份仪式感。一碗花费不及一张公交车票的东西,却将八九种食材拼在一起,虾酱的鲜臭、青果的酸、辣椒的烈、猪皮的脆,彼此之间的平衡并非偶然。每位摊主凭经验调整这些比例,这也是为什么相邻两家摊位的口味会有明显差异。

    这也是一道值得反复光顾的菜。第一碗可能让你有些茫然——冷饭、生香草、扑面而来的辣、陌生的发酵气息。第二碗,你才开始读懂它的逻辑。

    实用提示

    大多数com hen摊位只收现金,随身备好零钱(5,000和10,000越南盾的小票)。Con Hen岛的摊位开得更早,也卖得更快——如果从市区出发,早上7点前离开住处比较保险。这道菜在任何靠谱的地方都不卖晚市。
