    Da Lat 的美食场景在各大旅游应用上早已被“写烂了”——翻来覆去都是那几家餐厅,以及那几张千篇一律的草莓果酱照片。但这座城市真正精华的美味,其实藏在那些连名字招牌都没有,更别提 Google 列表的角落里。这是一份关于这些隐秘食肆的指南:如何找到它们,寻找什么特征,以及到了之后该吃什么。

    为什么 Da Lat 有这么多“离线”美食

    Da Lat 的饮食文化深受其高地气候和当地居民生活习惯的影响。这里的许多厨师是第三代市场商贩,手艺传承自父母,而非烹饪学校。他们的摊位不需要营销,因为熟客们每天早上 6 点就会准时出现,无需提醒。由于海拔较高,这里的农产品——洋蓟、黑皮鸡、当地种植的蔬菜——与沿海地区截然不同,而掌勺的人们几十年来一直坚持着传统的烹饪方式。

    其结果就是形成了一个早于互联网存在,且完全不需要迎合互联网的饮食生态系统。

    Cho Da Lat(中央市场):早起,深入

    位于 Nguyen Thi Minh Khai 的中央市场是大多数游客购买蜜饯果脯的地方,很多人逛完这里就以为打卡结束了。那只是底层。真正的烹饪高手藏在楼上以及市场后方的外围区域,那里有一排小摊位,从早上 5:30 开始为商贩们提供早餐,直到 9 点左右准备工作结束。

    在这里寻找“banh canh”——这是一种口感筋道的粗面条汤,配有猪肉或蟹肉,盛在不配套的碗里,放在折叠桌上享用。这里通常没有菜单,直接指着旁边人吃的东西点餐即可。一碗面的价格在 25,000–35,000 VND 之间。掌勺的阿姨们通常在智能手机出现之前就已经在这里摆摊了。

    此外,留意市场东北角的“bun rieu”,它是在 Phan Dinh Phung 侧门附近的一辆小推车上售卖的。它大约在早上 6 点出现,通常 8:30 就会卖光。

    小巷厨师:解读招牌(或无招牌)

    从 Phan Dinh Phung、Nguyen Cong Tru 以及 Xuan Huong 湖后方的街道延伸出的小巷,才是 Da Lat 日常饮食生活的真实写照。这些是居民区的小巷,有人在自家门口摆上几张塑料凳,就开始向邻居们售卖食物。

    寻找特征:

    • 门口燃气灶上放着一个大锅
    • 一群当地人坐在比膝盖还低的凳子上吃饭
    • 手写的纸板招牌,或者干脆什么都没有
    • 大门上贴着写有价格的塑料袋(这在 banh mi 摊贩中很常见)

    这些地方没有固定的营业时间。如果锅里煮着东西且有人在家,那就是营业中。如果凳子叠起来了,那今天就收摊了。记得早点去,带着饥饿感去。

    该如何点餐

    如果你走过去,厨师没有立刻开始给你拿东西,说一句简单的“co gi an?”(“有什么吃的?”)比试图阅读并不存在的菜单要管用得多。这些摊位的大多数厨师会告诉你他们当天早上做了什么。你的任务就是点头答应。

    “Pho”在 Da Lat 有一种当地变体,汤底比 Hanoi 的标准版稍微甜一点,有时会在牛肉之外加入猪肉。如果路边摊挂着 Pho 的招牌,值得停下来尝尝——这座城市的版本非常有特色,即使你在其他城市吃过 Pho,也值得一试。

    Da Lat 也有着浓厚的“banh mi”文化,但当地版本通常包含自制肉酱和在沿海地区找不到的腌制山地蔬菜。最好吃的通常来自早上 6 点到 8 点在学校门口摆摊的无证早餐车。

    黑鸡(Black Chicken)难题

    Ga den——黑皮鸡——是 Da Lat 的特产,几乎不可能在网上找到带评价的店铺。它通常以整只或半只的形式售卖,烤制或水煮,主要分布在通往 Lat 和 Cu Ran 的郊区村庄。如果你愿意租一辆摩托车,沿着 723 号公路向东北方向行驶约 15 公里,你会经过路边的烧烤摊,这些摊位由在屋后养鸡的家庭经营。没有英语,没有菜单,不问价格就不知道多少钱。半只鸡配米饭的价格预计在 150,000–200,000 VND 左右。

    这是 Da Lat 美食中需要最多主动性,但回报也最丰厚的一类。

    如何应对语言障碍

    Da Lat 的大多数“离线”小店都不会有讲英语的人,但互动通常很简单。用手势指点即可。用手指比划数量也管用。越南语数字(mot, hai, ba)比你想象的更有用。如果你在吃面,说“them”表示加量,这对于加汤非常有用。

    准备好 Google 翻译的相机功能很实用,尽管你经常会发现根本没什么可拍的——菜单只存在于厨师的脑子里。

    这些地方的消费水平

    这是在 Da Lat 寻找隐秘美食的另一个理由。市场无名摊位的一碗面:25,000–40,000 VND。路边摊的一份烤肉配米饭:50,000–80,000 VND。小巷摊位的一顿丰盛早餐(含咖啡):不到 60,000 VND。这些价格都不需要讨价还价。这就是当地人支付的价格,因为当地人就是他们的顾客。

    实用提示

    Da Lat 的这些无名美食点主要在早晨营业——大多数在上午 10 点前就结束了,好的摊位甚至更早就卖光了。要在饿之前去,而不是饿了才去。寻找小巷摊位时,摩托车比出租车更有用,因为许多地方汽车无法进入。如果一家店确实非常出色且没有网络记录,不妨让它保持原样。
