    软饮和果汁——如Mirinda、7Up、瓶装水——会摆在每张桌子上,供不喝酒的人享用。在越南婚礼上,不喝酒的人群通常比你预想的要少。这些饮品并非可有可无,当祝酒环节开始升温时,它们确实是必需品。

    **"Ruou de"(米酒)**是真正硬核的部分。当新郎家属逐桌敬酒、新人来到你这一桌,或者某位年长的叔叔兴致来了时,这瓶酒就会出现。其品质参差不齐。村里自酿的“ruou”酒精度可达45-50%,且清澈透明。像Lua Moi或Nep Moi这样的商业版本则较为温和,适合不常喝烈酒的人。在农村婚礼上,自酿酒是主人家的骄傲;想要委婉拒绝需要一些技巧。

    葡萄酒——指瓶装的葡萄酿造酒——在城市婚礼中越来越常见,尤其是当家庭属于中产阶级或希望彰显某种身份时。产自Da Lat的Dalat葡萄酒是最常见的越南本土选择,有时是红葡萄酒,有时是白葡萄酒。通常其甜度较高,以至于其他国家的葡萄酒爱好者会觉得它更像葡萄汁。高档宴会上会出现进口葡萄酒,但这仍属少数。

    "Bia hoi"——这种每日新鲜酿造的生啤——通常不会出现在婚礼现场,但如果婚礼前一天有聚会或非正式午餐,它有时会露面,尤其是在Hanoi的圈子里。

    祝酒仪式

    如果说外国宾客在越南婚礼上最容易犯的错误,那就是低估了祝酒的重要性。这绝非背景噪音,而是整个活动的社交核心。

    流程通常是这样的:新人通常在双方父母的陪同下,逐桌走遍整个宴会厅。当他们来到你的桌前,会有人为你倒酒——啤酒、葡萄酒或米酒,取决于现场供应情况及桌上客人的偏好——然后进行简短的祝酒。“Tram phan tram”(100%)是你最常听到的词。它的意思是干杯,而不是小酌。

    你不需要每次都喝下一整瓶啤酒。大多数客人会通过在新人到来前少倒一些酒,或者示意只需倒少量来控制饮酒量。心意比酒量更重要。但直接拒绝,尤其是当长辈亲自敬酒时,如果没有合适的理由会很难办——比如要开车、正在服药或怀孕,这些都是被接受且不会冒犯他人的理由。

    与长辈共饮

    在任何越南婚礼上,最重要的饮酒时刻不是与新人,而是与主桌的长辈们。如果你与主人家有任何关系,请做好准备,你可能会被带到那些桌子前,或者长辈们会来到你的桌前。

    长辈先喝。在他们举杯之前,你不能先举杯;除非他们示意,否则你不能比他们先喝完。碰杯时,将你的酒杯位置放得略低于对方——这是越南饮酒礼仪中表示尊重的一种方式,而不仅仅是婚礼习俗。如果是一位长辈向你敬酒,双手持杯接收倒酒并碰杯是正确的做法。

    与长辈喝米酒时,真正的社交压力就来了。“Uong di, uong di”(喝,喝)的声音会伴随着任何犹豫。一个有效的化解方法是:在米酒瓶到达你座位之前,先往杯子里倒满啤酒。既然你已经在喝了,敬酒的轮次就会跳过你。

    关于节奏的几点实用建议

    越南婚宴通常持续两到三个小时,但食物吃完并不代表饮酒结束。如果主人家慷慨或宾客活跃,桌上的米酒可能会一直流转到最后一道菜之后。记得吃东西——banh cuon、红烧肉、整条鱼——它们摆在那里是有原因的。根据进食的节奏来控制饮酒,而不是跟着祝酒的节奏。

    还有一点:在许多婚礼上,特别是在农村地区或小城镇,宾客除了红包外,还会自带烈酒作为礼物。如果宴席中途桌上出现一瓶Johnnie Walker Red,请不要感到惊讶。它会像其他酒一样进入轮流敬酒的行列。

    实用须知

    如果你作为外国宾客参加婚礼,真诚地参与祝酒——即使只是小酌一口,哪怕杯子里装的是软饮——也会比出于谨慎而滴酒不沾更受人关注和赞赏。越南婚礼的待客之道,既体现在盘中,也体现在杯中。放松心情,让主人为你倒酒,并在该举杯时大方举杯。
