    在热带岛屿的路边摊吃生鱼,听起来要么是一段精彩的经历,要么是一场灾难。但“Goi ca trich”——Phu Quoc的生鲱鱼沙拉——只要你掌握了方法,通常都会是前者。

    你到底在吃什么

    Ca trich是一种在Phu Quoc周边海域捕获的小型银色鲱鱼。鱼肉被切成薄片,并用青柠汁进行短时间的腌制——虽然没有经过加热烹饪,但酸度使鱼肉变得紧实,并去除了生鱼的腥味。上桌时,它被堆放在盘子里,配有青芒果丝、烤花生、辣椒片、红葱头和一把新鲜香草(通常是越南香菜、薄荷和紫苏)。盘子旁边还有一篮米纸、一碗浓郁的椰子花生蘸酱,以及一种叫做“banh trang nuong”的干米饼,你可以将其捏碎撒在上面。

    这道菜的味道层次丰富:鲜美、肥腴、充满草本清香,同时又带有一丝甜味。你可以把它想象成一种需要自己动手组装的“塞维奇(Ceviche)沙拉”。

    去哪里吃

    对于初学者来说,最稳妥的选择是位于Duong Dong镇Tran Hung Dao街上的Ga Ca Trich Thanh Linh。这是贯穿岛屿商业中心的主干道。这是一家带顶棚的露天餐厅,环境嘈杂,灯火通明,通常在下午6点左右就座无虚席。餐桌一直摆到人行道上。留意入口处附近的活鱼缸。

    另一个当地人真正会去(而不是只推荐给游客)的选择是Quan Ca Trich Ba Lua,它隐藏在Bach Dang街的一条小巷里,距离Duong Dong夜市以东约700米。店面较小,几乎没有英文菜单,价格也稍微便宜一些。

    两家店通常都在上午10点左右开门,但最佳用餐时间是下午5点到8点,此时下午刚捕捞上岸的鱼最新鲜,且客流量大,证明厨房的食材周转很快。尽量避免在午餐时间去那些看起来空荡荡的店里点Goi ca trich——对于生鱼来说,食材的周转率至关重要。

    如何点餐

    在Thanh Linh,通常有一份带图的塑封菜单。指着“goi ca trich”并用手指比出份数即可。一份(“mot phan”)足够一个人吃,或者两个人作为前菜共享。根据份量大小,价格通常在80,000–120,000 VND之间。椰子蘸酱是自动配好的,不需要单独点。

    如果你想要捏碎用的米饼,可以说“cho them banh trang”——他们会额外送上一小叠,大约需要多付10,000–15,000 VND。

    至于饮料,这两家店的餐桌上通常都有桶装的“bia hoi”或罐装当地啤酒。一罐333或Saigon红啤非常搭配,价格在15,000–20,000 VND之间。

    包裹步骤详解

    这是初学者最容易卡壳的地方——对着一堆食材不知从何下手。请按照以下步骤操作:

    1. 将一张米纸浸入桌上的小碗温水中(有些店会省略这一步,直接提供预先软化的米纸——浸泡前请先检查)。
    2. 将米纸平铺在盘子上,等待约10秒,直到它变得柔软。
    3. 放上几片鲱鱼、少许青芒果混合料、一些香草,再撒上一小块捏碎的干米饼。
    4. 将底部向上折起,内收两侧,然后向前卷起。不需要卷得太紧——这又不是春卷比赛。
    5. 将整个春卷浸入椰子花生酱中。酱汁浓稠且略带甜味,能将所有食材的味道融合在一起。

    如果可以的话,分两口吃完。因为米纸很快就会变粘。

    需要担心生鱼的卫生问题吗?

    合理地担心是必要的,但也不必过度焦虑。Ca trich是一种生长周期短、繁殖快的小型鱼类,汞含量很低。青柠腌制确实能减少表面的细菌。Phu Quoc信誉良好的餐厅食材周转快;岛上的渔业经济意味着供应确实非常新鲜。话虽如此,如果你的肠胃敏感或处于孕期,请跳过这道菜。没人会强迫你——Duong Dong的当地啤酒和“banh mi”本身就足以让你饱餐一顿。

    对于其他人来说:风险很低,回报很高。点这道菜是像当地岛民一样用餐的最地道方式之一,而不是仅仅作为一个过客。

    实用提示

    上述两家店都在Duong Dong镇,从西海岸的大多数度假村出发,骑摩托车或打车(Grab)不到15分钟即可到达。Ba Lua只收现金;Thanh Linh在消费较高时接受刷卡。如果你还想探索Phu Quoc的其他美食,Duong Dong夜市距离Thanh Linh仅五分钟步行路程——晚餐后非常值得一逛。
