    Saigon 总是慷慨地回馈每一位饕客。花三天时间,你可以从容地探索这座城市最具特色的美食街区——在第1区品尝奠定城市声誉的经典美味,在 Cho Lon 体验大多数游客错过的越中风味融合,再到第4区感受当地人热衷的深夜烧烤与海鲜大排档。

    第1天 — 第1区经典风味

    早餐:上午9点前的 Pho 与 Banh Mi

    要么赶早,要么错过。西贡最好的 "pho" 店通常在上午过半时就会卖光汤底,而且从不为此道歉。位于 Pasteur 街的 Pho Hoa(严格来说属于第3区,但距离第1区核心地带仅5分钟路程)是公认的标杆,一大碗清澈微甜的汤底,配上牛筋、胸肉或生牛肉,价格约 70,000–90,000 VND。如果你想找更地道的街头小店,Ben Thanh 地区附近 Nguyen Trai 街上那些没有招牌的摊位通常在早上7点前就开始营业了。

    吃完 pho (쌀국수 / 越南河粉 / フォー) 后,步行十分钟去 Le Thi Rieng 街的 Huynh Hoa 买一个 "banh mi"。虽然价格不算最便宜(45,000 VND),但其面包与馅料的比例非常扎实——厚切猪肉、自制肉酱、腌萝卜丝、黄瓜,再加上足量的辣椒,足以让你吃到汗流浃背。像当地人一样站在街边吃完它吧。

    午餐:Com tam 与越南咖啡

    "Com tam"(碎米饭)是西贡人的午餐首选。Hoang Dieu 2 街上的 Com Tam Moc 值得你打车前往:烤猪排、煎蛋、蒸肉饼(bi cha)、猪皮丝,再配上一碗甜味鱼露,价格不到 60,000 VND。

    午餐后,在路边的塑料凳咖啡摊点一杯 "ca phe sua da"(炼乳冰咖啡)。这绝非什么游客仪式,而是当地人对抗酷暑的生存之道。预算 15,000–25,000 VND 即可。

    晚餐:Bun thang 与 Ben Thanh 周边

    西贡的夜生活在晚上6点左右开始升温。在 Ben Thanh Market 周边的街道漫步——不必进市场,就在外围——你可以找到各种烤串、烤玉米,以及傍晚时分忙碌的 "banh mi (반미 / 越式法包 / バインミー)" 推车。若想坐下来吃顿正餐,可以找一碗 "bun thang",这是一种源自 Hanoi 的精致米粉汤,西贡有几家店做得非常地道。它与白天的重口味饮食形成鲜明对比:清澈的鸡汤、细米粉、鸡丝、蛋皮丝和虾干,口感清爽。

    第2天 — Cho Lon 与 Ba Chieu

    早餐:Cho Lon 的点心时光

    Cho Lon 是西贡的唐人街,以第5区的 Nguyen Trai 和 Chau Van Liem 为中心,距离第1区仅需15分钟车程,这里的饮食节奏完全不同。早上8点前到达,去吃点心。天后宫(Thien Hau Temple)是地标,而美食就隐藏在它周围的街巷里。

    寻找 "hu tieu (후띠우 / 粿条 / フーティウ)" Nam Vang(金边风味米粉汤,配料有猪肉、虾和内脏,汤底是清爽的猪骨干鱿鱼汤)——这是 Cho Lon 的招牌,与第1区的版本有明显区别。价格约 50,000–70,000 VND。Hai Thuong Lan Ong 街上的批发市场摊位还出售各种干货、凉茶和腌制食品,即使不买也值得一逛。

    如果想吃点现炸的,可以去 Trieu Quang Phuc 街上的几家老字号越中餐馆点一份 "cha gio (짜조 / 炸春卷 / チャーゾー)"——酥脆的春卷包裹在新鲜生菜和香草中,蘸上 nuoc cham(鱼露蘸水)。记得点一整盘,不要只点一个。

    午餐:Ba Chieu 市场午餐

    向北前往 Binh Thanh 区的 Ba Chieu 街区(打车20分钟)。这是西贡本地人工作日午餐的聚集地。Bui Huu Nghia 街的市场里有一排密集的熟食摊,出售 "banh xeo (반세오 / 越南煎饼 / バインセオ)"——酥脆的姜黄煎饼,内馅塞满了虾、猪肉和豆芽,每个约 40,000–55,000 VND。吃的时候将其撕开,用芥菜叶和香草包裹,蘸酱食用。

    接着来一份 "goi cuon (고이꾸온 / 越南春卷 / ゴイクオン)":两到三卷新鲜米纸卷,内含虾和猪肉,配上海鲜酱花生酱。分量轻盈,正好为晚上留出胃口。

    第3天 — 第4区:蜗牛、烧烤与甜点

    晚餐:Vinh Khanh 蜗牛街

    第4区距离第1区仅需过桥步行十分钟,但入夜后仿佛进入了另一个城市。Vinh Khanh 街是重头戏:这是一条400米长的 "oc"(蜗牛和贝类)餐厅街,从下午5点左右开始在人行道上摆满塑料桌椅,一直营业到午夜之后。

    点一份香茅辣椒炒 "oc buou"(苹果螺)、清蒸或葱油烤 "so huyet"(血蚶),以及罗望子汤煮 "ngheu"(蛤蜊)。两人份的一桌盛宴——四五道菜外加啤酒——价格在 250,000–400,000 VND 之间。如果想喝生啤,可以来一杯 "bia hoi (비아호이 / 鲜啤 / ビアホイ)",或者直接从桌上的冰桶里拿一瓶 Tiger 啤酒。

    Vinh Khanh 街侧巷里的烤串摊也值得一试:烤猪大肠、槟榔叶包牛肉,以及涂满黄油和葱油的烤玉米。

    深夜:Che 与甜汤

    用完美的方式结束这趟美食之旅。在第4区,直到午夜后都能在推车和小店里买到 "Che"(越南甜汤)。一杯 che ba mau(三色甜点,包含绿豆、斑斓果冻和椰奶,铺在碎冰上)仅需 20,000–30,000 VND,这是西贡最纯粹的快乐之一。

    实用贴士

    这次行程主要依靠打车和现金支付——请准备好小额钞票(10,000–50,000 VND 面额),在第1区游客区以外的地方,不要指望有英文菜单。Cho Lon 和第4区最好的觅食时间分别是上午10点前和晚上6点后,因此请将中午的时间留给交通和休息。管理好自己的胃口,是完成这份行程所需的真正技能。
