    河内有一种习惯,能让某些食物变得像节日庆典一样隆重。“Com”(青糯米,在谷物完全成熟前收割,经捣制成扁平、有嚼劲的薄片)就是其中之一——如果你错过了这个季节,就得再等上一年。

    什么是 Com Vong

    Com 是由在谷粒尚呈乳白色和青绿色时收割的糯米制成的,通常在九月和十月。生谷粒在低温下轻轻烘烤,然后在石臼中捣碎,直到变成柔软、芳香的薄片。它带有一种青草般的、近乎甜美的香气,在越南美食中独树一帜。

    “Vong”指的是 Lang Vong(Vong 村),现已并入河内西部的纸桥区(Cau Giay district)。历史上,这里一直是高品质 Com 的产地。当地家庭几代人都在从事这项工艺,且至今仍主要依靠手工制作。捣米的过程充满力量感且富有节奏,在小作坊里,你甚至在街上就能听到那阵阵声响。

    产季大约从九月中旬持续到十月下旬,有时根据收成情况会延续到十一月初。在此期间之外,你买不到新鲜的 Com。十二月还在售卖的商贩通常提供的是陈货,一眼就能看出来——色泽暗淡,香气消散,口感变得蜡质而不再软糯。

    当地人如何享用

    主要有两种吃法。

    第一种是直接食用,简单搭配熟香蕉——特别是手指大小的“chuoi tieu”品种——以及少许椰丝或芝麻。取一小撮 Com,配上一口香蕉,这就是早餐。听起来很简单,因为确实如此。这种搭配之所以美妙,是因为香蕉的甜味中和了糯米的青草生味,而软糯的薄片与扎实的果肉在口感上形成了绝佳的平衡。

    第二种是“xoi com”:将 Com 与糯米混合蒸制,通常搭配“cha”(越南猪肉香肠)或“ruoc”(猪肉松)一起售卖。这是更管饱的版本,也是你在河内专门的“xoi”摊位上最容易找到的吃法。这是一顿正经的早餐,而不仅仅是零食。

    准备用于农历新年庆祝活动的传统越南 banh tet,用香蕉叶包裹。

    在河内哪里可以买到

    Lang Vong 地区,纸桥区 (Cau Giay District)

    最直接的方法是去源头。在 Nguyen Phong Sac 街和 Nghia Do 坊周边的巷子里,仍有小商贩在临街的房间里售卖 Com,除了手写的招牌和一叠叠荷叶包,没有其他标识。每份(标准份量,约 150–200 克)价格约为 30,000–50,000 VND。请准备现金,保持耐心,并在早上 9 点前前往——大多数摊位很快就会售罄。

    Hang Than 街,巴亭区 (Ba Dinh District)

    Hang Than 街是河内非官方的甜点和糯米小吃街。在 Com 的季节,这里有几家摊位同时售卖原味 Com 和 xoi com。靠近与 Nguyen Truong To 交汇处的摊位多年来品质一直很稳定。这里的价格略高——40,000–60,000 VND——但荷叶包得很紧实,Com 通常是当天新鲜制作的。

    Co Lan Com,Hang Bong 地区

    这是近年来在当地美食论坛上广受好评的名字。这是一家位于老城区边缘的小店,营业时间大约在早上 7 点到 10 点。他们按份售卖 Com,用两层荷叶包裹(外层干燥,内层依然翠绿芬芳)。价格约为 45,000 VND,以街头小吃标准来看并不便宜,但品质可靠。周末通常在早上 9:30 前就会售罄。

    购买时要注意什么

    好的 Com 颜色从浅绿到翠绿不等,看起来略带湿润但并不粘手。当商贩打开荷叶时,你应该能闻到那股清香——那种纯净的青草甜味是品质的标志。如果颜色看起来灰绿,或者闻起来有淡淡的酸味,说明它已经过了最佳赏味期。

    避免购买普通食品店里用塑料袋包装的预包装 Com。荷叶是保鲜方法的一部分;塑料袋会在几小时内让香气丧失殆尽。

    探索越南河内繁华的街头市场,那里有各种商品和友好的商贩。

    一件值得了解的事

    河内的 Com 季节往往与城市最舒适的天气重合——雨季末期过渡到干燥、温和的秋日。还剑湖周边的街道弥漫着烤玉米和荷花的香气,湿度下降,此时坐在矮凳上吃一小包捣制青糯米,感觉再合适不过了。这并非巧合。河内的季节性饮食文化与气候紧密结合,而 Com 就是最典型的例子之一。

    如果你也在探索河内更广泛的早餐场景——老城区早上 6 点开门的 banh cuon 摊位,或是上午时分的一杯 鸡蛋咖啡——那么在城市完全苏醒之前,把 Com 作为第一站是非常自然的选择。

    实用提示

    Com 的季节大约在 9 月 15 日到 10 月 31 日之间;建议在 10 月初前往以获得最佳品质。无论去哪家摊位,请务必在早上 9 点前到达——下午通常很难买到。预算每份 30,000–60,000 VND,具体取决于地点。
