    Tran Phu 沿街的游客餐厅固然不错。你可能已经从各种旅游网站上看到过关于它们的介绍。但他们没告诉你的是,在 Hoi An,一些最令人满足的美食价格不到 30,000 VND,而且掌勺的是一位从你出生前就开始制作这三道招牌菜的阿姨。

    这些地方不做广告。大多数店甚至连名字都没有——常客们只会说“桥头卖猪肉的那位阿姨”或“角落里的饼摊”。它们完全依靠回头客生存,而这正是你寻找美食时最可靠的质量信号。

    如何找到它们

    逛市场的边缘,而不是中心

    位于 Tran Quy Cap 的 Hoi An 中央市场早已名声在外。楼上的美食广场是游客聚集地,而真正的精华在市场外围。在清晨 6 点到 9 点之间,沿着河边的外环摊位走走。你会发现一些阿姨用一口锅现做“banh cuon”——这种蒸米卷里包着猪肉末和木耳。没有招牌,没有菜单,也没有标价。坐下来,伸出一两个手指示意份量,然后按她说的价格付钱。通常在 15,000 到 25,000 VND 之间。

    早餐时跟随摩托车

    如果一个门口停了四辆摩托车,但没有任何迹象表明这里在卖吃的,那它一定在卖吃的。在古城区北部的街道(如 Nguyen Truong To, Le Loi)上,清晨 6:30 到 8:30 之间,这种方法特别有效。敲敲门或探头看看。如果有人示意你进去,就坐下。指着旁边人正在吃的东西点餐即可。

    学习两句短语

    “Cho toi mot to”(给我一碗)和“the nay la gi?”(这是什么?)比任何地图都管用。比起指着塑封的图片点餐,当地人更乐意看到你做出真诚的尝试。

    询问你的住宿工作人员——要问得具体

    不要问“哪里有好的当地餐厅”。要问:“你们上班前都在哪里吃早餐?”或者“这附近哪家卖的“banh mi”最受当地人欢迎?”An Hoi 和 Cam Chau 地区小型民宿的工作人员通常会给你真实的答案,而不是把你推荐给他们亲戚开的餐厅。

    吃什么

    Cao lau

    Hoi An 的标志性面食——粗而有嚼劲的面条、切片猪肉、酥脆的炸饼,以及作为调味而非汤底的少量汤汁。游客区的版本味道统一,而市场边缘那些由同一双手制作了几十年的版本,拥有一种难以言表、只能亲口品尝的深度。记得仅在早餐和午餐时段寻找;大多数正宗的 cao lau 厨师中午就卖完了。

    非网红店的 Banh mi

    Phuong's 门前的队伍排得长是有原因的,但在 Hoi An 还有十几家卖 banh mi 的小摊,味道极佳且无需排队。Cam Nam 桥附近和 Nguyen Duy Hieu 沿街的摊位是不错的起点。在这里,一个好的 banh mi 应该在 15,000–25,000 VND 之间。如果卖 50,000 VND,那你又走回游客区了。

    源头的白玫瑰饺子

    “Banh bao vac”——这种半透明的虾饺因形状像花朵而被当地人称为“白玫瑰”。从技术上讲,这种饺子由一家供应 Hoi An 大部分餐厅的家族所垄断。但一些小摊贩会从同一供应商处进货,并在自家客厅的牌桌上售卖。饺子本身是一样的;区别在于你付了多少钱,以及是否有人在为你进行“表演式”的服务。

    Che 小巷甜品

    “Che”——这种甜豆和椰奶甜汤,通常由挑着担子的阿姨在傍晚时分穿梭于古城售卖,入夜后则出现在 An Hoi 岛半岛的小摊上。挑担的阿姨通常有四五种口味。指一指、点点头,每杯付 10,000–15,000 VND。这绝对是你在越南(Vietnam)用 15,000 VND 能买到的最棒的东西之一。

    预期与心态

    没有英语,甚至可能完全没有菜单。座位是齐脚踝高的塑料凳。食物会在四分钟内端上来,因为店里只有三样东西,而厨师已经做了上万次了。

    你偶尔也会踩雷——坐下来发现食物平平无奇。这很正常。但这些店的下限依然高于普通的游客餐厅,因为厨师没有营销预算,也承担不起坏口碑。

    不要在未经允许的情况下拍摄厨师。吃完后不要久坐,把位子留给需要的人。及时付钱。第二天再来,他们很可能会记得你。

    实用贴士

    准备好小额钞票——10,000 和 20,000 VND 的纸币。大多数小摊找不开 500,000 VND 的大钞。巷弄美食的最佳时间是早上 6:30 到 9:30;第二波是上午 11 点到下午 1 点的午餐时段。到了晚上,这些无名小店大多会让位于那些面向步行街游客的灯火通明的餐厅。
