    当Hue当地人想吃正宗的、没有任何游客噱头的食物时,大多数人都会推荐这家店。这是一家位于住宅巷弄中、只有两张桌子的小店。店主是一位从20世纪90年代初就开始做这行的60多岁女性,她在锅里使用猪油而不是植物油,这赋予了饼皮一种其他版本无法复制的深度风味。这里的草本植物拼盘非常丰盛:你可以吃到鱼腥草(“rau diep ca”)、紫苏、香蕉花和青杨桃片。那种苦味、酸味和草本味与油润酥脆的煎饼结合,正是banh khoai应有的感觉。

    Ba Do — 城中最好的 Nuoc Leo

    地址: 8 Nguyen Binh Khiem, Vinh Ninh Ward 营业时间: 每天 10:30–20:00 价格: 统一价 40,000 VND

    有些摊位把蘸酱当作配角,但Ba Do把它当作主角。这里的nuoc leo每天自制,使用烤花生、芝麻、发酵豆酱(“tuong hat”)和少量猪肝,使其口感近乎天鹅绒般顺滑。Banh khoai本身很扎实——酥脆度好,馅料适中——但你是为了酱汁而来的。点两三个煎饼,这样你就有足够的理由一直蘸着吃。如果你吃完了第一碗,店主会免费为你添加一小碗额外的酱汁。

    Quan Co Cam — 早餐人群的最佳选择

    如果你起得早,正在逛Hue的市场,这是早餐的首选。摊位设在An Cuu市场入口处,一直营业到面糊和馅料用完为止——通常在11:00左右。这里的煎饼比Pho Duc Chinh的标准版稍微薄一点,这使它们整体更加酥脆,而不是外脆内蒸。馅料设计得很精简:虾、豆芽、一小片猪肉。它比坐下来吃一份完整的餐点要轻便,非常适合作为早餐零食。在摊位旁的塑料桌子上站着吃即可。

    Co Ut Banh Khoai — 诚实但请避开高峰时段

    地址: 46 Nguyen Cong Tru, Phu Hoi Ward 营业时间: 每天 11:00–21:00 价格: 每个 banh khoai 40,000–50,000 VND

    Co Ut出品稳定,在Hue的banh khoai界处于中等水平。馅料很足——猪肉比虾多,有些人更喜欢这样——蘸酱也不错。问题在于12:00到13:30之间,午餐高峰意味着煎饼是在没有清理干净的锅里煎出来的。面糊会沾上旧油带来的苦味。中午之前或14:00之后去是一个不错的选择,特别是如果你住在Phu Hoi且不想过河的话。

    避雷提示: 在Thien Mu寺旅游走廊周围的几个摊位出售标有banh khoai的食物,但提供给旅游团的版本是预先煮熟并在铁板上重新加热的。口感不对——中间湿漉漉的,外皮像皮革一样——而且蘸酱通常是稀释的甜辣酱,与nuoc leo毫无关系。如果你看到一个摊位在几个相同的平底锅里同时烹饪六个煎饼并为旅游巴士服务,请直接走过去。

    为什么Hue的Banh Khoai与众不同

    Hue的banh khoai与南方的banh xeo之间的差距不仅仅在于大小。铸铁独立锅比用于banh xeo的大炒锅更集中热量,从而形成了更厚、结构更紧实的饼皮。这里的面糊中姜黄含量更高,这有助于上色并带来淡淡的泥土气息。而nuoc leo蘸酱——花生、芝麻、发酵豆酱——在风味上与南方使用的鱼露青柠蘸酱完全不同。它更浓郁、更有坚果味,也稍微厚重一些,这与较小的份量相得益彰。

    如果你对Hue处理米粉类菜肴的方式更广泛的区别感到好奇,这座城市的“banh cuon”和其他包裹类食物也遵循类似的逻辑——克制、注重技巧,以酱汁为核心,就像对待外皮一样。

    实用提示

    大多数banh khoai摊位在11:00至13:00以及17:00至19:00之间最繁忙。所有推荐地点的价格都在每个煎饼25,000至55,000 VND之间——预计吃两到三个才能吃饱。请准备小额钞票;在市场摊位上,找零100,000 VND的钞票通常是个问题。
