    Banh Xeo Muoi Xiem — 平盛郡

    Manh Quynh — 第三郡

    这是一家位于 Ba Huyen Thanh Quan 的老牌家庭店,在很多推荐榜单上并不常见,因此客流相对可控。薄饼比 46A 的巨无霸版本稍小,但馅料比例更好——每折叠处虾仁更多,且猪肉经过腌制,味道更足。如果你询问的话,他们还提供鱿鱼口味,虽然菜单上没有写。吃完后,记得配上一杯店外饮料摊的“ca phe sua da”。

    An Long — 旧邑郡

    去这家店需要骑摩托车,或者从西贡市中心(사이공 / 西贡 / サイゴン)打 GrabBike 过去,车程约 20 分钟,但对于想看看游客区之外地道美食的人来说,绝对值得。位于旧邑郡 Nguyen Van Nghi 的 An Long 除了 Banh Xeo,还向街坊邻居供应“goi cuon”和烤肉。这里的 xeo 边缘稍厚,更像是一份半折的煎蛋卷,而不是街头那种薄如纸的版本。它默认搭配发酵虾酱(mam nem)而非鱼露,这在南越吃法中更为传统。

    聚集在第一郡滨城市场(Ben Thanh Market)和 De Tham 背包客街附近的 Banh Xeo 摊位,作为快餐填饱肚子还可以,但就价格而言总是令人失望。你可能要花 100,000–130,000 VND 买到一个很可能是提前调好面糊、匆忙煎制的煎饼,配上冷冻虾和卖相不佳的香草。如果你身处第一郡且不想走远,请只去 Banh Xeo 46A,不要去附近的其他店。

    南越版本的独特之处

    大小是最明显的区别,但香草包裹的吃法才是真正的文化差异。在越南中部(베트남 / 越南 / ベトナム),Banh Xeo 通常配米纸食用。而在西贡,则是用芥菜、紫苏以及任何当季蔬菜——包裹物是菜品的一部分,而不仅仅是配料。南越的面糊基底更偏重于使用椰奶,这赋予了饼皮一种淡淡的甜味,与咸鲜的馅料形成对比。

    南越 Banh Xeo 本质上是一道晚餐或下午茶点心。大多数正经店铺最早也要到上午晚些时候才开门,而最美味的版本出自那些经过数小时使用、锅底已充分“养”好的平底锅——这意味着下午 5 点到 8 点是你去品尝的最佳时段。
