    Banh Pia — Soc Trang 的招牌糕点

    “Banh pia”是一种带有中越血统的层叠酥皮糕点,与Soc Trang省联系最为紧密。面团被压成圆饼状,填入馅料——经典款使用绿豆沙和咸蛋黄,不过榴莲口味也随处可见,且评价两极分化。咬上一口,外皮微微碎裂,内馅浓郁扎实,蛋黄的咸味中和了原本可能过于浓烈的甜味。

    在Soc Trang的Tran Hung Dao街上,面包店里售卖着刚从流水线上出炉的热乎糕点。价格约为每个8,000–15,000 VND,具体取决于馅料。榴莲口味的价格更高,而且在通风不良的小店里,味道正如你想象的那样浓郁。

    Banh pia易于携带,这就是为什么你在南部各地都能看到它被装盒并作为地区特产售卖。盒装版固然不错,但原产地刚出炉的版本更胜一筹。

    Keo Dua — Ben Tre 椰子糖

    “Keo dua”大概是三角洲最广为人知的出口甜食。Ben Tre位于Saigon(西贡)以南约85公里处,被称为“椰子之乡”,这种糖果正是当地的写照:椰奶与糖熬制,有时加入斑兰叶、麦芽糖或榴莲,然后卷起切成小方块,裹上可食用的米纸。

    在街头摊位和Ben Tre的中心市场,你可以亲眼看到制作过程——混合物被倒在平盘上,趁热手工拉伸折叠,随后以极快的速度切块,看起来轻松自如。500克一袋的价格约为40,000–60,000 VND。斑兰口味呈现淡绿色,带有淡淡的花香;原味椰子糖则是象牙色,比你预想的更有嚼劲。

    在其他地方购买包装好的keo dua时,请认准标签上的Ben Tre产地。Saigon旅游商店生产的版本通常更软、更甜,且缺乏椰子的风味。

    Banh Tet La Cam — 紫色糯米粽

    “Banh tet”是圆柱形糯米粽的南方变体,对应着Hanoi方形的“banh chung”,通常在Tet(越南春节)期间食用。“Banh tet la cam”是用la cam叶(紫叶植物)制作的版本,它将糯米染成深紫色或黑色。内馅通常是绿豆沙和肥猪肉,用香蕉叶紧紧包裹并煮上几个小时。

    la cam版本与湄公河三角洲及南部沿海部分地区有关。紫色会轻微渗入米粒,并带有一种淡淡的草本苦味,这使得它比普通的banh tet更有层次感。第二天将其切片,配上腌菜,就是一顿完整的餐食,而不仅仅是零食。

    在Can Tho的Ninh Kieu市场区域,小贩售卖的单份价格约为15,000–25,000 VND。在Tet期间,整个三角洲都弥漫着香蕉叶和煮糯米的味道。

    Che Chuoi — 香蕉椰奶布丁

    “Che”是越南甜汤和布丁的总称,由于得天独厚的物产,三角洲地区的品种比全国任何地方都要多。“Che chuoi”——香蕉椰奶——是最容易入门的选择。

    暹罗香蕉(chuoi su)切片后在加糖的椰奶中炖煮,加入木薯珍珠增稠,最后淋上一层咸椰浆。这层咸味并非可有可无——它正是这道菜的点睛之笔。街头摊位售卖的热乎版本,每碗或每杯价格为10,000–20,000 VND。

    变体数不胜数:che chuoi nuong(炭火烤香蕉椰奶)、加入菠萝蜜的版本、用芋头增稠的版本等。在Can Tho的水上市场区域和Ninh Kieu滨水区,che摊位从上午一直营业到晚上。规则很简单:去排队最长的摊位买就对了。

    其他值得注意的美味

    三角洲的零食景观远不止这四种。“Banh bo”——一种看起来像蜂窝横截面的海绵状发酵米糕——在Vinh Long和Tien Giang通常直接食用或蘸椰浆食用。干果和蜜饯(me dam、罗望子皮、芒果干)在每个市场都堆成小山,价格几乎可以忽略不计。“Com ruou”——带有淡淡酒香的发酵糯米球——是一种值得一试的奇特小吃,通常由菜市场里的老商贩售卖。

    这些零食都不需要去餐厅。它们是市场里的食物、路边的食物、轮渡码头的食物。三角洲的生活节奏足够缓慢,坐在塑料凳上看着运河吃零食本身就是一种完整的休闲活动。

    实用提示

    Ben Tre、Soc Trang、Can Tho和Vinh Long是这四种甜点最集中、最正宗的四个省份。如果你路过Can Tho,Ninh Kieu夜市和主菜市场内的室内区域几乎涵盖了所有这些美味。包装好的keo dua和banh pia是很好的伴手礼——它们无需冷藏即可保存一周以上。
