    Saigon 的“oc”场景——那种在夜幕降临后占据城市小巷的啤酒、贝类和塑料凳的庞大文化——是少数几种几乎适用于任何预算的餐饮仪式之一。60,000 VND 一盘的螺蛳和 400,000 VND 一盘的螺蛳之间的差距是真实存在的,但这并不总是关乎品质,而是关乎用餐环境。

    你在吃什么

    任何一家 oc 摊位的菜单涵盖的内容大致相同:海螺(oc huong, oc len, oc mo)、血蚶(so huyet)、蛤蜊(ngheu)、扇贝(so diep)和虾蛄(bong chem chep)。最重要的做法是:葱油烤、香茅蒸、罗望子酱炒,或者目前最受大众欢迎的——蒜蓉黄油焗。沙爹口味的更辛辣,搭配冰啤酒更佳。在平价摊位,你可以找到“bia hoi”,在中端餐厅有 Saigon Lager 或 Tiger 啤酒,而在奢华餐厅则有精酿罐装啤酒。

    平价档:每盘 50,000–120,000 VND

    第四郡是这一文化的核心地带。Xom Chieu 市场周围的小巷群——特别是 Vinh Khanh 街路段——是当地人在不想考虑账单时的首选去处。这里的摊位通常在下午 5 点左右开张,一直营业到凌晨 1 点或 2 点。塑料桌椅摆在人行道上,灯光是惨白的荧光灯,没人会在意环境。

    一盘香茅蒸 so huyet(血蚶)的价格在 50,000–70,000 VND 之间。蒜蓉黄油烤 oc huong 的价格为 80,000–100,000 VND,分量十足。Bong chem chep(虾蛄)按大小和季节定价,通常为 90,000–120,000 VND。加一瓶 Saigon Do(红标)啤酒(15,000 VND),人均不到 200,000 VND 就能吃得很好。

    代价是:你需要用别针和弯成钩状的铁丝自己挑出贝肉,蘸料装在不配套的小碟子里,而且罗望子酱往往糖多于酸。这并不是抱怨——这只是这种用餐形式的特色。

    去哪里吃: 第四郡 Vinh Khanh 街。任何一家人多的摊位都可以;没有哪一家是绝对的佼佼者,因为菜单几乎一模一样,竞争保证了品质的稳定。

    中端档:每盘 150,000–250,000 VND

    走进一家正规的店面餐厅,你会得到更卫生的准备工作、更稳定的调味,以及最关键的——可以在有风扇或空调的室内用餐。这里的贝类采购有时更好;扇贝上桌时带有完整的籽,oc mo(苹果螺)更大、肉更多。

    Oc Dao 是一家小型连锁店,在平盛郡的 Dinh Tien Hoang 街有一家分店,是这一档次的可靠代表。葱油炸葱烤扇贝(so diep nuong mo hanh)出品的味道经过校准,而非随意发挥。每盘价格在 150,000–220,000 VND 之间。他们做的罗望子炒蛤蜊(ngheu xao me)也很不错,价格在 130,000 VND 左右。

    你支付的是环境和可靠性。这是否重要,取决于你是为了氛围还是为了舒适来到 Saigon。

    奢华档:每盘 280,000–500,000+ VND

    第一郡、第三郡和富润郡的一些餐厅已将 oc 提升到了接近精品餐厅的概念。位于第三郡 Nguyen Thi Minh Khai 街的 Oc Oanh 常被视为标杆。店堂更明亮,菜单更丰富,厨房处理高端进口食材:新西兰蛤蜊、特大扇贝、虎虾,以及标准的越南贝类。

    这里的蒜蓉黄油做法明显比第四郡的版本更克制——甜味较少,鲜味更浓。烤扇贝(so diep nuong)的价格为 280,000–320,000 VND。一盘整只烤龙虾的价格根据重量可能会超过 500,000 VND。虽然形式依然随意——你仍然需要用手——但如果你点对了菜,执行力上的差距是显而易见的。

    即使在这个价位,你得到的也不会是塑料凳摊位无法复制的味道。用别针从罗望子酱中挑出的 oc len(泥螺),在第四郡吃起来和在铺着桌布的地方吃起来味道是一样的。

    盘中盛放的美味熟海螺,配有蘸料,是亚洲海鲜料理的理想选择。

    如何选择档次

    如果你在 Saigon 待上一周且从未尝试过 oc,先去吃平价的——周四或周五晚上的 Vinh Khanh 街,那里的活力最强。当你想要一张安静的桌子和更丰富的菜单时,中端档位很合适。奢华档位适合招待客人,或者当你想要小巷摊位不供应的高端贝类时。

    60,000 VND 一盘的食物并不差,它只是更喧闹而已。

    实用贴士

    大多数 oc 摊位只收现金;请准备小额钞票。第四郡的 Vinh Khanh 街距离第一郡中心约 10–15 分钟的 Grab 车程,费用大约在 30,000–45,000 VND。如果你对生贝类感到不适,请坚持选择烤制和罗望子口味的——高温烹饪足以杀菌。
