    Mi quang作为一道菜肴起源于Quang Nam省,而Da Nang正好处于这种饮食文化的边缘。田鸡变体——“mi quang ech”——并非在该地区随处可见,但Da Nang悄然形成了一批专门店。当地风格倾向于比你在Hoi An吃到的版本更干一些,汤汁较少(更像是一种包裹在面条上的浓稠酱汁),芝麻米饼放得更多,而且田鸡腿是单独裹粉油炸,而不是在汤里炖煮。你要趁热吃掉酥脆的表皮。一旦放久了,口感就会大打折扣。

    Quan Mi Quang Ech Ba Duc

    地址: 74 Nguyen Chi Thanh, Hai Chau District 营业时间: 6:30 AM – 11:30 AM(通常10点前就卖光了) 价格: 每碗45,000–55,000 VND

    这是当地人首推的地方,理由很充分。Ba Duc经营这个摊位已经超过十年了。汤底是用猪骨和姜黄根(不是姜黄粉)熬制的,这使得它的颜色比城里那些面向游客的店看起来更自然、没那么刺眼的黄。田鸡腿在油炸前会用香茅和鱼露腌制,面糊也很轻薄。如果你想有更多配料可选,请在上午9点前到达。

    Quan Co Lan

    地址: 23 Hoang Dieu, Hai Chau District 营业时间: 7:00 AM – 1:00 PM 价格: 50,000–60,000 VND

    Co Lan的面比Ba Duc的稍微浓郁一些——面条上裹的花生油更多,新鲜香草(罗勒、香蕉花、刺芹)给得也更慷慨。这里的田鸡腿更大,显然选材更好,而且是现点现炸,所以坐下后通常需要等两分钟。非常值得。旁边配的米饼(banh trang nuong)是自家制的,而不是那种包装好的。

    Mi Quang Ech 63

    地址: 63 Le Dinh Duong, Thanh Khe District 营业时间: 5:30 AM – 10:30 AM 价格: 40,000–50,000 VND

    这是清单上最便宜的一家,也是最稳定的一家。这是一个小型路边摊——四张塑料桌,一个锅,一个油炸锅。店主多年来只专注于这一件事。汤底清淡但香气四溢,姜黄的色泽比其他地方更鲜艳。分量稍微小一点,如果你计划在城里进行一整天的美食之旅,这正好合适。

    Tiem Mi Quang Thanh Huong

    地址: 108 Phan Chau Trinh, Hai Chau District 营业时间: 6:00 AM – 12:00 PM 价格: 55,000–70,000 VND

    环境比路边摊稍微讲究一些——有正式的椅子,墙上有菜单,还会自动送上冰茶。这里的田鸡有时会以两种方式出现在同一碗里:一只炸得酥脆,一只在汤里炖煮。味道出奇地好。如果你带的朋友对吃田鸡心存疑虑,这里是最好的选择,部分原因是摆盘看起来不那么“生猛”,而且炖煮的版本味道更温和。别点他们的“特制”版(加了鹌鹑蛋),那会破坏整碗面的味道。

    Quan Anh Hung (Da Nang火车站区域)

    地址: 12 Hai Phong, Thanh Khe District 营业时间: 6:00 AM – 11:00 AM 价格: 45,000–55,000 VND

    如果你是坐火车抵达或离开,想在附近吃顿正餐而不是火车站的快餐,这里很方便。出品扎实——没什么花哨的,但汤底很有深度,田鸡炸完后沥油很彻底,所以不会在碗里变得油腻。这里的香草非常新鲜。只有周末才供应田鸡版;工作日有时会用鸡肉代替。

    避雷指南

    Bach Dang河岸边有一排Mi Quang店,开始在面向游客的英文菜单上提供“mi quang ech”。其中大多数店的田鸡都是提前炸好批量加热的,这意味着你吃到的是浸泡在汤里二十分钟、已经变软的田鸡腿。价格通常在80,000–100,000 VND,大约是往内陆走十分钟就能吃到更好的一碗面的两倍价格。把河岸留给吃完饭后的ca phe sua da吧。

    实用小贴士

    Da Nang(岘港)所有好的Mi Quang Ech店都是早餐和上午营业——别指望晚餐能吃到。大多数店只收现金,所以请准备好小额钞票(10,000–50,000 VND面额)。如果你正在规划更广泛的越南中部美食行程,Da Nang很适合与Hoi An一日游结合起来,那里的Mi Quang传统有着自己独特的风味,非常值得对比。
