    Vietnamese Cooking Ingredients Worth Bringing Home

    Da Nang 与“mi quang”(一种浇着少量姜黄黄色肉汤的宽米粉料理)之间有着独特的情缘,而其中的青蛙版本——mi quang ech,正是区分当地常客与游客的标志。它很少出现在英文旅游指南中,部分原因是它在早上9点前就卖完了。

    Mi Quang Ech 有何不同

    标准的 mi quang(广南面)——你在岘港和 Hoi An 各处都能见到的那种——通常配有猪排、虾或鹌鹑蛋,堆叠在厚实的宽米粉上。肉汤更像是一种浓缩的调味汁:通常只有三四勺,刚好能裹住面条而不会让其浸泡在汤中。

    青蛙版本(ech)保留了所有结构,但完全替换了蛋白质。整只蛙腿——有时切开,有时保持完整——经过轻微挂糊并炸至外皮酥脆,然后在上桌前铺在面条上。底部的姜黄肉汤会吸收青蛙带来的淡淡野味,这听起来可能让人望而却步,但其原理与优质的油封鸭(duck confit)一样:通过顶部的香草来平衡肉质的浓郁感。

    标准配菜依然适用:切碎的香蕉花、新鲜香草、掰成两半并捏碎撒在上面的 bánh tráng(芝麻米饼),以及旁边的一瓣青柠。米饼是必不可少的,一定要立刻拌入面中。

    岘港寻味指南

    Quan Mi Quang Ech, Nguyen Chi Thanh

    当地人最推荐的一家店是位于 Nguyen Chi Thanh 街的一家低调小店,位置大约在 Hung Vuong 十字路口和 Tran Phu 桥引桥之间。店面没有醒目的招牌——找一块用黄色字母手写着 Mi Quang Ech 的木板,以及摆在人行道上的塑料凳子即可。

    他们大约在 早上6:00开门,卖完即止,这意味着工作日通常在早上8:30前就会售罄。周末的话,如果8点以后才到,那就得碰运气了。

    一碗标准份的价格在 40,000–50,000 VND 之间。你可以再加一份蛙腿(them ech),价格为20,000–25,000 VND,如果你是分享食用,或者第一碗让你意犹未尽,这绝对值得加。

    Cho Con 市场区域

    位于 Ong Ich Khiem 的 Cho Con(Con市场)周边聚集了许多早间面摊,其中至少有两家会根据青蛙的供应情况,将 mi quang ech 加入每日菜单。这些摊位不太固定——有时写在牌子上,有时没有——但早上6:30市场那种充满活力的氛围,无论如何都值得一逛。记得在市场入口处的推车摊位买一杯“ca phe sua da”搭配享用。

    如何享用

    端上来的面已经组装完毕:底部是面条,浇上肉汤,上面铺着蛙腿,撒上香草。你的任务是:

    1. 立即将芝麻米饼捏碎拌入,以免它们在热腾腾的面碗旁变软。
    2. 将青柠汁挤在蛙腿上,而不仅仅是挤在汤里。
    3. 如果桌上有小碟辣椒,加一点进去——青蛙肉比猪肉更适合搭配辣味。
    4. 将所有食材搅拌均匀后食用。Mi quang 不讲究细嚼慢咽。

    当地人有时会加一勺桌上提供的发酵虾酱(mam tom)。这是一个大胆的尝试,建议先试一点点。

    时间与交通建议

    岘港的 mi quang ech 市场有着严格的早间营业窗口。如果你住在 My Khe 海滩附近——距离 Nguyen Chi Thanh 大约3–4公里——乘坐 Xanh SM 或 Grab 摩托车单程费用约为 25,000–35,000 VND,这比在高峰时段沿着海滩路步行要快得多。

    几乎所有专门店在中午时分都已售罄。虽然岘港有一些全天营业的 mi quang 餐厅常年提供此选项,但只做这一道菜的早间摊位与提供十二种菜单的全天餐厅相比,品质差异非常显著。

    青蛙的供应量也会随季节波动——大约在3月到10月期间供应最为稳定。在11月和12月凉爽潮湿的月份,你可能会发现 ech 选项从菜单上消失,被标准的猪肉虾仁版所取代。

    实用贴士

    请准备小额现金;这些摊贩都不支持二维码支付。如果你的越南语有限,指指旁边人点的东西就行——通常店里只卖这一样。预算准备 70,000–80,000 VND 就足够涵盖一碗面、一份额外蛙腿以及附近摊位的一杯咖啡。
