    “Nem lui”是将猪肉糜包裹在柠檬草茎上烤制而成,配以花生海鲜酱,以及一叠米纸、新鲜香草和腌菜,供你在餐桌上自行包裹食用。它与Hue有着深厚的渊源——那里的猪肉质地更细腻、口感更甜——但Da Nang有自己的版本:肉质更粗犷,焦香味更浓,甜度略低,而且价格也相当亲民。

    如果你曾走进一家Nem lui店,看着周围食客熟练的操作而感到茫然,那么这篇文章就是为你准备的。

    你到底在吃什么

    每一串肉串都是一根粗如拇指的调味猪肉泥,包裹在干燥的柠檬草茎上。柠檬草茎是不能吃的——它只是手柄。猪肉在炭火上烤至边缘焦黑,中心依然保持鲜嫩。

    随餐附带的配料包括:

    • Banh trang(薄圆米纸,通常是干的,而非新鲜的)
    • Rau song(一盘生菜、紫苏、薄荷,有时还有切片的杨桃或青香蕉)
    • Do chua(腌胡萝卜丝和白萝卜丝)
    • Nuoc leo——花生蘸酱。这是灵魂所在。在Da Nang,它通常比Hue的版本更浓稠,发酵味较淡,加入了花生碎、海鲜酱,有时还会加一点柠檬草。

    如何点餐

    Da Nang的大多数Nem lui店经营方式都差不多。坐下后,店员会端上水并询问你要几串。标准的点单量是每人5串或10串——你可以说 nam cai(5串)或 muoi cai(10串)。他们会自动端上配菜。

    价格通常为5串25,000–35,000 VND,通常包含包裹用的配料。如果你的肉串点得不够,有些店会收取少量费用(5,000–10,000 VND)作为米纸和香草的附加费——这会显示在账单上。不必担心;两人吃一顿饱饭的总价很少超过150,000 VND。

    如果你需要额外的Nuoc leo,只需说 them nuoc leo 并指一下酱料即可。

    包裹步骤详解

    这是新手最容易感到手足无措的地方。看着隔壁桌的人动作娴熟,你只需要记住以下几点:

    1. 如果米纸是干的,先在桌上的温水碗里稍微蘸一下。如果是软的,直接跳过这一步。
    2. 将米纸平铺。先放一片生菜——这可以防止猪肉戳破米纸。
    3. 用手指将猪肉从柠檬草茎上取下,或者直接用茎把肉推到米纸上。
    4. 加入几片香草、一些Do chua,如果你喜欢那种涩味,可以加一片青香蕉。
    5. 卷起来——不要太紧,也不要太松。蘸上花生酱即可享用。

    就是这样。没人会盯着你看,怎么顺手怎么卷就好。

    Da Nang去哪吃

    Quan Nem Lui Ba Duong

    这是标杆店。它在Hoang Dieu街靠近Han河的地方经营多年,午餐时段挤满了当地人,他们完全不在意游客,这种氛围非常好。营业时间大致为10:00–14:00和16:30–21:00。肉串每串6,000 VND,所以点10串加饮料大约每人80,000–100,000 VND。这里的Nuoc leo偏咸鲜,带有一丝柠檬草香。

    Nem Lui Co Tram — Tran Phu街

    由于靠近海滩酒店区,游客较多,但食物品质很稳定。适合独自旅行者,因为店员习惯了单人用餐,即使你不问,他们也会教你怎么包裹。大多数日子营业时间为11:00–21:00。价格稍高——5串约35,000 VND——但香草盘给得更慷慨。

    市场选择

    如果你已经在Han市场(Cho Han),楼上的美食区有几个摊位提供Nem lui以及其他越南中部菜肴。这是食堂风格,如果你不想自己动手,他们有时会帮你预先卷好。适合作为快速小吃,而不是正式用餐。

    几点小贴士

    午餐或晚餐,不是早餐。 Nem lui在Da Nang是午餐和晚餐的选择。午餐营业的店通常在14:00–16:00休息,晚餐时段再开门。

    柠檬草茎不可食用。 咬一口你就知道了,但还是值得提一下。

    它与bia hoi或冰镇333啤酒是绝配。 大多数Nem lui店都卖啤酒。在Da Nang炎热的午后,坐在路边的Nem lui摊位来上一杯bia hoi,是这座城市平淡却美好的瞬间之一。

    它与nem chua不同。 “Nem chua”是发酵生猪肉——完全是另一回事,冷食,且口味独特。如果有人给你端上nem chua,那不是你点的东西。

    实用信息

    Da Nang的Nem lui店很少有英文菜单;只需伸出手指表示你想要的数量,剩下的交给店员即可。大多数当地小店只收现金——请准备好小额钞票。预算每人80,000–150,000 VND即可享用一顿丰盛的餐点及饮料。
