    Phu Quoc的鱼露拥有欧盟的地理标志认证——与香槟或帕尔马干酪属于同一类别。这一点至关重要,因为越南超市里大多数标有“nuoc mam”的瓶装产品都是工业勾兑品,而非在岛上铁木桶中陈酿的正宗货。如果你来到这里却错过了鱼露工厂,那你就白来了。

    它有何不同

    “Nuoc mam”是越南饮食的基石——一种几乎用于该国所有咸味菜肴的发酵凤尾鱼酱。Phu Quoc(富国岛)的产地认证要求鱼类必须在岛屿周边海域捕获,并必须在岛上的木桶中发酵至少十二个月,通常时间更长。其成品蛋白质含量超过30度(以氮含量衡量),色泽呈深琥珀色,且没有量产版本中那种刺鼻的氨水味。它的口感更圆润,咸味悠长,而非突兀。

    上午——先去工厂

    参观鱼露工厂的最佳时间是10:00之前。生产设施沿Duong Dong西北郊区分布,集中在Nguyen Van Cu沿线及Cau Sau桥附近的道路上。位于58 Nguyen Van Cu的Khai Hoan工厂是交通较便利的一家——他们允许游客无需预约即可在木桶间穿行,如果询问,工作人员通常会倒出一小杯供你品尝。无需门票。这里的木桶每桶可容纳多达十吨的鱼和盐,在波纹铁皮屋顶下成排堆放。气味浓郁但并不令人反感,适应后会发现那是比腐烂味更浓郁的鲜味(umami)。

    上午去有两个原因:天气较凉爽,发酵气味没那么强烈;且工厂工人正在作业,这意味着你可以亲眼看到提取过程——桶底的水龙头打开,深色的液体汇入测量容器中。到了中午,高温会使大部分活动转入室内。

    如果你想直接购买,请携带现金。在工厂门口,一瓶500ml的头道(first-press)、40度nuoc mam售价在80,000–120,000 VND之间,具体取决于品牌和氮含量等级。同样的商品在Duong Dong的旅游商店里价格要高出30%–50%。

    午餐——鱼露在餐桌上的位置

    鱼露不是一种单独享用的体验,你需要搭配食物。午餐是nuoc mam Phu Quoc赢得声誉的时刻,因为岛上的午间主食都是围绕它构建的。

    “Goi cuon”——新鲜的米纸卷——上桌时会配上一碟蘸酱,如果餐厅采购的是当地产品,那便是用nuoc mam加青柠、大蒜和辣椒稀释而成的。夜市区域附近的Quan Oc Phu Quoc做得非常地道。一份四卷的春卷配蘸酱价格约为45,000 VND。

    午餐时另一个值得点的搭配是烤海鲜。Tran Hung Dao沿线的任何一家海鲜餐厅都会供应整条鱼——通常是笛鲷或鲭鱼——并配有nuoc mam cham蘸酱。当蘸酱遇到焦香的鱼皮时,化学反应会彻底改变味道。点一份ca nuong(烤鱼),并特别要求使用nuoc mam Phu Quoc nhat(头道鱼露),而不是可能从大陆运来的普通瓶装鱼露。

    在Duong Dong市场附近的一些老牌面包摊位,你也能见到淋上鱼露的“Banh mi”,这是一种在尝试之前听起来很奇怪,但吃过就会爱上的组合。面包吸收鱼露的方式与吸收黄油或肉酱不同——咸味更突出,油腻感减少,味道更直接。

    晚上——跳过昂贵的瓶装鱼露,点海鲜吃

    Vo Thi Sau街的夜市从18:00左右开始,到处都是鱼露的招牌——品牌罐装、礼盒套装、装饰性瓶子。大部分作为纪念品没问题,但它们代表的是商业化的一端,而非生产工艺。这里的价格是针对游客的。

    如果你晚上想吃nuoc mam,更好的选择是坐在夜市周边那些摆着塑料凳的海鲜烧烤摊旁。蘸酱会随餐提供。一份烤扇贝配葱油——so lo nuong mo hanh——价格在60,000–80,000 VND之间,包含蘸酱。你付的不是瓶子的钱,而是餐费,而鱼露完成了它应有的使命:为这道菜画龙点睛。

    带回家购买指南

    如果你想带几瓶回家,请在上午去工厂门口购买,或者去Tran Hung Dao的Coop Mart,那里有可靠的岛产鱼露品牌,包括Thanh Ha和Khai Hoan,价格公道。查看标签上的“do dan”(氮含量度数)——35度及以上是头道品质。低于25度的通常是勾兑或二道压榨。

    真空密封的瓶子放在托运行李中很安全。不过,还是建议用衣服包裹一下。

    实用贴士: 工厂参观通常是免费且随意的——大多数设施无需预约,但十人以上的团体应提前致电。生产区位于Duong Dong镇中心以北约3 km处;从市场乘坐摩托车(xe om)单程费用约为30,000–40,000 VND。
