    大多数来到Sapa的游客,晚上往往都在翻看价格昂贵的鸡尾酒单。其实,更好的选择只需约40,000 VND,而且装在回收的塑料瓶里。

    你喝的到底是什么

    “Ruou tao meo”——有时拼写为ruou tao meo,或者在游客口中被称为苹果玫瑰果酒——是用Docynia indica树的果实酿造的。这是一种野生的苹果近亲,生长在西北高地海拔1,000米以上的地方。这种果实看起来像小海棠果,单独吃起来又酸又涩。它与山泉水和酒曲一起发酵,酿出的酒酒精度较低(通常为15–20%),色泽微浑,带有淡淡的甜味和干爽的余韵。它的味道和米酒完全不同,也不太像苹果酒。它自成一派。

    当地的苗族(H'mong)和瑶族(Dao)家庭世世代代都在酿造这种酒。过去十年里,它开始以Tao Meo Sapa等品牌进行商业化包装和销售,但真正值得一喝的酒,依然来自那些在夜市或自家前厅直接售卖的小规模生产者。

    夜幕降临后去哪找

    Sapa夜市,Ham Rong街

    夜市沿着Ham Rong街及周边巷道开设,大多数夜晚从晚上6点左右一直持续到10:30–11点。这里非常热闹,虽然部分区域商业气息较浓,但却是最容易买到靠谱的小批量Ruou tao meo的地方。寻找那些由苗族老妇人经营的摊位,她们通常卖编织品——她们的桌子后面几乎总会放着几瓶酒。这里的价格:500毫升塑料瓶装为30,000–50,000 VND,带有手工标签纸封口的密封玻璃瓶装为80,000–120,000 VND。

    不要买Cau May街纪念品摊位前摆放的大瓶商业装。那些经过了巴氏杀菌,为了出口添加了糖分,喝起来口感平淡。专门询问“ruou tu lam”(自酿酒),或者直接指着展示品之外的地方,问她们自己喝的是哪种。

    Co May餐厅,Muong Hoa街47号

    Co May是一家朴实无华的当地餐厅——铺着瓷砖的地板、荧光灯、塑料凳——营业到晚上10点左右,比起外国游客,它更受越南国内游客的欢迎。他们提供按小陶杯计量的Ruou tao meo(约15,000 VND一杯),也可以点一壶配两个杯子的分享装(50,000 VND)。点上一盘“thit lon cap nach”(散养高地猪肉,通常是烤制或用姜丝炒制),总花费不到150,000 VND。他们不会大张旗鼓地推销这种酒,坐下后直接询问即可。

    Ngu Chi Son街,靠近市场大门的下端

    在Ngu Chi Son街的一段,大约在市场入口和小停车场之间,从晚上7点左右开始,会有几位女性摆出低矮的塑料桌。她们卖烤玉米、“banh mi”(夹煎蛋)以及从公共大瓶中倒出的小杯Ruou tao meo。这是最便宜的选择——每杯10,000 VND,没有菜单,没有繁文缛节。这是一种户外站着喝的模式,而不是餐厅。请准备好零钱。如果天气寒冷或下雨,这些摊贩会收摊很早,所以11月到1月期间,晚上9:30之后就不要指望能喝到了。

    关于饮酒的几点实用建议

    Ruou tao meo的酒精度比“ruou can”(竹管米酒)要低,但在漫长的夜晚里很容易低估它的后劲。甜味掩盖了酒精的积累。两个人花一小时喝完一瓶500毫升的分享装是比较合理的量。

    不同生产者的口味差异很大——有些批次更酸,有些发酵味更浓。如果你尝了一种不喜欢,那就换一种试试;它不是标准化的工业产品。如果你想带点回家,Viet Hung或Sapa合作社等成熟生产商的玻璃瓶装版本通常更纯净、口感更稳定,尽管每瓶150,000–200,000 VND的价格是按行李托运标准定价的,而不是为了在街头直接饮用。

    Sapa的海拔在1,500–1,600米左右。在这里,酒精对人的影响比在海平面更快。这一点值得注意。

    总结

    跳过Cau May街的鸡尾酒吧。夜市和Ngu Chi Son街上的Ruou tao meo才是Sapa夜间饮酒的真正理由——这种酒与此海拔、此地区紧密相连,在越南(베트남 / 越南 / ベトナム)其他地方无法复制。带上零钱,慢慢喝,再多买一瓶带上回Hanoi的巴士。
