    “Bo la lot”——将加入香茅和五香粉调味的碎牛肉,用野生槟榔叶(洛洛叶)包裹后在炭火上炙烤——是那种吃起来非常有 Saigon 味道的菜肴。烟熏味十足,叶片带着独特的草本风味,站着吃,配上新鲜香草和一杯冰啤酒,简直完美。你不需要走太远就能找到它,但你需要知道哪些摊位才值得你花时间排队。

    你吃到的究竟是什么

    Ba Hung — Nguyen Thi Minh Khai, District 3

    店面更小、更吵闹,塑料凳几乎就摆在人行道上。Ba Hung 的叶子是从湄公河三角洲的供应商那里采购的,区别显而易见——叶子更厚,在烤架上表现更好,不会变得像纸一样干。牛肉的肥瘦比例比 Quan 94 更瘦,有些人更喜欢这种口感。这里的杨桃品质始终如一,不会像某些店那样用到未熟透、没味道的果实。仅收现金。

    Co Nam — Vinh Khanh Street, District 4

    Vinh Khanh Street, District 4 (靠近 Hoang Dieu 路口) 营业时间:下午 6 点 – 午夜 价格:每人 40,000–60,000 VND

    Vinh Khanh 是 Saigon 的海鲜街,但 Co Nam 多年来一直在这条街的拐角处默默地经营着一个小摊。环境比较简陋——只有一个烤架,一位大姐在忙活——但她烤出的烟熏味与牛肉的平衡感非常出色。这是这份名单中最便宜的选择,且品质毫不逊色。没有菜单,不会英语,直接用手势告诉她要几串就行。

    Bo La Lot Bui Thi Xuan — District 1

    197 Bui Thi Xuan, District 1 营业时间:每天上午 11 点 – 晚上 9 点 价格:每人 70,000–100,000 VND

    这是为数不多提供午餐的店,如果你白天在第一区活动,这很方便。白天的版本感觉稍微精致一些——桌子更干净,香草摆放得更整齐——但烤制使用的是燃气辅助的炭火混合烤架,一些常客认为这对叶片的焦度有影响。确实如此,风味还在,但烟熏味稍显柔和。如果你就在附近,又不想等到晚上,这里依然值得一去。

    Quan Nuong 333 — Le Van Sy, District 3

    333 Le Van Sy, District 3 营业时间:下午 4 点 – 晚上 10:30(周一休息) 价格:每人 80,000–120,000 VND

    这是名单中最贵的一家,也最注重环境——有空调,有二维码菜单,员工会说一点英语。Bo la lot 味道不错,但并不比价格只有它一半的 Ba Hung 更好。Quan Nuong 333 值得一去的原因在于它的 nem nuong,确实非常出色——肉馅更粗,焦香更足。如果你是专门为了吃烤肉拼盘,并且想坐得舒服点,这里是不错的选择。只是别指望这里的 bo la lot 能给你带来什么惊艳的味觉升华。

    避雷指南

    Bui Vien 步行街上那些面向游客的摊位通常都很令人失望。牛肉馅是提前批量做好的,吃的时候只是加热而不是现烤,香草给得很少且经常枯萎,蘸酱则是直接从商业瓶子里倒出来的。价格并没有因为品质下降而便宜多少。Bui Vien 适合喝“bia hoi”和看人来人往——但吃 bo la lot,请去别的地方。

    放在白色盘子里的诱人越南春卷,配有蘸酱,是健康饮食的完美选择。

    实用贴士

    大多数正宗的 bo la lot 店都是晚间营业;计划在晚上 6 点到 8 点之间去吃,那是烤制最火热的时候。记得带现金——每人 50,000–80,000 VND 就足以在这些中档摊位吃上一顿扎实的晚餐。如果想配点饮料,在大多数店里点一瓶冰镇的 Saigon Special 或 Tiger 啤酒只需 20,000–30,000 VND,这是最正确的选择。
