    “Banh khot”——这种小巧酥脆、顶着整只虾仁和蒸绿豆泥的椰香米饼,起源于 Vung Tau 省,在那里人们全天候都会享用它。Saigon 热情地接纳了这种美食,但质量却参差不齐:面向游客的摊位通常提供软塌塌、色泽苍白且味道平淡的版本,而真正的好店则能做出截然不同的口感——使用经过妥善保养的铸铁模具,外皮呈现出一种油润且近乎酥脆的质感,内里充满椰香,虾仁烹饪得恰到好处,绝不会出现灰暗且口感像橡胶的情况。以下是寻找地道Banh khot的去处。

    什么是好的Banh Khot

    面糊的比例是关键。地道的Banh khot使用米粉、木薯淀粉、椰奶和姜黄粉混合而成——姜黄不仅是为了上色,还能带来淡淡的泥土芬芳,而非仅仅依靠黄色食用色素。模具必须是经过妥善保养的铁盘(一种带有浅圆孔的专用铸铁盘,而非现代的不粘锅替代品),面糊必须足够稀,这样边缘才能在中心凝固前形成酥脆的蕾丝边。每一块饼上都会放上一整只虾——最好是来自南部沿海水域的新鲜虾——有时还会抹上一层薄薄的绿豆泥。

    食用时,要用芥菜、紫苏和生菜包裹,蘸上用少许椰子水或菠萝汁稀释的“nuoc cham”鱼露蘸水。这种包裹方式至关重要。那些不提供正规香草拼盘的店,显然是在偷工减料。

    Banh Khot Co Ba Vung Tau — 第3区

    这是吃遍全城的老饕们最常推荐的一家店。店名直接点出了它的渊源:店主的家族来自Vung Tau。这里的模具是真正的黑色铸铁型,椰奶味非常浓郁——不是那种若有似无的感觉,而是实实在在的香气。一盘10个的价格约为65,000–75,000 VND。香草拼盘非常丰富:有生芥菜、紫苏、香蕉花和黄瓜。

    Banh Khot 46 — Phu Nhuan区

    这是一家位于Phu Nhuan区、没有招牌的小店,在同一栋底层店面经营了十多年。店主通常在下午3点到晚上9点营业,这说明常客都是下班后才来,而不是为了午餐观光。虾仁虽然小但很新鲜,且放置的位置足够高,不会被面糊蒸熟——盖上盖子后,虾仁会带有一点点焦香。分量很实在:10个60,000 VND,15个85,000 VND。

    Quan Banh Khot O May — Go Vap区

    Go Vap区是许多Saigon工薪阶层用餐的地方,这家店非常符合该社区的氛围。这里的Banh khot比Vung Tau的标准尺寸稍小,但姜黄面糊香气十足,边缘酥脆得恰到好处。他们还提供一种在面糊中混入虾干的版本——这并非为了省事,而是一种值得尝试的地区特色。包含饮料在内,人均消费约80,000 VND。工作日下午5点后会变得非常繁忙。

    Banh Khot Goc Vu Sua — Binh Thanh区

    店名源自曾经为最初摊位遮荫的牛奶果树。现在的店面是主街旁的一个小室内空间,有嘈杂的电风扇和塑料凳。这里的亮点在于:nuoc cham蘸水是自家调制的,加入了新鲜菠萝汁,比游客店那种糖水味蘸水更有层次感。需要注意的是:绿豆泥层比大多数店都要厚,有些人很喜欢,有些人则觉得太厚重。价格公道,10个一盘仅需55,000–65,000 VND。

    Banh Khot Vung Tau 1985 — 第1区

    没错,就在第1区,这可能会让你心存疑虑——这种怀疑是有道理的。地理位置意味着更高的租金,菜单也部分迎合了游客。但烹饪本身并没有走样。店主是在Vung Tau受训的,模具也很正宗。香草拼盘是地道的,虾仁质量也不错。这里的Banh khot价格稍贵——一套约90,000–110,000 VND——但如果你住在市中心,不想跨区寻找,这是最方便的选择。只要避开周末晚餐高峰期,那时店里会挤满旅游团,出餐速度也会变慢。

    避开这家

    Ben Thanh Market 周边的Banh khot摊位——即Phan Boi Chau沿线和市场西南出口的那一簇——目标群体清一色是初次到访的游客。面糊是预先调好的,且保温时间过长,虾仁是冷冻的且小得离谱,香草拼盘送上来时已经蔫了。价格通常在120,000 VND以上,而往北三公里处同样的一盘只要60,000 VND。这算不上诈骗,只是性价比极低的“游客税”。

    总体花费

    在社区摊位,预计每盘花费55,000–90,000 VND,在市中心区域则为90,000–120,000 VND。两人的丰盛餐点——两盘Banh khot、饮料以及额外加点的香草——在游客区之外,大约只需200,000–250,000 VND。

    实用提示

    Banh khot几乎总是从上午晚些时候到晚上的菜品——除了第3区的Co Ba Vung Tau,别指望这些摊位在早上7点开门。如果你计划进行更广泛的南部美食之旅,Banh khot可以自然地搭配早晨的“banh xeo”或一碗“hu tieu”。Vung Tau本身——距离Saigon东南约120公里——如果你想在原产地了解这道菜,值得一去,不过Saigon的版本已经足够地道,没必要非得进行一次“朝圣”。
