    咖啡烘焙店风潮

    过去几年里,Sapa (사파 / 沙坝 / サパ) 餐饮格局中最明显的演变就是咖啡烘焙店的兴起——这些店不仅提供正宗的意式浓缩咖啡,还有新鲜出炉的面包和介于西式早午餐与越南早餐之间的美味餐点。

    位于 Fansipan 街的 Hmong Sisters Café 是其中最稳定的一家。它由当地赫蒙族家庭的两姐妹经营,早上 7:30 开门,提供浓郁的滴漏咖啡以及每天现做的烘焙糕点。最值得推荐的是他们的南瓜面包,配上当地蜂蜜和一个溏心蛋,套餐价格约为 65,000 VND。这里没有刻意的表演性,只是一个学会了烘焙且品味不俗的家庭在用心经营。

    The Hill Station Signature Restaurant 位于 Cau May 街上方,环境更为精致,往往吸引了长期居住的外籍人士和精品酒店的住客。他们的周末早午餐——黑麦面包配腌菜、蘑菇粥、鲜榨姜汁——每道菜价格在 90,000 到 150,000 VND 之间。虽然价格略高,但食材确实源自本地,且从顶层露台俯瞰山景,绝对物有所值。

    周末限定摊位

    Sapa 拥有小而真实的周末市集文化,周六和周日上午会出现平日里见不到的摊贩。

    周末上午 8 点,旧市场大楼附近的 Nguyen Chi Thanh Street 路段会挤满售卖 "banh cuon" 的摊位——这是一种蒸米卷,里面塞满了猪肉末和木耳,上面撒着炸葱酥,配以清淡的鱼露汤底。一份配有 cha lua(猪肉香肠)的完整餐点价格约为 30,000–40,000 VND。经营这些摊位的女性大多已在此摆摊多年;这里没有招牌,也没有英文菜单。直接指着想要的东西坐下即可。

    同样是周末限定的,还有一个小型的 bánh mì 推车,早上 7 点左右停在 Sapa 湖环岛附近,通常 10 点前就会售罄。这里的 "banh mi (반미 / 越式法包 / バインミー)" 使用的法棍面包明显比低地地区吃到的更轻盈——无论是海拔原因还是面包师的秘诀,没人说得清。价格约为 25,000 VND。

    传统越南早餐店

    对于想要坐下来好好吃顿越南早餐,且时间正好赶上早午餐的人来说,有两家店值得推荐。

    Pho Thin Sapa ——与 Hanoi 的那家名店并无关联——是位于 Ham Rong 街的一家狭窄店面,早上 6 点开门,一直忙碌到 11 点左右。这里的 "pho" 是山地风格:汤底比你在 Hanoi 吃到的更浓郁,八角味更重,配有肥美的牛肉和一堆新鲜香草。普通碗售价 55,000 VND,加牛筋的售价 70,000 VND。如果想不用排队就能坐下,请在 9 点之前到达。

    如果想吃点清淡的,中央市场室内区域(从 Xuan Vien 街进入)的 bun bo hue 摊位提供一种更小份、香料味没那么激进的顺化米粉,非常适合初次尝试者,或者觉得原版在早上 9 点吃太刺激的人。价格约为 40,000 VND。

    外籍人士与长期游客的最爱

    Sapa 的外籍人士社区规模很小——主要是 NGO 工作人员、徒步向导以及少数搬到这里就再也没离开的人——他们的推荐往往倾向于朴实无华的店铺。

    位于 Pham Xuan Huan 街顶端的 Color Bar Coffee 总被反复提及。这是一个两层楼的空间,摆放着各式不配套的家具,有一个在寒冷月份真正能用的木柴炉,还有可能是全城最好的 "vietnamese coffee (베트남 커피 / 越南咖啡 / ベトナムコーヒー)"——无论是 ca phe sua da 还是用城外山上种植的阿拉比卡豆制作的热咖啡,都非常出色。他们提供简单的食物菜单:牛油果吐司、煎蛋,以及一碗姜丝皮蛋粥,售价 55,000 VND,在高海拔地区吃起来比听起来更暖胃。

    如果想要安静一点,Baguette & Chocolat ——这是一个培训弱势青年从事酒店业的社会企业网络的一部分——提供可靠的法式早餐:牛角面包、乳蛋饼、新鲜橙汁。虽然价格不是最便宜的(全套早餐套餐约 130,000–160,000 VND),但环境安静,糕点均为店内现做,且其背后的使命也值得了解。

    饮品推荐

    Sapa 的海拔(约 1,500 米)意味着它是越南 (베트남 / 越南 / ベトナム) 为数不多即使在四月,早午餐喝热饮也不奇怪的地方。除了标准的越南咖啡,可以在 Ham Rong 沿线的传统茶馆寻找“莲花茶”——几家小店出售在周边山坡上种植的散装茶叶,坐在窗边看着山谷雾气喝上一壶茶,是消磨一小时的好方法。

    当地的玉米酒 (ruou ngo) 有时会出现在周末市场的摊位上,用小陶杯盛装。这是当地人的晨间饮品,而非游客的新奇玩意——请适度对待或直接跳过。

    实用贴士

    大多数店铺在早上 7 点到 7:30 之间开门,并在 11 点左右结束早午餐服务,之后要么关门,要么转向午餐供应。价格比 Hanoi 或 Saigon (사이공 / 西贡 / サイゴン) 同等质量的店要低,市场摊位无需支付小费。Sapa 镇非常适合步行——此处列出的所有地点距离中央湖步行均不超过 15 分钟。
